Assez intimidant au premier abord, c&#8217;est un dessert que l&#8217;on a envie d&#8217;acheter directement en p\u00e2tisserie. Mais tout a chang\u00e9 l&#8217;an dernier, lorsque je pr\u00e9parais notre retour en Su\u00e8de. J&#8217;ai alors commenc\u00e9 \u00e0 lire plus de livres su\u00e9dois \u00e0 mes enfants. L&#8217;un d&#8217;eux parlait d&#8217;une princesse qui mangeait une part de <em>prinsesst\u00e5rta<\/em> au petit-d\u00e9jeuner. Une id\u00e9e qui a vite fait son chemin dans l&#8217;esprit de ma fille. Elle m&#8217;a alors command\u00e9 le <em>prinsesst\u00e5rta<\/em> comme g\u00e2teau d&#8217;anniversaire pour ses 5 ans. J&#8217;avoue que je n&#8217;ai jamais \u00e9t\u00e9 tr\u00e8s fan de cette id\u00e9e d&#8217;un g\u00e2teau vert. Heureusement, il existe diff\u00e9rentes variantes, dont l&#8217;une avec avec un d\u00f4me en marzipan rose. C&#8217;\u00e9tait \u00e9videmment celle qu&#8217;il me fallait pour l&#8217;anniversaire princesse de ma fille !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-qu-est-ce-que-le-prinsesstarta\">Qu&#8217;est-ce que le <em>Prinsesst\u00e5rta<\/em>?<\/h2>\n\n\n\n<p>Le ou la <em>Prinsesst\u00e5rta<\/em> est un g\u00e2teau traditionnel su\u00e9dois \u00e0 \u00e9tages recouvert de marzipan. On y retrouve trois couches de g\u00e9noise, entre lesquelles sont \u00e9tal\u00e9es successivement de la confiture de framboise, de la cr\u00e8me vanille et de la cr\u00e8me fouett\u00e9e en forme de d\u00f4me. Le tout est recouvert d&#8217;une couche de marzipan par-dessus, accentuant la forme bomb\u00e9e du g\u00e2teau.<\/p>\n\n\n\n<p>Dans la version originale, la marzipan est verte et r\u00e9hauss\u00e9e d&#8217;une petite rose en marzipan rose. Il semblerait \u00e9galement qu&#8217;\u00e0 l&#8217;origine, la confiture de framboise \u00e9tait exclue de la garniture. J&#8217;ai \u00e9galement demand\u00e9 conseil \u00e0 mon ami Damien qui tient la p\u00e2tisserie <a href=\"https:\/\/www.fosch.se\/\">Fosch<\/a> \u00e0 Stockholm (le p\u00e2tissier de mon mariage). <\/p>\n\n\n\n<p>C&#8217;est alors que je suis tomb\u00e9e sur la vid\u00e9o \u00e9tape par \u00e9tape de la p\u00e2tissi\u00e8re su\u00e9doise <a href=\"https:\/\/mykitchenstories.se\/prinsesstarta\/\">Camilla Hamid<\/a>. Un pur bonheur \u00e0 regarder ! J&#8217;ai suivi sa recette presque \u00e0 la lettre, \u00e0 l&#8217;exception de la couleur de la marzipan. Ma version n&#8217;est pas aussi belle que la sienne, mais ce n&#8217;est pas si mal pour une premi\u00e8re fois. Et surtout le g\u00e2teau a fait sensation aux 5 ans de ma fille !<\/p>\n\n\n\n<p>\u00c0 ma grande surprise, le <em>prinsesst\u00e5rta<\/em> n&#8217;est pas si difficile \u00e0 pr\u00e9parer. Il y a de nombreuses \u00e9tapes, certes, mais chacune d&#8217;entre elle est facile \u00e0 pr\u00e9parer. Et avec un peu d&#8217;organisation, c&#8217;est un projet tout \u00e0 fait r\u00e9alisable. Tamiser la farine et la f\u00e9cule de pommes de terre par-dessus et incorporer d\u00e9licatement \u00e0 l&#8217;aide d&#8217;une maryse.<\/li>\n<li id=\"instruction-step-3\">Verser dans le moule et enfourner 35-40 minutes, ou jusqu&#8217;\u00e0 ce qu&#8217;une lame de couteau ins\u00e9r\u00e9e au centre ne ressorte propre. Laisser ti\u00e9dir quelques instants dans le moule, puis d\u00e9mouler le g\u00e2teau et le laisser refroidir compl\u00e8tement.<\/li>\n<li id=\"instruction-step-4\"><strong>Pour la cr\u00e8me p\u00e2tissi\u00e8re.<\/strong> Faire chauffer le lait, la cr\u00e8me et les graines extraites de la gousse de vanille (ensemble avec la gousse) jusqu&#8217;aux premiers fr\u00e9missements. Transf\u00e9rer dans un bol, filmer au contact et laisser refroidir compl\u00e8tement avant utilisation.<\/li>\n<li id=\"instruction-step-5\"><strong>Pour le montage.<\/strong> Couper le biscuit en trois tranches \u00e9gales dans le sens de la longueur, \u00e0 l&#8217;aide d&#8217;un couteau scie. Placer le premier biscuit sur un plat de service et \u00e9taler la confiture de framboises par-dessus. Ajouter le deuxi\u00e8me biscuit et couvrir de cr\u00e8me p\u00e2tissi\u00e8re. Couvrir avec le troisi\u00e8me biscuit.<\/li>\n<li id=\"instruction-step-6\">Monter 500 ml de cr\u00e8me liquide enti\u00e8re (35% mat. grasse) tr\u00e8s froide en chantilly, jusqu&#8217;\u00e0 ce que la cr\u00e8me soit bien ferme. \u00c9taler une g\u00e9n\u00e9reuse couche de cr\u00e8me sur le biscuit en forme de d\u00f4me et en recouvrant les parois d&#8217;une fine couche de cr\u00e8me \u00e9galement. Placer au frais pendant 4 heures ou id\u00e9alement toute une nuit.\u00a0<\/li>\n<li id=\"instruction-step-7\"><strong>Pour la couverture en marzipan et la d\u00e9coration.<\/strong> \u00c9taler la marzipan ramollie sur un tapis en silicone, en saupoudrant l\u00e9g\u00e8rement le dessus de f\u00e9cule de ma\u00efs pour \u00e9viter qu&#8217;elle ne colle au rouleau \u00e0 p\u00e2tisserie. Une fois \u00e9tal\u00e9e, la marzipan doit \u00eatre bien plus large que ce dont vous avez besoin pour couvrir le g\u00e2teau. Inverser d\u00e9licatement la marzipan par-dessus le g\u00e2teau, en lissant avec la paume de la main. Couper les chutes de p\u00e2te \u00e0 l&#8217;aide d&#8217;un petit couteau d&#8217;office. Saupoudrer de sucre glace et servir imm\u00e9diatement, ou conserver au frais jusqu&#8217;au moment de servir.
