Le riz sauvage a l&#8217;avantage d&#8217;apporter des saveurs plus prononc\u00e9es que son \u00e9quivalent en riz long blanc ou brun. Il est n\u00e9anmoins parfaitement possible d&#8217;utiliser l&#8217;un de ces deux derniers s&#8217;ils sont plus faciles \u00e0 trouver en vente pr\u00e8s de chez vous.<\/li>\n<li><strong>Champignons sauvages.<\/strong> Si tout type de champignon convient pour cette recette, j&#8217;aime utiliser un m\u00e9lange de champignons (girolles, pleurotes, shiitake, trompettes, ou encore champignons des bois et champignons de Paris). Cela donne un air festif \u00e0 la garniture de riz.<\/li>\n<li><strong>Cranberries s\u00e9ch\u00e9es.<\/strong> On les appelle aussi canneberges en fran\u00e7ais, m\u00eame si leur nom anglophone semble plus connu. Cela n\u00e9cessite une \u00e9tape suppl\u00e9mentaire \u00e0 la recette mais est absolument d\u00e9licieux. \u00c0 vous de voir si vous souhaitez faire avec ou vous en passer.<\/p>\n<h2>Une recette en 4 \u00e9tapes<\/h2>\n<p>Ce plat de courge farcie au riz sauvage et champignons se r\u00e9alise en 5 \u00e9tapes (voir la recette pour les instructions d\u00e9taill\u00e9es).<\/p>\n<ol>\n<li><strong>Commencez par faire r\u00f4tir la courge<\/strong> coup\u00e9e en deux, g\u00e9n\u00e9reusement badigeonn\u00e9e de la marinade et d\u00e9pos\u00e9e sur la plaque de cuisson, face coup\u00e9e vers le haut.<\/li>\n<li><strong>Ensuite, pr\u00e9parez le riz sauvage<\/strong> en ajoutant les cranberries s\u00e9ch\u00e9es \u00e0 la toute fin, le temps qu&#8217;elles se regorgent d&#8217;eau et redeviennent juteuses.<\/li>\n<li><strong>Fa\u00eetes sauter les \u00e9chalotes et les champignons<\/strong> dans une grande po\u00eale avec un peu de beurre. Ajoutez-les ensuite au m\u00e9lange de riz sauvage et remuant d\u00e9licatement de telle sorte \u00e0 ne pas les abimer.<\/li>\n<li><strong>Garnissez la courge de la farce de riz<\/strong> et enfournez pendant 5-10 minutes. Ajoutez le parmesan r\u00e2p\u00e9 et poursuivez la cuisson encore 5 minutes. De petite taille ronde, cette courge \u00e0 la peau vert fonc\u00e9e a une chair douce qui la rend absolument parfaite pour \u00eatre farcie. Il n&#8217;est cependant pas toujours facile d&#8217;en trouver, mais il est parfaitement possible de la remplacer par d&#8217;autres types de courges pour cette recette (voir d\u00e9tail ci-dessous dans le FAQ).<\/p>\n<p>Pour couper une courge &#8220;acorn&#8221;, je recommande d&#8217;en couper les extr\u00e9mit\u00e9s de telle sorte \u00e0 cr\u00e9er une base plate, avant de la couper en par la taille, cr\u00e9ant ainsi un joli effet visuel coroll\u00e9. Il est aussi possible de la couper en deux dans le sens de la hauteur. La courge &#8220;acorn&#8221; n&#8217;est pas toujours facile \u00e0 trouver mais il est possible d&#8217;utiliser une courge butternut, une courge patidou ou un petit potimarron pour la remplacer.<\/p>\n<p><strong>Comment d\u00e9guster la courge &#8220;acorn&#8221; farcie ?<\/strong> Au premier abord la question peut sembler idiote. Or, la peau de la courge &#8220;acorn&#8221; est assez \u00e9paisse, et bien que comestible, il n&#8217;est pas toujours tr\u00e8s \u00e9vident de la manger. Pour ma part, je me contente d&#8217;en pr\u00e9lever la chair et de laisser la peau sur le c\u00f4t\u00e9.<\/p>\n<p><strong>Comment accompagner la courge farcie ?<\/strong> Notez que la courge farcie au riz sauvage peut \u00eatre l&#8217;objet d&#8217;un plat principal ou d&#8217;un accompagnement. \u00c9tant relativement rassasiant, j&#8217;ai tendance \u00e0 opter pour la premi\u00e8re option, en faisant la reine d&#8217;un repas v\u00e9g\u00e9tarien que l&#8217;on peut accompagner d&#8217;un peu de laitue ou bien pourquoi pas de quelques choux de Bruxelles.<\/p>\n<p><strong>Et en version vegan, c&#8217;est possible ?<\/strong> La r\u00e9ponse est oui. Le seul ingr\u00e9dient qui n&#8217;est pas vegan dans la recette, c&#8217;est le parmesan que l&#8217;on ajoute \u00e0 la toute fin. Il est n\u00e9anmoins parfaitement possible de s&#8217;en passer ou bien de le remplacer par juste un peu de levure alimentaire pour recr\u00e9er la saveur du fromage dans la recette.<\/p>\n<p><strong>Peut-on r\u00e9aliser la recette en avance ?<\/strong> Oui, il est parfaitement possible de pr\u00e9parer le riz la veille, puis de faire cuire la courge et de l&#8217;assembler le jour m\u00eame.
