Voici une recette qui va faire des heureux chez les amateurs de caf\u00e9. Il m&#8217;a fallu plusieurs essais avant d&#8217;obtenir le r\u00e9sultat escompt\u00e9, mais je suis heureuse d&#8217;\u00eatre parvenue \u00e0 mes fins. Ce cake a une texture bien moelleuse et des saveurs intenses en caf\u00e9. Mais pour le r\u00e9hausser, j&#8217;ai ajout\u00e9 un gla\u00e7age \u00e0 l&#8217;espresso qui est juste \u00e0 tomber par terre. Au final, c&#8217;est un dessert fort en caf\u00e9 mais tout doux, tendre et cr\u00e9meux. Vous pouvez vous en passer si vous utilisez du beurre demi-sel.<\/li>\n\n\n\n<li><strong>Beurre.<\/strong> Id\u00e9alement je recommande du beurre doux (puisque la recette contient d\u00e9j\u00e0 du sel par ailleurs). \u00c0 noter \u00e9galement que le beurre s&#8217;utilise mou\/ramolli dans la recette ; c&#8217;est d&#8217;ailleurs un \u00e9l\u00e9ment cl\u00e9 de r\u00e9ussite de ce cake.<\/li>\n\n\n\n<li><strong>Lait.<\/strong> Choisissez du lait entier ou demi-\u00e9cr\u00e9m\u00e9 (\u00e9vitez en revanche le lait \u00e9cr\u00e9m\u00e9 qui donnerait des r\u00e9sultats contrast\u00e9s).<\/li>\n\n\n\n<li><strong>Oeufs.<\/strong> Assurez-vous qu&#8217;ils soient \u00e0 temp\u00e9rature ambiante (et non pas froids) avant utilisation dans la recette. Or, il se trouve que le caf\u00e9 instantan\u00e9, que l&#8217;on aime ou non le boire, se pr\u00eate bien en&nbsp; p\u00e2tisserie. Sa concentration en caff\u00e9ine le rend parfait pour \u00eatre incorpor\u00e9 \u00e0 des ingr\u00e9dients humides notamment (contrairement \u00e0 mes <a href=\"https:\/\/www.delscookingtwist.com\/fr\/cookies-a-lespresso-et-au-chocolat-noir\/\">cookies \u00e0 l&#8217;espresso<\/a> pour lesquels du caf\u00e9 moulu est ajout\u00e9 aux ingr\u00e9dients secs).<\/p>\n\n\n\n<p>Ici, le caf\u00e9 instantan\u00e9 est fait tr\u00e8s fort, c&#8217;est-\u00e0-dire qu&#8217;il est tr\u00e8s peu dilu\u00e9, ce qui accentue les saveurs de caf\u00e9 dans le cake sans en compromettre la texture (trop d&#8217;humidit\u00e9 et toute la recette serait \u00e0 repenser). Pour cette raison, je recommande le caf\u00e9 instantan\u00e9 plut\u00f4t que du &#8220;vrai&#8221; caf\u00e9, que l&#8217;on gardera pour accompagner le cake !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-comment-realiser-le-glacage-a-l-espresso\">Comment r\u00e9aliser le gla\u00e7age \u00e0 l&#8217;espresso ?<\/h2>\n\n\n\n<p>Si ce cake moelleux au caf\u00e9 se suffit tr\u00e8s bien \u00e0 lui m\u00eame, il est encore meilleur r\u00e9hauss\u00e9 d&#8217;un gla\u00e7age \u00e0 l&#8217;espresso. Celui que je vous propose aujourd&#8217;hui n&#8217;a rien \u00e0 voir avec les gla\u00e7age riches en beurre. Celui-ci est r\u00e9alis\u00e9 avec de la cr\u00e8me liquide mont\u00e9e en chantilly, du sucre glace et de l&#8217;espresso. C&#8217;est ce qui lui donne une texture l\u00e9g\u00e8re et a\u00e9r\u00e9e.<\/p>\n\n\n\n<p>Pour r\u00e9aliser le gla\u00e7age \u00e0 l&#8217;espresso, commencez par r\u00e9aliser le m\u00e9lange cr\u00e8me-espresso pour qu&#8217;il ait bien le temps de refroidir. Ensuite, vous pouvez faire monter votre cr\u00e8me en chantilly avec le sucre glace pr\u00e9alablement tamis\u00e9. Pour cela il est important d&#8217;utiliser du beurre tr\u00e8s mou (pas fondu) et de battre avec le sucre suffisamment longtemps.<\/li>\n\n\n\n<li><strong>Laissez le caf\u00e9 refroidir avant de l&#8217;ajouter \u00e0 la p\u00e2te<\/strong> et versez-le petit \u00e0 petit, sans cesser de battre. Si le caf\u00e9 est un peu trop chaud ou que vous allez trop vite, les particules de beurre se s\u00e9pareront et vous aurez un m\u00e9lange caill\u00e9 plut\u00f4t que cr\u00e9meux (cf. section &#8220;j&#8217;ai r\u00e2t\u00e9, je fais quoi ?&#8221;).