Who wants a slice of banana bread to kickstart the weekend? 🙋🏼‍♀️

I know you looooooove banana bread so I wrote the recipe faster than ever so you could have it just on time for the weekend. I didn’t even leave my kitchen table and I had 2 slices of this beauty while writing it. Oops!
.
And here it is: an olive oil chocolate chip banana bread! Not sure about the olive oil in this recipe? It comes in replacement of butter and it is what makes this banana bread so incredibly moist, tender, and soft.

And I also added some chocolate chips, because why not. The result is just WoW! 🤩💥

By the way, do you have any goals for 2021?

I don’t make any new year resolutions anymore and I prefer to speak about goals, that are more realistic, gentle, and positive.
.
The idea is not to get rid of the “old” safe from the previous year, but rather to keep improving ourselves without ever feeling guilty about where we are. We’re exactly where we’re supposed to be in this precise moment.
.
One of my 2021 goals is nothing but a life goal and it consists of having a healthy lifestyle. It doesn’t mean it has to be perfect, it doesn’t mean I have to eat healthy all the time, but overall it means I want to take care of myself both mentally and physically. And this starts in the plate.
.
I have many savory recipes on the blog but I do not always share them on Insta cause somehow you seem to love desserts more here. But let’s give it another shot and share more of these in 2021. I hope it will bring you some inspiration for your everyday meals! 🌱

Introducing my hazelnut chocolate galette des rois!

I won’t lie here. I didn’t have so much time so I went for a ready-to-use puff pastry. And at first, I didn’t intend to share the recipe with you. I just baked it on a whim to enjoy with my little family of 3 (even though baby is too young to taste).
.
But here’s the thing: the filling itself is worth your best bakery-style galette des rois. The frangipane features ground hazelnuts rather than almonds, and I added grated dark chocolate and rum for an extra delicious touch!
.
Also, let’s be honest for a minute here. I see sooooo much snobbism around homemade puff pastry I get a little bit tired. Truth is: except for the passionate baker or blogger, very few actually make their own. For making a puff pastry involves a lot of folding and steps, and it can feel slightly overwhelming.
.
Does it mean you shouldn’t bake your own galette des rois? Not at all! I find it perfectly ok to purchase puff pastry but still make your own filling. It doesn’t make you a bad or cheat-baker! We all have our priorities in life and as a new mom I totally understand spending hours in the kitchen is not always a priority. Whatever yours are, do you and it’s going to be just fine!

If you ask me, hot chocolate has to be thick, rich, very filling, and with strong chocolate flavors. It’s the kind of drink you want to curl up with on the sofa during the cold weather months.

While yesterday everyone was getting obsessed with galette des rois (French King Cake), I baked a very basic French apple tart instead and shared it in my story.

The least I can say is that it didn’t stay unnoticed. The power of simple recipes is real. Easy to prepare, no fuss ingredients, they also often bring us back to our childhood.
.
When growing up, baking an apple tart (or a chocolate cake) with my mom was part of my Sunday routine. I remember rolling out the dough together, displaying the apples in a lovely pattern... and oh, tell me about these enchanting flavors coming out from the oven!
.
Years later, I can still recreate all these joyful memories just by smelling the sweet scent of an apple tart in the oven. Precious!
