Goat cheese pyramid appetizer is a ridiculously simple appetizer recipe. Traditionally prepared with the French goat cheese Chavroux (known as ‘Chavrie’ in the US), it also works with fresh goat cheese of any shape.

Ingredients

  • 1 pyramid of Chavroux (known under the name of ‘Chavrie’ in the US)*
  • 3 spring onions, thinly sliced
  • 1 or 2 small shallots, minced
  • ΒΌ cup (60 ml) extra-virgin olive oil
  • Timut black pepper, freshly ground
  • Coarse salt

Instructions

  1. Invert a pyramid of goat cheese ‘Chavrie’ onto a small shallow plate or bowl.
  2. Top and garnish around with spring onions and shallots, and pour the olive oil on top, letting it fall into the bottom of the plate. For best result, season with freshly ground Timut black pepper and coarse salt just before serving.
  3. Enjoy with small baguette toasts, lightly drizzled with olive oil.

Notes

* You can replace ‘Chavrie’ with any fresh goat cheese of your choice (any shape will do). My favorite option to recreate the smooth texture of the ‘Chavrie’ consists in mixing together 3.5 oz (100g) of plain cream cheese and 3.5 oz (100g) of fresh goat cheese. Shape into a mold of your choice before inverting onto the serving plate.
