Voici une id\u00e9e que j&#8217;ai d\u00e9couvert il y a quelques ann\u00e9es dans le restaurant attenant au jardin botanique VanDusen de Vancouver. J&#8217;ai ainsi associ\u00e9 saumon et cabillaud dans une sauce cr\u00e9meuse au vin blanc avec un peu de fenouil pour apporter des saveurs aromatiques \u00e0 la cassolette. Choisissez un bulbe de petite taille de 250g environ.<\/li>\n\n\n\n<li><strong>Graines de cumin.<\/strong> Assurez-vous d&#8217;utiliser des graines de cumin enti\u00e8res ; ne les remplacez pas par du cumin moulu qui apporterait une toute autre saveur.<\/li>\n\n\n\n<li><strong>Fumet de poisson.<\/strong> Il apporte des saveurs aromatiques et sublime la saveur du poisson dans le plat.<\/li>\n\n\n\n<li><strong>P\u00e2te feuillet\u00e9e.<\/strong> Une p\u00e2te feuillet\u00e9e du commerce ira tr\u00e8s bien.<\/li>\n\n\n\n<li><strong>Aneth, pour servir.<\/strong> Un mariage parfait avec le saumon.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-comment-preparer-ce-plat-de-poisson\">Comment pr\u00e9parer ce plat de poisson ?<\/h2>\n\n\n\n<p>La recette se r\u00e9sume en deux \u00e9tapes essentiellement. Pour les instructions d\u00e9taill\u00e9es, rendez-vous directement \u00e0 la fiche recette ci-dessous. <\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>La cassolette de poisson.<\/strong> Faites revenir les l\u00e9gumes dans un premier temps, puis ajoutez le fumet de poisson, le vin blanc et la cr\u00e8me. Ajoutez la f\u00e9cule de ma\u00efs pour \u00e9paissir la sauce, puis incorporez les pommes de terre coup\u00e9es en d\u00e9s dans la sauce tr\u00e8s chaude pour les y faire cuire. Versez un tiers de la sauce dans le fond du plat, puis d\u00e9posez les morceaux de poisson par-dessus. Recouvrez ensuite du reste de sauce. <\/li>\n\n\n\n<li><strong>La p\u00e2te feuillet\u00e9e.<\/strong> Recouvrez simplement votre plat de cassolette de poisson avec un disque de p\u00e2te feuillet\u00e9e l\u00e9g\u00e8rement plus grand que le moule. Non seulement il a l&#8217;habitude mais il a aura surtout un couteau tr\u00e8s bien aiguis\u00e9 permettant de r\u00e9aliser l&#8217;op\u00e9ration rapidement et avec pr\u00e9cision.<\/li>\n\n\n\n<li><strong>Go\u00fbtez la sauce<\/strong> en cours de pr\u00e9paration <strong>et ajustez l&#8217;assaisonnement<\/strong> en sel et en poivre au besoin.<\/li>\n\n\n\n<li><strong>R\u00e9alisez quelques incisions dans la p\u00e2te feuillet\u00e9e avant d&#8217;enfourner<\/strong> pour laisser la vapeur s&#8217;\u00e9chapper en cours de cuisson.<\/li>\n<\/ul>\n\n\t\t<\/div>\r\n\t\t\n\n\n<h2 class=\"wp-block-heading\" id=\"h-preparation-a-l-avance-et-conservation\">Pr\u00e9paration \u00e0 l&#8217;avance et conservation<\/h2>\n\n\n\n<p>Cette cassolette de poisson en cro\u00fbte feuillet\u00e9e est un plat que l&#8217;on peut ais\u00e9ment pr\u00e9parer \u00e0 l&#8217;avance, conserver au frais et r\u00e9chauffer le lendemain. Assurez-vous au moment de r\u00e9chauffer que la cassolette est bien chaude \u00e0 l&#8217;int\u00e9rieur.<\/p>\n\n\n\n<p>Vous pouvez conserver les restes pendant 2-3 jours au r\u00e9frig\u00e9rateur. On peut aussi congeler ce plat de cassolette de poisson en cro\u00fbte feuillet\u00e9e. Cette cassolette de poisson est un plat id\u00e9al pour cela et qui se pr\u00eate parfaitement au jeu. D\u00e9couvrez quelques suggestions :<\/p>\n\n\n\n<ul class=\"wp-block-list is-style-default\">\n<li><strong>Adaptez la recette en version soupe de poisson !<\/strong> Pr\u00e9parez simplement la sauce comme indiqu\u00e9e jusqu&#8217;\u00e0 la fin de l&#8217;\u00e9tape 2, puis plongez-y les morceaux de poisson. Ils cuiront directement dans la sauce pendant quelques minutes. Vous obtenez ainsi une soupe de poisson su\u00e9doise que l&#8217;on appelle ici &#8220;fiskgryta&#8221;.<\/li>\n\n\n\n<li><strong>Rempacez la p\u00e2te<\/strong> feuillet\u00e9e par une <a href=\"https:\/\/www.delscookingtwist.com\/fr\/comment-faire-un-quadrillage-sur-une-tarte\/\">p\u00e2te bris\u00e9e maison, en utilisant cette recette<\/a>. Divisez simplement les quantit\u00e9s par deux, puisque vous n&#8217;aurez besoin que de la partie sup\u00e9rieure de la p\u00e2te. <\/li>\n\n\n\n<li>Ou bien r\u00e9alisez votre <a href=\"https:\/\/www.delscookingtwist.com\/fr\/pate-feuilletee-guide-etape-par-etape\/\">p\u00e2te feuillet\u00e9e maison (avec mon guide \u00e9tape par \u00e9tape)<\/a> ! Cela demande un peu plus d&#8217;effort et n\u00e9cessite d&#8217;\u00eatre un peu avanc\u00e9 en cuisine, mais avec un peu d&#8217;organisation et de volont\u00e9, vous verrez que le jeu en vaut la chandelle.<\/li>\n\n\n\n<li><strong>Remplacez le fenouil par du poireau. <\/strong>C&#8217;est une variante de la recette qui apportera des saveurs diff\u00e9rentes mais qui fonctionne n\u00e9anmoins \u00e0 merveille. Pr\u00e9voyez deux blancs de poireaux pour la recette, coupez-les en rondelles fines et proc\u00e9dez comme vous le feriez avec le fenouil.<\/li>\n\n\n\n<li><strong>R\u00e9alisez une cassolette de la mer.<\/strong> Cela revient tout simplement \u00e0 ajouter des crevettes, noix de Saint Jacques ou autres fruits de mer.
