La cl\u00e9 est de les faire r\u00e9duire dans du vinaigre balsamique de telle sorte \u00e0 obtenir des oignons caram\u00e9lis\u00e9s qui apporteront des notes douces am\u00e8res \u00e0 la farce.<\/li>\n\n\n\n<li><strong>Ch\u00e2taignes.<\/strong> J&#8217;ai ici utilis\u00e9 des ch\u00e2taignes en bocal, d\u00e9j\u00e0 cuites, pour gagner du temps. Elles apportent une saveur tr\u00e8s rustique au Wellington.<\/li>\n\n\n\n<li><strong>Champignons.<\/strong> Tout type de champignons peut fonctionner dans un Wellington v\u00e9g\u00e9tarien, mais je recommande en particulier des champignons des bois, ou pourquoi pas des champignons de Paris ou encore des Portobello. Les champignons donnent de la consistence \u00e0 la farce.<\/li>\n\n\n\n<li><strong>Pousses d&#8217;\u00e9pinards.<\/strong> Je recommande d&#8217;utiliser des pousses d&#8217;\u00e9pinards frais plut\u00f4t que surgel\u00e9s pour \u00e9viter qu&#8217;ils ne rendent trop d&#8217;eau \u00e0 la cuisson et risquent par la suite de d\u00e9tremper la p\u00e2te.<\/li>\n\n\n\n<li><strong>Thym.<\/strong> Vous pouvez parfaitement utiliser d&#8217;autres herbes, comme par exemple un m\u00e9lange de thym et de romarin h\u00e2ch\u00e9 menu. Certains utilisent de l&#8217;estragon \u00e0 la place. Quoi qu&#8217;il en soit, les herbes sont importantes car elles apportent de la fra\u00eecheur \u00e0 la farce.<\/li>\n\n\n\n<li>Et bien s\u00fbr n&#8217;oubliez pas la <strong>p\u00e2te feuillet\u00e9e<\/strong> pour enrober la farce. R\u00e9servez.<\/li>\n\n\n\n<li><strong>Fa\u00eetes sauter les champignons<\/strong> dans un peu d&#8217;huile pendant quelques instants, avant d&#8217;ajouter l&#8217;ail, les herbes et de faire sauter encore une minute. Enfin versez le vinaigre balsamique et fa\u00eetes cuire \u00e0 feu moyen jusqu&#8217;\u00e0 ce que tout le liquide soit \u00e9vapor\u00e9.<\/li>\n\n\n\n<li><b>\u00c9miettez les ch\u00e2taignes par-dessus, ajoutez les \u00e9pinards<\/b>, m\u00e9langez et fa\u00eetes cuire jusqu&#8217;\u00e0 ce que les \u00e9pinards soient fl\u00e9tris.<\/li>\n\n\n\n<li><b>Transf\u00e9rez la farce dans un saladier avec les autres ingr\u00e9dients<\/b> (oignons, chapelure, noix) et m\u00e9langez jusqu&#8217;\u00e0 ce que le tout forme une farce humide et assez compacte.<\/li>\n\n\n\n<li><strong>\u00c9talez ensuite la p\u00e2te feuillet\u00e9e en un large rectangle et d\u00e9posez la farce en un long boudin<\/strong> au centre, en tapotant avec les mains pour lui donner forme. Y faire chauffer une cuill\u00e9r\u00e9e \u00e0 soupe d&#8217;huile, puis y ajouter les champignons. Faire sauter pendant 2-3 minutes. Ahouter l&#8217;ail, le thym, m\u00e9langer et faire sauter encore une minute. Verser le vinaigre balsamique restant et cuire jusqu&#8217;\u00e0 ce que tout le liquide soit \u00e9vapor\u00e9.<\/li>\n<li id=\"instruction-step-3\">\u00c9mietter les ch\u00e2taignes par-dessus, ajouter les pousses d&#8217;\u00e9pinards frais, m\u00e9langer et faire cuire jusqu&#8217;\u00e0 ce que les \u00e9pinards soient fl\u00e9tris. Saler, poivrer.<\/li>\n<li id=\"instruction-step-4\">Transf\u00e9rer cette mixture dans le grand saladier avec les oignons. Ajouter la chapelure et les noix. Badigeonner d&#8217;oeuf battu a l&#8217;aide d&#8217;un petit pinceau. Soulever l&#8217;autre c\u00f4t\u00e9 de la p\u00e2te et en recouvrir la premi\u00e8re. Badigeonner l&#8217;int\u00e9rieur des petits c\u00f4t\u00e9s et les replier comme le long du boudin, un peu comme pour un cadeau.<\/li>\n<li id=\"instruction-step-8\">Badigeonner toute la surface de la p\u00e2te feuillet\u00e9e de jaune d&#8217;oeufs, puis dessiner un quadrillage en faisant des diagonales parall\u00e8les dans un sens puis dans l&#8217;autre \u00e0 l&#8217;aide d&#8217;un petit couteau d&#8217;office bien aiguis\u00e9.<\/li>\n<li id=\"instruction-step-9\">Enfourner pendant 30 minutes, ou jusqu&#8217;\u00e0 ce que la p\u00e2te soit bien dor\u00e9e.
