My Christmas Dinner Table with Peugeot Saveurs

Today I’m sharing 3 of my favorite cheese bite appetizers that are super quick and easy to whip up and perfect for entertaining. They are not really “recipes” but mostly small bites that you can assemble yourself, adjusting proportions and ingredients as it suits you best and depending on what you have at hands.

I first made them a couple of years ago for a trade show where I was cooking together with my long-time partner Peugeot Saveurs. The idea was to enhance some of their best spices with easy bite appetizers. Among them all, these three cheese bite appetizers were huge success, so I made them again the following year. Each time, they disappear in no time. They’re very refreshing, paired with fresh fruits and subtle sweet and savory flavors.

How to make cheese bite appetizers?

Really, there’s not much to do since it’s more about assembling the cheese bites than following a strict recipe. They come along in 3 easy steps:

  1. Shape tiny cheese balls* with your hands and roll them out in freshly cracked pepper or chopped pecans.
  2. Add a piece of fresh fruit preferably at the last minute before serving (here fresh mango or pear).
  3. Finish with prosciutto or a small piece of gingerbread.

* It’s important to use soft cheese, warmed up at room temperature to make sure you can shape smooth balls with your hands. I use soft goat cheese, gorgonzola or other blue cheese and cream cheese.

Note that most of my recipes are usually entirely plant-based but one version involves here prosciutto. Feel free to swap it with other ingredients if you prefer, or just leave the cheese ball with pecan, cheese and pear for this version.

Can you swap some of the ingredients?

Absolutely! There is no right or wrong with these cheese ball bites and you could easily swap some or all of the ingredients. Just be creative and go your own way. Remember that all recipes evolve with time and I always encourage you to have fun in the kitchen.

  • The cheese: I like to shape balls with the cheese but you could go wild and simply attach a piece of hard cheese of your choice with a skewer instead.
  • Fruits or veggies: grape tomatoes, olives, grapes, melon bites are other options you could consider instead of fresh pear and mango.
  • Spices or nuts: have fun when you roll out cheese balls with freshly cracked pepper or chopped pecans. Other options I love include all-spice, sesame, poppy seeds, dried fruits (cranberries, raisins or diced apricots), herbs (chives, basil) or other nuts (walnuts, chopped hazelnuts, pine nuts, etc.).

Pear, Pecan and Prosciutto Cheese Bites (about 12 servings):

  • 8 ounces (225g) plain cream cheese, at room temperature
  • 3.5 ounces (150g) fresh goat cheese or blue cheese, at room temperature
  • 1 cup (125g) pecans, chopped
  • Freshly cracked black pepper
  • 1 pear, peeled, cored and diced
  • 4 slices Prosciutto

Pear, pecan and Gingerbread Cheese Bites (about 12 servings):

  • 8 ounces (225g) plain cream cheese, at room temperature
  • 3.5 ounces (150g) fresh goat cheese or blue cheese, at room temperature
  • 1 cup (125g) pecans, chopped
  • Freshly cracked black pepper
  • 1 pear, peeled, cored and diced
  • 4 slices gingerbread, diced

Mango and Goat Cheese Balls with Timut Tepper (about 12 servings):

  • 3.5 ounces (150g) fresh goat cheese, at room temperature
  • 8 ounces (225g) plain cream cheese, at room temperature
  • 1 fresh mango, peeled and diced
  • Freshly cracked Timut pepper

Instructions

For the Pear, Pecan Cheese Bites with Prosciutto + version with Gingerbread:

  1. In a large mixing bowl, combine cream cheese and goat/blue cheese.
  2. Shape into small balls*, roll out into freshly cracked black pepper and then into chopped pecans, until evenly covered.
  3. Add a piece of pear, some prosciutto and attach with a skewer. Repeat all the steps until step 3, replacing prosciutto with a small piece of gingerbread.

For the Mango and Goat Cheese Balls with Timut Tepper:

  1. In a large mixing bowl, combine cream cheese and fresh goat cheese.
  2. Shape into small balls* and roll out into freshly cracked Timut pepper.
  3. Add a piece of fresh mango and attach with a skewer.

Notes

* To make it easier, you can use latex gloves for cooking and roll out cheese bites onto a plate lined with cling film.
