Za’atar Roasted Carrots with Whipped Feta

Za’atar roasted carrots with whipped feta is a ridiculously simple recipe that is perfect to combine roasted veggies and creamy cheese, all together in a plate. Whether you serve it as a main with a side of pita bread, or as an entertaining appetizer platter, it is sure to hit the spot among your guests!

For the za’atar roasted carrots:

  • 1 lb (450g) rainbow or regular carrots
  • 3 Tablespoons extra-virgin olive oil
  • 1 Tablespoon za’atar seasoning*
  • Salt and freshly ground pepper
  • Fresh mint, chopped (for serving)
  • Fresh cilantro, chopped (for serving)
  • Pita bread (for serving)

For the whipped feta:

  • 8-oz (225g) feta cheese
  • ¼ cup (60 ml) plain full-fat Greek yogurt
  • 2 teaspoons honey (or maple syrup)
  • 2 Tablespoons extra-virgin olive oil
  • 1 Tablespoon lemon juice, optional
  • Salt and freshly ground pepper

Instructions

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Cut larger carrots in half and then cut in half lengthwise (and again in half for bigger pieces, if needed), trying to have same size carrot sticks. Alternatively, you can slice the carrots diagonally.
  3. Toss the carrots in a bowl with the olive oil, za’atar, salt and pepper. Transfer to the prepared baking sheet and spread the carrots so that they’re not overlapping.
  4. Bake for about 20-25 minutes, flipping the carrots halfway through.
  5. Meanwhile, prepare the feta dip by blending the feta cheese, yogurt, honey, olive oil and lemon juice (if using) in a food processor, and blend until smooth. Season wit salt and pepper, and adjust seasoning as needed.
  6. Transfer the feta dip to a shallow plate or serving platter and spread along the bottom, then top with the carrots. Garnish the dish with fresh chopped mint, parsley, a light drizzle of olive oil. Add a side of warm pita bread, and enjoy!

Notes

* For homemade za’atar seasoning, mix together 1 Tablespoon each of thyme (or oregano), freshly ground cumin, coriander, sesame seeds, and sumac. Add ½ teaspoon salt and a pinch of chili flakes if desired, blend and it’s ready! Important: use only 1 Tablespoon of this mix for this recipe.
