For those days when you don’t feel like cooking a full meal but rather spend the evening watching netflix or spending time reading, I have for you exactly what you need. Much healthier than a classic grilled-cheese sandwich, this one is loaded with healthy veggies and mild spices.

Here are two obvious reasons to make it. First of all, it’s super quick and easy to prepare, but also this sandwich is a great occasion to get your kids excited to eat their veggies, if not yourself. Kids are always happy little helpers when you get them involved in a quick mission. Indeed, this sandwich is so fun to prepare that they might soon prepare it to you before you even started thinking about dinner.

I first tried this sandwich about a year ago in a small coffee of Chicago, Gaslight, located in an up-and-coming hipster area of the city. Like today, it was rather cold, a little bit snowy, and it felt great to find shelter in this small coffee to work on blog stuff for a couple of hours or so. When lunch time arrived, I got myself their sourdough grilled-cheese sandwich with curried cauliflower. I remember every bite. Food memory, as always, or is it memory food?

Anyhow, I promised myself I would make it again and share it with you, because you all need to know about this awesome sandwich! It’s literally melting in your mouth!

So what do we have here?
  • Roasted curried-cauliflower florets
  • Sautéed baby spinach
  • 2 thick slices of sourdough bread
  • Provolone style cheese (I went for vegan cheese)

This is it! Prepare all the ingredients, assemble the sandwich and it’s ready. Adapt the recipe if you with and feel free to add a few ingredients of your choice. As long as it fits inside the sandwich, you’re good. For instance, you can replace spinach with kale, add fresh cilantro, mushrooms, etc.

How to prepare curried-cauliflower?

Let me tell it to you right away, it’s super easy. Toss together the cauliflower florets with olive oil and curry powder. Once ready, transfer to a baking sheet, add lemon halves/wedges, season with salt and roast in the oven. Halfway through the baking, stir and squeeze the lemons over the cauliflower. It will had a fresh lemony flavor. Now it’s time to assemble your sandwich.

Ingredients

  • 4 large slices of thick sourdough bread
  • 48 slices cheese, provolone style*
  • 2 Tablespoons vegan butter
  • 1 head cauliflower, cut into florets
  • 2 Tablespoons olive oil + 1 Tablespoon
  • 2 large lemons, halved
  • 12 teaspoons yellow curry
  • 2 handfuls baby spinach
  • Salt and freshly ground pepper

Instructions

For the curried cauliflower:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium size bowl, combine cauliflower florets with olive oil. Sprinkle yellow curry powder and stir well.Transfer to the baking sheet, add the lemon halves, and season with salt.
  3. Roast for about 30 minutes or until cauliflower is tender and slightly golden brown.Halfway through the roasting time, toss the cauliflower and press the lemons over the cauliflower florets.
  4. Meanwhile, sauté the fresh baby spinach with the remaining olive oil in a small saucepan. Turn off the heat and set aside.

To assemble:

  1. Layer the (vegan) cheese, spinach and curried cauliflower florets onto a slice of bread. Top with a slice of bread, spread with vegan butter on the outside of the bread. Repeat for the second sandwich.
  2. Transfer the sandwiches to a skillet over medium high heat. Cook until the cheese is melted, flipping once or twice to get both sides browned. Serve immediately!

Notes

* I used vegan cheese, provolone style but if you are not vegan just use melting cheese of your choice.
