The choice of apples depends on the recipe you want to make. Get to know them first, before you know which one to use in your recipe. Remember however that apple varieties differ across the globe, so it’s best to know your local apples before you jump into a recipe. There are usually two main types of apples:
- Apples with a firm texture that hold their shape very well when baking. They’re usually called “baking apples” or “dessert apples”. They include Honeycrisp, Pink Lady, Granny Smith, or Golden Delicious.
- Apple that break down during cooking and turn into a mushy texture. These apples are perfect for applesauce for instance. Gala, Fuji or even Golden Delicious are good candidates here.

I personally recommend a combination of both for a more complex flavor profile.
