Mini Healthy Peanut Butter Pies (Vegan, Gluten & Refined Sugar Free)

These adorable no-bake mini pies packed with superfoods and topped with a delicious vegan peanut butter mousse are the perfect healthy snack to go!

For the mini pies (no-bake energy bites):

  • 1 cup (90g) old-fashioned oats
  • ½ cup (30g) unsweetened shredded coconut
  • ½ cup (70g) ground flax seed
  • 1 Tablespoon chia seeds
  • ½ cup (120 ml) peanut butter (or almond butter)
  • ⅓ cup (80 ml) agave or maple syrup
  • ½ cup (75g) mini chocolate chips
  • 1 teaspoon vanilla extract

For the vegan peanut butter mousse:

  • 1 can full-fat coconut milk*
  • 4 Tablespoons (60g) natural creamy peanut butter
  • 2 Tablespoons maple syrup

Instructions

  1. For the mini pies: stir all the ingredients together in a medium bowl until thoroughly mixed. If too gooey, add some more oatmeal, if too dry, add some water. Cover and let chill in the refrigerator for half an hour.
  2. Once chilled, shape into patties, using a stainless-steel measurement cup (¼ cup size), a small ramekin or a muffin pan.
  3. For the vegan peanut butter mousse: Chill coconut milk overnight.
  4. When ready to use, remove the lid and scoop out the solid cream from the top into a chilled bowl (reserve the liquid part for a smoothie recipe for instance).
  5. Using a mixer, beat until creamed together, about one minute.
  6. Add peanut butter and maple syrup, and stir until well combined.
  7. Transfer into a piping bag and pipe onto each energy bite.
  8. Chill for at least one hour before serving. Keep leftovers in a covered container in the fridge. Will keep for up to 4 days.

Notes

* Chill the coconut milk can overnight or freeze for at least two hours before using it.
