I baked this puff pastry start wreath on a whim for Christmas Ever last year. With two little ones at home, I didn’t have much time to prepare a complete Christmas dinner, and I had two sheets of puff pastry to use and some smoked salmon. So I worked my magic and prepared this beautiful puff pastry wreath with smoked salmon.

It’s been such a success I baked it again a few days later in a sweet version, using Biscoff spread. Same success! Because we all need some quick and easy recipe ideas to make the holidays even more festive, I figured you needed to know about this one. Nothing difficult really, but it works every single time!

How to make smoked salmon puff pastry star wreath
- Prepare the puff pastry stars. Layer both sheets of puff pastry on top of each other, cut out star shapes using a matching cookie cutter. Brush with egg wash, sprinkle sesame on top and bake!
- Make the filling. Just mix all the filling ingredients together and you’re all set. Crème fraîche, dill and seasoning, that’s it.
- Assemble. Cut the each star lengthwise. Spoon the creamy filling to the bottom part, add a small piece of smoked salmon, and close with the top part. Then assemble the stars on a serving plate or board to create a beautiful wreath effect!

Make-ahead instructions
You can prepare the puff pastry star shapes the day before and keep at room temperature, covered with some foil. On the D-day, simply reheat them for about 5 minutes in the oven and garnish with the filling.
Possible recipe variations
Savory variations. You can garnish your puff pastry star wreath with Boursin and smoked salmon, with a pizza filling, with fig jam and Camembert, with cranberries, pecans and Brie, with goat cheese and honey… What will be yours?
Sweet variations. Yes, you can prepare the same puff pastry star shapes and fill them with sweet toppings instead. I love them with Biscoff spread and homemade Nutella. Instead of sesame, top them with finely chopped hazelnuts before baking, or simply dust them with confectioners’ sugar once baked, garnished with the sweet filling of your choice, and laid out in a circle shape.

Ingredients
- 2 sheets puff pastry
- 1 egg, beaten, for egg wash + 1 pinch of salt
- 2 teaspoons mixed black and white sesame
- ⅓ cup (80g) crème fraîche*
- Fresh dill, chopped**
- 3 ounces (80g) smoked salmon
- Salt and freshly ground pepper***
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Layer the first sheet of puff pastry with the second one. Using a star-shape cookie cutter, cut out some stars, and carefully transfer to the prepared baking sheet.
- Brush the puff pastry stars with the egg wash, and top each star with black and white sesame.
- Bake for about 15 minutes, or until golden in color. Remove from the oven and transfer to a cooling rack until ready to handle.
- In a small bowl, combine crème fraîche, dill, salt and pepper.
- Using a small pairing knife, carefully cut each star lengthwise. Garnish with the crème fraîche filling, add a small piece of smoked salmon, and cover with the top star.
- Assemble stars in a circle on a serving plate or board, and voilà!
Notes
* If you can’t find crème fraîche, you can use sour cream instead. While not exactly the same in terms of flavors, it still works pretty well with smoked salmon.
** Chives is another option that also works well with smoked salmon.
*** I recommend Timut pepper if possible. It adds some subtle and refreshing flavors.
