Cette version aux l\u00e9gumes garantit des saveurs umami \u00e0 la fois riches et subtiles. Aidez-vous des petites mains autour de vous pour en faire une activit\u00e9 en famille ; vous cr\u00e9erez des souvenirs pour les ann\u00e9es \u00e0 venir.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-qu-est-ce-que-les-gyozas\">Qu&#8217;est-ce que les gyozas ?<\/h2>\n\n\n\n<p>Les gyozas sont des dumplings ou petits raviolis japonais, garnis d&#8217;une farce umami et r\u00e9alis\u00e9s avec une p\u00e2te tr\u00e8s fine avec des petits plis sur le dessus. Ils sont g\u00e9n\u00e9ralement dor\u00e9s sur une face pour leur apporter du croustillant, puis cuits \u00e0 la vapeur.<\/p>\n\n\n\n<p>Originaires de Chine, les gyozas ont ensuite \u00e9volu\u00e9 pour s&#8217;adapter aux go\u00fbts des Japonais. Ils ont notamment une p\u00e2te plus fine que les dumplings chinois, ce qui les rend \u00e0 la fois plus croustillants et d\u00e9licats. C&#8217;est tout (encore plus simple que pour r\u00e9aliser des raviolis !).<\/li>\n\n\n\n<li><strong>F\u00e9cule de ma\u00efs (ou de pommes de terre).<\/strong> Elle servira \u00e0 saupoudrer lors du fa\u00e7onnage des gyozas pour \u00e9viter qu&#8217;ils ne collent les uns aux autres.<\/li>\n\n\n\n<li><strong>Chou + carottes + champignons + oignons.<\/strong> Ce sont les l\u00e9gumes utilis\u00e9s pour r\u00e9aliser la farce. Assurez-vous de les couper, \u00e9mincer et\/ou r\u00e2per finement, de telle sorte \u00e0 ce qu&#8217;ils tiennent dans les dumplings.<\/li>\n\n\n\n<li><strong>Gingembre + ail + miso + sauce soja + huile de s\u00e9same<\/strong> pour l&#8217;assaisonnement. C&#8217;est relativement simple et rapide (et en comparaison plus facile que la p\u00e2te \u00e0 raviolis).<\/p>\n\n\n\n<p>Voici les \u00e9tapes cl\u00e9s pour r\u00e9aliser des gyozas aux l\u00e9gumes :<\/p>\n\n\n\n<ol class=\"wp-block-list is-style-circles\">\n<li><strong>Pr\u00e9parez la p\u00e2te \u00e0 gyoza.<\/strong> Faites dissoudre le sel dans l&#8217;eau bouillante puis le verser petit \u00e0 petit sur la farine tamis\u00e9e, en remuat avec une maryse. Ajustez la quantit\u00e9 d&#8217;eau au besoin et finissez \u00e0 la main en formant une boule lisse et douce.<\/li>\n\n\n\n<li><strong>P\u00e9trissez la p\u00e2te<\/strong> \u00e0 la main pendant 10 minutes, puis divisez-la en deux parts \u00e9gales. Roulez chacune d&#8217;entre elle en un cylindre, enveloppez de film alimentaire et laissez reposer sur le plan de travail pendant 30 minutes, le temps de pr\u00e9parer la garniture.<\/li>\n\n\n\n<li><strong>Fa\u00e7onnez les feuilles \u00e0 gyoza.<\/strong> Saupoudrez votre surface de travail de f\u00e9cule, puis \u00e9talez la p\u00e2te \u00e0 gyoza. Pour cela, deux options s&#8217;offrent \u00e0 vous. M\u00e9thode 1 : coupez chaque cylindre de p\u00e2te en 12 parts \u00e9gales et \u00e9talez chacune d&#8217;entre elle en forme de disque (vous pouvez utiliser un emporte-pi\u00e8ce pour une forme plus r\u00e9guli\u00e8re). C&#8217;est la m\u00e9thode japonaise traditionnelle. M\u00e9thode 2 : \u00e9talez chaque cylindre de p\u00e2te d&#8217;un seul tenant et y d\u00e9couper des disques de p\u00e2te \u00e0 l&#8217;emporte-piece. Dans les deux cas, saupoudrez les disques de f\u00e9cule et couvrez-les d&#8217;un torchon humide tout du long.<\/li>\n<\/ol>\n\n\n\t\t<div class=\"contentbox contentbox-lightpink notop nobot\">\t\t\r\n\t\t\t\n\n<p><strong>Important<\/strong> ! Il est indispensable de saupoudrer les feuilles de gyozas de f\u00e9cule de ma\u00efs (ou pommes de terre) pour s&#8217;assurer qu&#8217;elles restent souples et \u00e9viter qu&#8217;elles ne collent les unes aux autres. Placez-les dans un bol pour bien les m\u00e9langer.<\/li>\n\n\n\n<li><strong>Pr\u00e9parez ensuite l&#8217;assaisonnement<\/strong> en fouettant ensemble la sauce soja, le miso, l&#8217;huile de s\u00e9same, l&#8217;ail et le gingembre.