This Asian-inspired tofu salad combines black rice, crunchy vegetables and smoked tofu, tossed together in a subtle miso dressing. A fresh and satisfying plant-based meal packed with bold umami flavors!

For the salad:

  • 1 cup (200g) uncooked wild black rice
  • 7.7 ounces (220g) smoked tofu, diced
  • 1 Tablespoon canola oil
  • 1 Tablespoon soy sauce
  • ½ small red cabbage, shredded or thinly sliced
  • 4 carrots, cut into ribbons
  • 1 handful radishes, sliced
  • 1 handful fresh cilantro, chopped
  • 4 or 5 scallions, thinly sliced
  • White and black sesame, toasted, for serving
  • Lime wedges, for serving

For the miso dressing:

  • 2 Tablespoons white miso paste (shiro miso)
  • ½ teaspoon grated ginger
  • 1 Tablespoon rice vinegar
  • 1 Tablespoon sesame oil
  • 3 Tablespoons canola oil
  • 2 Tablespoons soy sauce

Instructions

  1. For the rice. Cook wild black rice according to package instructions. Drain and set aside.
  2. For the slaw. Toss the carrot, cabbage and radishes together in a large bowl.
  3. For the tofu. Add canola oil to a sauté pan placed over medium heat. Add the smoked tofu, 1 Tablespoon of soy sauce, and toss to combine. Sauté for about 2-3 minutes, stirring often, until slightly golden on all sides.
  4. Prepare the miso dressing. In a bowl or mason jar, add all the miso dressing ingredients and whisk well. Add one or two teaspoons water to thin out the dressing if needed.
  5. To assemble the salad, toss together black rice with vegetables and diced tofu in a large mixing bowl. Drizzle the miso dressing over, and garnish with fresh cilantro, scallions and toasted sesame. Serve and enjoy!

Notes

Note that the recipe proportions are just a starting point and fairly forgiving. Feel free to add more veggies if desired.
