Fall is full swing and Thanksgiving is coming up! And as everyone knows, Thanksgiving dinner wouldn’t be complete without the dessert spread. No matter how much you’re still hungry after the meal, there’s always room for something sweet and a table filled with homemade pies.

The pumpkin pie is of course the star of the show, but it tastes even better if you try it with tiny slices of other classic pies, such as the pecan pie or the apple pie.

Success tips for a great pie

  • Always go for a homemade pie crust. It takes a little bit of effort to prepare the pie crust from scratch (check my all butter pie crust recipe), but the result is worth the effort and it really elevates any pie. The good news here is that you can make pie crusts in advance and either refrigerate for a few days before making the pie.
  • Prepare ahead of time. Making pie from scratch, including the crust, takes time. Spare yourself the hassle of baking in a rush and plan ahead instead, always starting with reading the recipe from A to Z before you start.
  • Always let the pie cool off before slicing, or it will most likely collapse when serving. I usually bake it minimum 3 hours before serving and let it cool at room temperature.
  • Add your own twist. Easier said than done, but once you master the classics, you can create variants. For instance you can add pecans to your pumpkin pie, creating a pumpkin pecan pie. Or you can add some meringue on top of your pumpkin pie for a sumptuous effect. Apple pie coming up? Add other fruits: pears, blueberries, etc.
