How to roast garlic. Roasted garlic is a simple cooking method everyone should know. It brings sweet, caramelized flavors to about anything and has a soft, mellow texture. Learn how to roast garlic from scratch and how to use it in your recipes.

  • 2 whole garlic heads/bulbs
  • Extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Remove the loose papery outside skin from the garlic heads, but keep the cloves intact. Using a sharp knife, cut about ½ inch (1 cm) from top.
  3. Place garlic cut side up on a piece of foil (1 piece per head), and lightly drizzle with olive oil. Wrap the sides up and place the foil wrapped garlic onto a baking tray.
  4. Roast into the oven about 40-45 minutes, or until garlic is soft and tender. To ensure garlic is soft, insert a small paring knife in the center. Remove from the oven and allow to cool. When cool enough to handle, press the heads with your fingers to extract the roasted garlic pulp. Use in any recipe (like mashed potatoes or cauliflower mashed potatoes) that calls for roasted garlic.