<\/li>\n\n\n\n<li><strong>Faites cuire les l\u00e9gumes<\/strong> dans un peu d&#8217;huile. Ajoutez l&#8217;assaisonnement et poursuivez la cuisson quelques minutes pour absorber l&#8217;humidit\u00e9. C\u2019est pourtant assez intuitif, et surtout, les plis n\u2019ont pas besoin d\u2019\u00eatre parfaits &#8211; ils ne sont d&#8217;ailleurs pas indispensables et on pourrait tr\u00e8s biens souder les dumplings tr\u00e8s simplement.<\/p>\n\n\n\n<p>Si vous souhaitez n\u00e9anmoins cr\u00e9er ce joli visuel de pliage, sachez que c&#8217;est une activit\u00e9 assez ludique et reposante. Si vous le pouvez, recrutez les petites mains autour de vous pour cr\u00e9er des souvenirs en famille pour les ann\u00e9es \u00e0 venir. Voici comment proc\u00e9der :<\/p>\n\n\n\n<ul class=\"wp-block-list is-style-default\">\n<li>D\u00e9posez un peu de garniture au centre de chaque dumpling, puis humectez les bords d&#8217;un peu d&#8217;eau tout autour. Repliez le disque en deux pour cr\u00e9er une demi-lune, et pincez les bords pour souder en choisissant une des deux m\u00e9thodes ci-dessous :<\/li>\n\n\n\n<li><strong>M\u00e9thode 1: plis vers le centre.<\/strong>&nbsp;Pincez le dumpling en haut au centre de la main gauche et r\u00e9alisez 3 \u00e0 4 plis vers la droite. Une fois coup\u00e9s, ajouter les carottes, le chou, les champignons et les oignons dans un grand saladier et m\u00e9langer.<\/li>\n<li id=\"instruction-step-2\">Dans un verre mesureur, fouetter ensemble l&#8217;ail, le gingembre, le miso, la sauce soja, l&#8217;huile de s\u00e9same et le sel.<\/li>\n<li id=\"instruction-step-3\">Faire chauffer une cuill\u00e9r\u00e9e \u00e0 soupe d&#8217;huile de colza dans une grande po\u00eale plac\u00e9e sur feu moyen-vif. Lorsque l&#8217;huile commence \u00e0 fr\u00e9mir, y ajouter les l\u00e9gumes et les faire sauter en remuant r\u00e9guli\u00e8rement, environ 2 minutes. Verser la mixture au miso, m\u00e9langer et poursuivre la cuisson encore 1 \u00e0 2 minutes, ou jusqu&#8217;\u00e0 ce que le liquide soit \u00e9vapor\u00e9.* Remettre les l\u00e9gumes saut\u00e9s dans le saladier et laisser refroidir compl\u00e8tement (on peut acc\u00e9l\u00e9rer le processus en les pla\u00e7ant 10-15 minutes au r\u00e9frig\u00e9rateur).<\/li>\n<li id=\"instruction-step-4\">Pour assembler les gyozas, d\u00e9poser une petite quantit\u00e9 de garniture au centre de chaque feuille \u00e0 gyoza. \u00c0 l&#8217;aide d&#8217;un doigt, humecter le pourtour d&#8217;un peu d&#8217;eau, puis replier le dumpling de telle sorte \u00e0 former une demi-lune. Tenir le dumpling au centre de la partie sup\u00e9rieure et cr\u00e9er 3 \u00e0 4 plus de chaque c\u00f4t\u00e9 (ou bien r\u00e9aliser tous les plis du m\u00eame c\u00f4t\u00e9 en allant d&#8217;une extr\u00e9mit\u00e9 \u00e0 l&#8217;autre), en pressant bien avec les doigts pour souder. R\u00e9p\u00e9ter avec les gyozas restants.\u00a0<\/li>\n<li id=\"instruction-step-5\">Faire chauffer une cuill\u00e9r\u00e9e \u00e0 soupe d&#8217;huile de colza dans une grande po\u00eale assez profonde plac\u00e9e sur feu moyen-vif. Lorsque l&#8217;huile commence \u00e0 fr\u00e9mir, ajouter les gyozas et les faire dorer sur le dessous uniquement pendant 2-3 minutes. Verser 60 ml d&#8217;eau environ et couvrir aussit\u00f4t la po\u00eale avec un couvercle de la bonne taille. R\u00e9duire \u00e0 feu moyen et faire cuire les gyozas \u00e0 la vapeur pendant 3 minutes. Lorsque l&#8217;eau est \u00e9vapor\u00e9e, ajouter une cuill\u00e9r\u00e9e \u00e0 soupe d&#8217;huile de s\u00e9same dans le fond de la po\u00eale et y faire dorer les gyozas une derni\u00e8re fois sur le dessous pour s&#8217;assurer qu&#8217;ils soient bien croustillants.<\/li>\n<li id=\"instruction-step-6\">Fouetter ensemble tous les ingr\u00e9dients de la sauce soja dans un bol.<\/li>\n<li id=\"instruction-step-7\">Garnir les gyozas d&#8217;oignons de printemps cisel\u00e9 et parsemer de s\u00e9same blond et\/ou noir l\u00e9g\u00e8rement dor\u00e9. Servir aussit\u00f4t avec la sauce au soja.
