Our Christmas five course menu is nearing its end. As you know, I took up the challenge of suggesting a Christmas menu throughout December and I hope you enjoyed it so far. We started with some Smoked Salmon Choux Puffs that you all loved, then we had a lovely Salmon Tartare with Avocado and Mango, some amazing Duck Breasts with a Honey Raspberry and Cranberry Sauce that I suggested with my Duo of Chestnut & Parsnip Puree. Now it’s time for… cheese!

It is super easy to make and looks very impressive with its Christmas colors (white, red and green)! This cheese dish is a great French & Swedish mix: the French are absolutely crazy about cheese while the Swedes tend to add pomegranate to many recipes lately.

The pomegranate adds a lovely and slightly sweet & salty touch to the cheese. With the crunchy pistachios and maple syrup which gives some character, this whole decadent pyramid cheese is an original alternative to all walnuts and hazelnuts that usually pair to camembert and brie. Serve with some fresh French bread and some red wine and enjoy!

This baked brie-camembert pyramid is an elegant and festive cheese that will amaze your taste buds.

Ingredients

Scale
  • 1 camembert
  • 1 large brie cheese
  • Maple syrup
  • 1 large fresh fig, cut in four
  • 1 pomegranate, seed
  • 50g pistachios

Instructions

  1. Preheat the oven to 390°F (200°). Stack the camembert over the brie cheese in a form covered with some parchment paper. Pour over some maple syrup and bake for 5-10 minutes, the last minutes on the grill position.
  2. Transfer the cheese in a dish. Decorate with a the fig, some pomegranate and pistachios and pour over some additional maple syrup if desired. Serve immediately with some fresh French bread or baguette.
