Fluffy Whole Wheat Waffles

We are less than a week from Mardi Gras, let’s get the festivities started! Whether you celebrate it with parades and costumes, or simply make it cozy at home, there’s always a good reason to treat yourself.  For once, rich, fatty foods are allowed, so indulge to all kind of beignets, pancakes, or donuts, to name just a few.

In France, beignets and waffles are the most common foods you serve for Mardi Gras, and homemade treats is the rule in every family. In the US however, waffles are just a regular breakfast or brunch, the same way pancakes are (by the way, if you haven’t tried my Easy Fluffy American Pancakes yet, go make them! The recipe has already been tested and approved by hundreds of thousands of you!).

Going back to these waffles, they are seriously among the best you could possibly imagine: fluffy, slightly crispy, with a beautiful golden-brown color. If you don’t have a waffle iron, it is worth the small investment it takes, believe me, because you will probably find yourself make them often!

Instead of classic all-purpose flour, I used whole wheat flour in the recipe. Whole wheat flour is more nutritious and healthy, and it has a subtle nutty taste that I love. More and more, I tend to use whole wheat flour in my breads, pie crusts, pizza doughs, and now waffles. I must say it worked pretty well so far!

You need just a few simple ingredients for these waffles:
  • Whole wheat flour
  • 2 large eggs
  • Melted butter or vegetable oil
  • Buttermilk (read below)
  • And baking powder

The other ingredients (sugar, vanilla extract) are optional. So if you think about it, there is a good chance you have all these ingredients at hand anytime of the week. Except maybe the buttermilk. I will make you a confession here though: I never ever purchased buttermilk. I have always prepared it myself and find it so ridiculously simple that I clearly don’t see the need of going for a store-bought version. All you need id lemon juice or white vinegar, and milk (any milk works). Read my note at the bottom of the recipe to find all the instructions for perfecting homemade buttermilk.

Now let’s talk about baking powder. Because whole wheat flour is not as dense as all-purpose flour, you need more baking powder to ensure you get fluffy waffles. I ended up using one whole tablespoon of baking powder. Yes, you heard me well: one tablespoon, not teaspoon. The result was just perfect.

What to serve with your waffles?

Serve your waffles with whatever toppings you fancy. Here are just a few, as for inspiration only: maple syrup, whipped honey, all kind of berries and nuts, chocolate sauce, sliced bananas, etc. I added greek yogurt and a few chia seeds to mine. Be creative and indulge!

Ingredients

  • 2 cups (260g) whole wheat flour
  • 1 Tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 Tablespoon sugar
  • 1/3 cup (85g) melted unsalted butter or vegetable oil
  • 1 3/4 cup (420ml) buttermilk*
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat waffle iron on medium-high heat.
  2. Combine the flour, baking powder, and salt together in a large bowl. Whisk the remaining ingredients in a medium bowl until combined. Pour into dry ingredients and whisk until combined and no large lumps remain. Do not over mix.
  3. Spray the waffle iron with cooking spray and pour the batter into each well. Close the lid, and cook until waffles are golden-brown and crisp. Keep the waffles warm in a 200°F (93°C) preheated oven until all are finished.
  4. Serve warm waffles with maple syrup or other toppings of your choice.

Notes

* To make your own buttermilk, measure one Tablespoon of fresh lemon juice and cover with milk until you reach 1 3/4 cup. Let sit for 5 minutes, stir, and it’s ready to use.
