After all, there is never such a thing as too much chocolate. Whether you prefer chocolate in form of fudgy brownies, rich chocolate cakes, or fluffy mousse, you’re sure to find something in this recipe collection that will satisfy even the most seasoned sweet tooth.

Tips for baking with chocolate

Before you get started, there are a few guidelines to keep in mind when baking with chocolate. You want your chocolate dessert to be rich, decadent, with intense chocolate flavors. Depending on the recipe, you’ll need to make sure you use the right chocolate, whether it’s baking chocolate, cocoa powder or chocolate chips.

  • Choose high quality baking chocolate. This is key to any chocolate dessert. I recommend choosing baking chocolate that is at least 55% cocoa, ideally around 60% cocoa or up to 70% if the recipe requires it. Don’t ever buy a cheap chocolate bars or you’ll miss the chocolate flavor in your dessert. Guittard, Caillebaut and Valrhona are my go-to brand in the US. In France, you could can get fairly good results with Lindt or Nestlé chocolate bars.
  • The choice of unsweetened cocoa powder. When a recipe calls for cocoa powder, always go for unsweetened cocoa powder, ideally Dutch-processed. Unlike the natural unsweetened chocolate, the Dutch-processed one is known to neutralize the acidity, giving it a milder but more robust flavor and darker color to your chocolate desserts. My one and unique brand when it comes to unsweetened cocoa powder is Valrhona. The deep chocolate flavors that it brings to any baked good is unmatched!
  • Baking with chocolate chips. Chocolate chips often contain additives to help them hold their shape during baking and won’t melt as smoothly. Always check the list of ingredients and prefer 60% cocoa or more for great results. Note that for any cookie recipe, you can replace chocolate chips with chopped baking chocolate bars or cocoa fèves to create puddles of chocolate. I recommend Valrhona Caraïbe 66% cocoa fèves.
