En sucr\u00e9 comme en sal\u00e9, les tourtes sont toujours un r\u00e9gal mais assez chronophages, surtout avec une p\u00e2te maison (ce que je recommande toujours). Alors pour les jours de flemme ou les emplois du temps bien charg\u00e9s, r\u00e9haussez simplement la garniture de biscuits sal\u00e9s am\u00e9ricains \u00e0 la fa\u00e7on d&#8217;un crumble. C\u00f4t\u00e9 l\u00e9gumes, on retrouve ici des pommes de terre, des champignons, des carottes, du c\u00e9leri branche, des petits pois (surgel\u00e9s), des oignons et de l&#8217;ail. Une fois saut\u00e9s \u00e0 la po\u00eale, on ajoute un roux \u00e0 base de beurre, farine, bouillon et cr\u00e8me liquide pour cr\u00e9er le c\u00f4t\u00e9 cr\u00e9meux. Il suffit de pulser tous les ingr\u00e9dients dans un robot et de pr\u00e9lever des cuill\u00e9r\u00e9es de p\u00e2te &#8220;\u00e0 la louche&#8221; avant de les d\u00e9poser par-dessus la garniture.<\/p>\n\n\n\n<p>Pour plus de saveurs, j&#8217;ai cr\u00e9e ces biscuits-scones avec des herbes (j&#8217;y ai mis du thym et du romarin, mais de la ciboulette fonctionnerait \u00e9galement tr\u00e8s bien) et ajout\u00e9 du parmesan r\u00e2p\u00e9. Verser 25 cl du buttermilk** (r\u00e9server le reste pour dorer les biscuits plus tard) et pulser de nouveau. La p\u00e2te va s&#8217;agglom\u00e9rer et former une boule encore un peu collante et humide. Si elle est trop humide, ajouter un peu de farine. Si au contraire elle est un peu trop s\u00e8che, verser un peu de buttermilk ou de lait, une cuill\u00e9r\u00e9e \u00e0 soupe \u00e0 la fois.<\/li>\n<li id=\"instruction-step-3\">En utilisant une tasse, pr\u00e9lever la p\u00e2te \u00e0 biscuits et former des petits tas sur une plaque de cuisson couverte de papier sulfuris\u00e9. Incorporer la farine, le sel, le poivre, la noix de muscade et le thym. Verser petit \u00e0 petit le bouillon et la cr\u00e8me, en remuant souvent, jusqu&#8217;\u00e0 ce que la sauce \u00e9paississe, environ 10 minutes. \u00c9teindre le feu et ajouter les petits pois surgel\u00e9s.\u00a0<\/li>\n<li id=\"instruction-step-5\"><strong>Pour assembler et cuire.<\/strong> Verser la garniture de l\u00e9gumes dans un plat allant au four*** et disposer les biscuits par-dessus. Les badigeonner des 2 cuil. \u00e0 soupe restantes de buttermilk et enfourner 25 minutes \u00e0 200\u00b0C, puis 5-6 minutes \u00e0 220\u00b0C, jusqu&#8217;\u00e0 ce que les biscuits soient bien dor\u00e9s. Freeze for about 10 minutes, then transfer to the refrigerator until ready to use*.<\/li>\n<li id=\"instruction-step-4\"><strong>For the filling.<\/strong> Melt the butter in a large skillet placed over medium heat. Add chopped carrots, onions, potatoes, and celery. Sweat vegetables until softened, but still have a bite to them, about 8 minutes. If they start to brown, reduce the heat a bit. Add mushrooms, garlic, and cook for one more minute. Whisk in the flour, salt, pepper, nutmeg and thyme. Slowly add the broth and cream, stirring frequently until thick, about 10 minutes. Turn off the heat and add the peas, and stir in the remaining veggies.<\/li>\n<li id=\"instruction-step-5\"><strong>For assembling and baking.<\/strong> Pour the filling into the baking dish*** and arrange the cold biscuits on top. Brush the tops of the biscuits with remaining 2 Tablespoons (30ml) buttermilk. Bake for 25 minutes at 400\u00b0F (200\u00b0C), and then 5-6 minutes at 425\u00b0F (220\u00b0C), until biscuits are golden on top.
