Ma maman le pr\u00e9pare chaque semaine depuis maintenant des dizaines d&#8217;ann\u00e9es, sans recette \u00e0 l&#8217;appui, et \u00e0 chaque fois le r\u00e9sultat est l\u00e0 : un riz au lait encore ti\u00e8de, au bon go\u00fbt de vanille et cr\u00e9meux \u00e0 souhait, dans lequel on a envie de plonger sa petite cuill\u00e8re encore et encore \u00e0 l&#8217;infini. Il n&#8217;y a tout simplement rien \u00e0 ajouter. C&#8217;\u00e9tait un peu pour moi la recette ultime, et pourtant si simple \u00e0 pr\u00e9parer ! Mais lorsqu&#8217;il s&#8217;agit de riz au lait, mon niveau de perfection atteint des niveaux encore inexplor\u00e9s. Pour obtenir ce r\u00e9sultat, il est important de choisir ses ingr\u00e9dients avec soin. Optez pour du lait entier (un <em>must<\/em>, pour un cr\u00e9meux r\u00e9ussi !) et choisissez une gousse de vanille enti\u00e8re (pas d&#8217;extrait de vanille). Ensuite, le ratio entre le lait et le riz est important, de m\u00eame que le temps de cuisson, qui d\u00e9terminera l&#8217;onctuosit\u00e9 souhait\u00e9e.<\/p>\n\n\n\t\t<div class=\"contentbox contentbox-lightpink notop nobot\">\t\t\r\n\t\t\t\n\n<p><strong>Bon \u00e0 savoir !<\/strong> La pr\u00e9paration du riz au lait est relativement simple mais demande du temps, de la patience et de l&#8217;amour. Pr\u00e9voyez le temps n\u00e9cessaire pour vous consacrer pleinement \u00e0 la recette, en restant pr\u00e8s du feu et en remuant r\u00e9guli\u00e8rement, le tout \u00e0 feu tr\u00e8s doux. Vous aurez ainsi un meilleur contr\u00f4le de la recette, ce qui vous permettra d&#8217;obtenir ce r\u00e9sultat doux et onctueux \u00e0 souhait. Voyez cela comme une exp\u00e9rience de <em>slow-living<\/em> \u00e0 part enti\u00e8re !<\/p>\n\n\t\t<\/div>\r\n\t\t\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-ingredients-du-riz-au-lait\">Les ingr\u00e9dients du riz au lait<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Riz rond \u00e0 dessert.<\/strong> En France, on le trouve un peu partout, mais si vous vivez \u00e0 l&#8217;\u00e9tranger, vous pouvez le remplacer par du riz arborio \u00e0 la place (c&#8217;est le riz que l&#8217;on utilise habituellement pour le risotto). J&#8217;ai test\u00e9 et cela fonctionne tr\u00e8s bien.<\/li>\n\n\n\n<li><strong>Lait entier.<\/strong> Pour un cr\u00e9meux ultime, il est imp\u00e9ratif de choisir du lait entier (au moins 3,5% de mati\u00e8re grasse). Si vous ne consommez pas de lait entier par ailleurs, achetez-le tout sp\u00e9cialement pour la recette. Promis, vous ne le regretterez pas !<\/li>\n\n\n\n<li><strong>Gousse de vanille.<\/strong> Pour une saveur authentique, choisissez une gousse de vanille enti\u00e8re, \u00e0 la fois pour les graines qui en sont extraites que pour la gousse infus\u00e9e dans le lait. La p\u00e2te de vanille est une autre option, mais n&#8217;utilisez en aucun cas de l&#8217;extrait de vanille au go\u00fbt synth\u00e9tique et artificiel. C&#8217;est la derni\u00e8re chose que l&#8217;on recherche pour un dessert qui est sens\u00e9 nous transporter dans nos plus tendres souvenirs d&#8217;enfance.<\/li>\n\n\n\n<li><strong>Sucre.<\/strong> Sucre granul\u00e9 ou cassonade fonctionnent aussi bien l&#8217;un que l&#8217;autre. Pour ma part, j&#8217;aime mon riz au lait l\u00e9g\u00e8rement sucr\u00e9, juste assez pour sublimer la saveur de la vanille. Lorsque le lait commence \u00e0 fr\u00e9mir, <strong>ajoutez le riz et faites cuire \u00e0 feu doux, en remuant r\u00e9guli\u00e8rement.<\/strong> Une fine cro\u00fbte de lait devrait enduire le fond de la casserole; c&#8217;est normal, n&#8217;essayez pas de la gratter.