La recette originale du Creusois est en effet bien gard\u00e9e par un petit cercle ferm\u00e9 de 31 chefs p\u00e2tissier dans la Creuse. Je vous le partage aujourd&#8217;hui ici car il m\u00e9rite une recette d\u00e9di\u00e9e pleine et enti\u00e8re. Vous noterez que cette version est l\u00e9g\u00e8rement plus l\u00e9g\u00e8re en beurre que la pr\u00e9c\u00e9dente, tout en restant incroyablement moelleuse et l\u00e9g\u00e8re.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-qu-est-ce-que-le-creusois\">Qu&#8217;est-ce que le creusois ?<\/h2>\n\n\n\n<p>Le creusois est un g\u00e2teau aux noisettes tr\u00e8s moelleux originaire du Limousin, pr\u00e9par\u00e9 avec des noisettes et des blancs en neige. La premi\u00e8re mention de la recette a \u00e9t\u00e9 retrouv\u00e9e dans un parchemin du XV\u00e8me si\u00e8cle qui se trouvait dans un monast\u00e8re local. <\/p>\n\n\n\n<p>La recette a alors \u00e9t\u00e9 traduite du vieux fran\u00e7ais et retravaill\u00e9e de telle sorte \u00e0 en faire un dessert traditionnel du Limousin. Utilisez du beurre doux de pr\u00e9f\u00e9rence, et fondu.<\/li>\n\n\n\n<li><strong>Blancs d&#8217;oeufs.<\/strong> La recette n\u00e9cessite pas moins de 5 blancs d&#8217;oeufs battus en neige. Ils  remplacent la levure chimique et permettent au creusois de bien gonfler. Vous pouvez utiliser de la poudre de noisettes ou bien mixer vous-m\u00eame des noisettes enti\u00e8res et l\u00e9g\u00e8rement grill\u00e9es au robot. Quelle que soit la m\u00e9thode, vous remarquerez que la poudre obtenue a un peu de texture (par opposition \u00e0 la farine de bl\u00e9 parfaitement lisse et douce). Personnellement, j&#8217;opte toujours pour la poudre de noisettes et en suis tr\u00e8s satisfaite \u00e0 chaque fois.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-blancs-en-neige-element-cle-de-la-recette\">Les blancs en neige : \u00e9l\u00e9ment cl\u00e9 de la recette<\/h2>\n\n\n\n<p>Le creusois est un g\u00e2teau relativement simple \u00e0 pr\u00e9parer, avec tr\u00e8s peu d&#8217;ingr\u00e9dients. Il est toutefois important d&#8217;\u00eatre vigilent quant-\u00e0 la pr\u00e9paration des blancs en neige. Utilisez un batteur \u00e9lectrique et assurez-vous qu&#8217;ils soient bien mont\u00e9s avant utilisation. Comme chacun sait, s&#8217;ils tiennent en place quand on retourne le saladier, c&#8217;est qu&#8217;ils sont pr\u00eats (attention toutefois \u00e0 ne pas tout renverser si vous faites le test vous m\u00eame).<\/p>\n\n\n\n<p>Mais ce n&#8217;est pas tout. L&#8217;incorporation des blancs d&#8217;oeufs dans la pr\u00e9paration \u00e0 la noisette a \u00e9galement son importance. Commencez par d\u00e9tendre la p\u00e2te en ajoutant quelques cuill\u00e9r\u00e9es de blanc d&#8217;oeufs. Ensuite, incorporez les blancs d&#8217;oeufs en deux ou trois fois en effectuant des mouvements circulaires de bas en haut. Pour ma part, j&#8217;aime accompagner le creusois aux noisettes d&#8217;une <strong>cr\u00e8me anglaise<\/strong>, d&#8217;un peu de <strong>glace \u00e0 la vanille<\/strong> ou encore d&#8217;un bon <a href=\"https:\/\/www.delscookingtwist.com\/fr\/chocolat-chaud-a-lancienne\/\">chocolat chaud \u00e0 l&#8217;ancienne<\/a>. Pour ceux qui pr\u00e9f\u00e8rent les saveurs fruit\u00e9es, il se marie \u00e9galement tr\u00e8s bien avec des <strong>poires<\/strong> et\/ou des <strong>fruits rouges<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-que-faire-des-jaunes-d-oeufs-restants\">Que faire des jaunes d&#8217;oeufs restants ?<\/h2>\n\n\n\n<p>Dans la mesure o\u00f9 la recette n\u00e9cessite 5 blancs  d&#8217;oeufs, vous vous retrouverez avec 5 jaunes inutilis\u00e9s. Pour \u00e9viter de les jeter, utilisez-les dans mes <a href=\"https:\/\/www.delscookingtwist.com\/fr\/petits-pots-de-creme-au-chocolat\/\">petits pots de cr\u00e8me au chocolat \u00e0 l&#8217;ancienne<\/a>.
