Making s’mores on a campfire takes me back to my fabulous camping trip in several US national parks, from Zion, Bryce, Grand Canyon to Monument Valley. It was my very first experience camping in North America, and also the very first time making s’mores on a campfire. Little did I know back then that I was about to create memories for life. Years later, I now go camping with my family and make s’more with the kids. They love it!

Slow down, and make s’mores…
If I am posting this recipe today, it is not because it requires instructions really – there is nothing more basic than doing s’mores, it’s quite intuitive. However, I wanted to share this wonderful experience with you, with this little hope inside of me that it might give you some cravings for nature and outdoor experiences.
While camping is not always glamorous, it helps you relax while adapting your body and your mind to the rhythm of nature. Soon enough, you’ll find yourself getting up when the sun rises (and might spot some wild animals here and there), and you’ll start embracing nature fully while hiking, and cooking simple things on a wood fire. The simple thing of lighting up a wood fire when the sun is approaching sunset has something magical. I could stay hours just staring at this vibrant fire, warming up my hands above it and letting my mind dream away… Let’s make some American s’mores on a campfire while you’re at it, and you have it all!

What do you need to make s’mores
Let’s start with the camping gear: you need a campfire and some stainless-steel roasting sticks/skewers to roast the marshmallows.
- Graham crackers. The classic choice when it comes to s’mores is to choose the traditional honey-flavored graham cracker. You could also use Digestive biscuits or other cookies of choice.
- Chocolate bars. Read below which chocolate is best for s’mores and how to choose it.
- Marshmallows. This is a must! There’s no s’mores without marshmallows. I usually recommend using the large ones for the ultimate melting effect.
Should I use dark or milk chocolate? Usually I would say the proper way to make s’mores is with milk chocolate bars. I personally prefer dark chocolate, but at the end of the day it’s for you to decide. If possible I really recommend a good quality chocolate rather than a classic Hershey’s chocolate bar. I promise it makes your s’mores taste so much better!

Indoor version: how to make s’mores in the oven
You love s’mores but aren’t planning a camping trip anytime soon? Not to worry, I’ve got you covered with an oven version so you can make s’mores from the comfort of your home (no campfire necessary). It’s also perfect when it’s too cold to light up a fire outside. Here’s how to proceed:
- Preheat the oven to 350°F (180°C). Line a cookie sheet with parchment paper or aluminum foil.
- Take one large graham cracker, break it in half. Cover one side only with a piece of chocolate, and place it on the baking sheet, chocolate side up. Repeat with as many S’mores you want to make.
- Cover the chocolate with one large marshmallow (or mini marshmallows, but I prefer the large ones). Place the cookie sheet in the oven with the door slightly cracked. Broil for about 5 minutes, carefully watching them so they don’t burn. When the marshmallows have turned golden brown on the edges, remove the cookie sheet from the oven.
- Place the remaining graham crackers on top to create a little sandwich, and press gently. Allow to cool for a minute, and enjoy!

Can I use a cooking torch instead? The answer is yes! You can definitely use a cooking torch to melt the marshmallows and the piece of chocolate in your s’mores. This process is a little more time consuming as you can do only one s’mores at a time, but it works!
Other creative s’mores recipes
While you’ll love making the classic s’mores on the first day of camping, you might love creating some variations the following days. S’mores is a very forgiving little treat, and basically anything that are ok to be on a campfire can work. Here are just a few suggestions to consider, but feel free to tell me which one is your very own favorite:
- Dark Chocolate Berry S’mores. Add some fresh raspberries, blueberries or blackberries to your s’mores. It also works with white chocolate!
- Peanut Butter S’mores. A classic twist that consists in adding a dollop of peanut butter onto the cracker before adding the piece of chocolate and the marshmallow.
- Banana S’mores. Simply place a few slices of bananas onto your graham crackers. The combo chocolate-banana-marshmallows works every time!
- Oreo Cookie S’mores. Simply replace the graham crackers with some Oreo halves. Delicious!

One more thing before we move on to the recipe, please be forgiving with my pictures. I took them at sunset, and honestly I was torn: it was either having the perfect warm and melty bite or get the best shot. I don’t go camping that often, so I decided to enjoy it fully!

Ingredients
Ingredients:
- 12 graham crackers, broken into squares
- 2 milk chocolate bars
- 12 large marshmallows
Equipment needed:
- Long metal skewers (for roasting the marshmallows)
- Bonfire, campfire, fire pit*
Instructions
- Build a campfire. This can take some time depending on the supply and the weather conditions.
- Break each sheet of graham crackers into square halves.
- Place a piece of chocolate bar on top of a graham cracker square. Keep another plain graham cracker square handy (you will use it for the top).
- Skewer a marshmallow (or two) on a long stick or metal skewer and hold over the heat of the campfire. Toast, turning occasionally, until the marshmallow puffs and turns slightly golden brown.
- Place the marshmallow on top of the graham cracker with the piece of chocolate. Then, using the remaining plain graham square, squish the marshmallow, pressing down firmly to pull off the skewer.
- When the s’mores is assembled, hold the sandwich together between your fingers for a few seconds, until the warm marshmallow melts the chocolate, and eat while still warm and gooey! Or wrap it in between two large sheets of foil placed on the corner of the campfire to keep warm, while making the remaining ones (it will also help the chocolate to melt a little bit more).
Notes
* Indoor s’mores (s’mores in the oven), no campfire necessary. If you do not plan a camping trip, you can make s’mores in the oven. Start with preheating the oven to 350°F (180°C). Line a cookie sheet with parchment paper or aluminum foil. Place graham cracker squares next to each other on the baking sheet, and top each of them with a piece of chocolate bar. Repeat with as many S’mores you want to make. Top with one large marshmallow, and place the cookie sheet in the oven with the door slightly cracked. Broil for about 5 minutes or until slightly golden, staying by your oven at anytime to prevent the marshmallows from burning. When ready, remove from the oven, top with the remaining graham crackers halves and press gently like a little sandwich. Enjoy!

Sounds like a fun trip and heavenly dessert! Will try it after buying ingredients. Any other types of chocolate possible for s’mores? Are there any safety guidelines? (This is my first time…) Thanks 🙂
Delphine Fortin
Hi Jenny! I would say that milk chocolate or semi-sweet chocolate are preferred, but other chocolate bars could do too. Just don’t use chocolate chips, that do not melt as nicely as chocolate bars. I hope this helps! Del

Thanks, Florian! Oh yes, it was a lot of fun, and I LOVE making the experience more complete with the s’mores on the campfire. I think everyone should try, Americans and non Americans 🙂
