  • Cucumber. I used an English cucumber and diced it, but you could also slice it and/or use small Persian cucumbers.
  • Feta cheese, crumbled.
  • Red onions, thinly sliced (optional).
  • Fresh mint, thinly sliced.
  • Sweet dressing made of olive oil, balsamic vinegar, honey, lemon juice, salt.

To make the recipe:

  1. Cube the watermelon, then mix it with all the other ingredients in a large mixing bowl.

For the salad:

  • ½ large watermelon, cut in cubes
  • ½ English cucumbers, diced
  • ¼ small red onion, thinly sliced (optional)*
  • 4 ounces (110g) feta cheese, crumbled
  • 3 Tablespoons fresh mint, chopped

For the dressing:

  • ¼ cup (60 ml) extra-virgin olive oil
  • 1 ½ Tablespoons balsamic vinegar
  • 1 Tablespoon lemon juice, freshly squeezed
  • 1 teaspoon honey or agave syrup
  • Salt & freshly ground pepper, to taste

Instructions

  1. Place the watermelon in a large bowl. Add the cucumbers, red onions*, feta cheese and mint leaves. Cover the bowl and place in the refrigerator for 30 minutes to chill.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, lemon juice, honey, salt and pepper.
  3. Pour the dressing over the salad and toss gently to combine. Enjoy!