<\/li>\n\n\n\n<li><strong>Lorsque le riz devient tendre et qu&#8217;une bonne partie du liquide est absorb\u00e9e, ajoutez le sucre en pluie et poursuivez la cuisson encore quelques minutes<\/strong>, jusqu&#8217;\u00e0 ce que le riz soit \u00e0 peine cr\u00e9meux. Les grains de riz doivent appara\u00eetre \u00e0 la surface. Retirez du feu et enlevez la gousse de vanille fendue, en veillant \u00e0 ne pas vous br\u00fbler. Pas de secret, pour une texture cr\u00e9meuse, il faut du gras. Alors juste pour cette recette svp, faites l&#8217;effort d&#8217;acheter du lait entier; le r\u00e9sultat en vaut la chandelle !<\/li>\n\n\n\n<li><strong>Parfumez avec une gousse de vanille.<\/strong> Elle apporte des notes chaudes de vanille et un parfum unique. N&#8217;essayez pas de la remplacer par de l&#8217;extrait de vanille, vous risquez de ruiner votre dessert.<\/li>\n\n\n\n<li><strong>Cuisez \u00e0 feu doux, en m\u00e9langeant r\u00e9guli\u00e8rement<\/strong>, juqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture onctueuse et cr\u00e9meuse \u00e0 souhait. La patience est ici votre meilleure amie; comptez environ 45 minutes \u00e0 1 heure. N&#8217;augmentez pas non plus le feu, au risque que votre riz n&#8217;absorbe le lait trop vite et soit moins cr\u00e9meux.<\/li>\n\n\n\n<li><strong>Ajoutez le sucre en fin de cuisson,<\/strong> lorsque le riz est \u00e0 peine cr\u00e9meux mais pas tout \u00e0 fait et prolongez la cuisson de quelques minutes tout au plus.<\/li>\n<\/ul>\n\n\t\t<\/div>\r\n\t\t\n\n\n<h2 class=\"wp-block-heading\" id=\"h-comment-servir-le-riz-au-lait\">Comment servir le riz au lait<\/h2>\n\n\n\n<p>Personnellement, j&#8217;aime le riz au lait nature, tout simplement parfum\u00e9 \u00e0 la vanille, sans chichis. Mais pour les grands gourmands, n&#8217;h\u00e9sitez pas \u00e0 ajouter un peu de zeste d&#8217;orange ou bien un filet de caramel au beurre sal\u00e9. Ma grand-m\u00e8re, elle, avait une version dans laquelle elle ajoutait une g\u00e9n\u00e9reuse couche de chocolat fondu par-dessus le riz au lait. D\u00e9gust\u00e9 encore ti\u00e8de, c&#8217;\u00e9tait \u00e0 tomber par terre !<\/p>\n\n\n\t\t<div class=\"contentbox contentbox-lightpink notop nobot\">\t\t\r\n\t\t\t\n\n<h2 class=\"wp-block-heading\" id=\"h-version-sans-produit-laitier\">Version sans produit laitier<\/h2>\n\n\n\n<p>Il est possible de r\u00e9aliser le riz au lait en version sans produit laitier, en utilisant du <strong>lait v\u00e9g\u00e9tal<\/strong>, comme par exemple du lait d&#8217;amande, du lait de cajou ou du lait d&#8217;avoine. Pour une version sans lactose, il suffit de choisir du lait sans lactose. Fendre la gousse de vanille en deux et en extraire les graines de vanille \u00e0 l&#8217;aide d&#8217;un couteau d&#8217;office. Ajouter les graines et la gousse de vanille dans la casserole de lait et faire chauffer \u00e0 feu moyen-doux. Lorsque le lait commence \u00e0 fr\u00e9mir, ajouter le riz pr\u00e9-cuit et m\u00e9langer avec une cuill\u00e8re en bois. Faire cuire sur feu doux, en m\u00e9langeant r\u00e9guli\u00e8rement, pendant environ 45 minutes &#8211; 1 heure, ou jusqu&#8217;\u00e0 ce que le riz devienne tendre et qu&#8217;une bonne partie du lait est absorb\u00e9e (mais pas compl\u00e8tement ; il doit rester du liquide). Un film de d\u00e9p\u00f4t devrait alors se d\u00e9poser au fond de la casserole, c&#8217;est normal ; n&#8217;essayez pas de le gratter.<\/li>\n<li id=\"instruction-step-3\">Ajouter le sucre en fin de cuisson, m\u00e9langer et poursuivre la cuisson encore quelques minutes.