<\/li>\n\n\n\n<li><strong>Battez les oeufs \u00e0 la fourchette<\/strong> avant utilisation et assurez-vous qu&#8217;ils soient \u00e0 temp\u00e9rature ambiante. En d&#8217;autres termes, <strong>que faire si le m\u00e9lange cr\u00e9meux beurre-sucre devient caill\u00e9<\/strong> (avec des particules de beurre qui se d\u00e9tachent les unes des autres) ?<\/p>\n\n\n\n<p>Tout d&#8217;abord, ne vous bl\u00e2mez pas. Cela peut arriver \u00e0 n&#8217;importe qui d&#8217;entre nous : lecture un peu trop rapide des instructions, ajout du caf\u00e9 un peu trop chaud&#8230;&nbsp; La bonne nouvelle, c&#8217;est qu&#8217;il est n\u00e9anmoins possible de rattraper la recette sans jeter tous les ingr\u00e9dients \u00e0 la poubelle. Commencez dans un premier temps par ajouter quelques cuill\u00e9r\u00e9es \u00e0 soupe de farine au m\u00e9lange beurre-sucre et continuez de battre avec le batteur \u00e9lectrique. Si cela ne suffit pas, attrapez votre mixeur plongeant et mixez la p\u00e2te jusqu&#8217;\u00e0 ce qu&#8217;elle reprenne une texture lisse. Vous perdrez un peu d&#8217;a\u00e9ration dans la p\u00e2te en proc\u00e9dant ainsi et votre cake sera un peu plus dense qu&#8217;il n&#8217;aurait d\u00fb l&#8217;\u00eatre, mais cela vous \u00e9vitera des catastrophes \u00e0 la cuisson.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-suggestions-de-presentations-et-variations\">Suggestions de pr\u00e9sentations et variations<\/h2>\n\n\n\n<p>Vous pouvez d\u00e9guster le cake au caf\u00e9 tel quel, ou bien r\u00e9hauss\u00e9 de son gla\u00e7age \u00e0 l&#8217;espresso. jusqu&#8217;\u00e0 incorporation totale. Si le m\u00e9lange commence \u00e0 cailler un peu, ajouter quelques cuill\u00e9r\u00e9es de farine tamis\u00e9e et battre de nouveau, jusqu&#8217;\u00e0 ce que le m\u00e9lange soit bien homog\u00e8ne.<\/li>\n<li id=\"instruction-step-4\">En gardant le batteur \u00e9lectrique \u00e0 vitesse faible, verser le m\u00e9lange de caf\u00e9 (bien refroidi !), le lait et le reste de la farine avec la levure.<\/li>\n<li id=\"instruction-step-5\">Transf\u00e9rer dans le moule \u00e0 cake et enfourner pendant environ 1 heure ou jusqu&#8217;\u00e0 ce que le cake soit bien cuit (une lame ins\u00e9r\u00e9e en son centre doit ressortir propre). Laisser refroidir 10 minutes dans le moule, puis transf\u00e9rer sur une grille pour refroidir compl\u00e8tement.<\/li>\n<\/ol>\n<h4>Pour le gla\u00e7age \u00e0 l&#8217;espresso :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-6\">Verser l&#8217;espresso en poudre et le caf\u00e9 instantan\u00e9 dans le fond d&#8217;un verre mesureur. Couvrir de 60 ml de cr\u00e8me liquide et faire chauffer ce m\u00e9lange au micro-ondes jusqu&#8217;\u00e0 ce que le caf\u00e9 soit bien dissout. Passer ce m\u00e9lange dans une petite passoire fine, en prenant soin de r\u00e9cup\u00e9rer la cr\u00e8me infus\u00e9e au caf\u00e9 dans un bol. Le placer au r\u00e9frig\u00e9rateur pour le laisser refroidir compl\u00e8tement (il est aussi possible de le mettre au freezer quelques minutes pour acc\u00e9l\u00e9rer le processus de refroidissement).<\/li>\n<li id=\"instruction-step-7\">Dans le bol d&#8217;un robot m\u00e9nager \u00e9quip\u00e9 du fouet, fouetter ensemble le reste de cr\u00e8me liquide et le sucre glace tamis\u00e9, jusqu&#8217;\u00e0 ce que le m\u00e9lange monte. Verser progressivement et tr\u00e8s lentement la cr\u00e8me infus\u00e9e au caf\u00e9 tout en continuant de fouetter, jusqu&#8217;\u00e0 ce que le caf\u00e9 soit bien incorpor\u00e9. Le gla\u00e7age ainsi obtenu doit \u00eatre \u00e0 la fois onctueux, souple et a\u00e9r\u00e9.<\/li>\n<li id=\"instruction-step-8\">R\u00e9partir le gla\u00e7age \u00e0 l&#8217;espresso sur le cake au caf\u00e9 refroidi (s&#8217;assurer qu&#8217;il ait bien refroidi au pr\u00e9alable), puis d\u00e9corer de chutes de chocolat.
