Et depuis que j&#8217;ai emm\u00e9nag\u00e9 \u00e0 Vancouver, j&#8217;ai d\u00e9velopp\u00e9 une nouvelle obsession autour de cookies aux noix et aux p\u00e9pites de chocolat que je trouve dans un petit caf\u00e9 local. Servis lorsqu&#8217;ils sont encore ti\u00e8des, ils ont un croquant irr\u00e9sistible, imm\u00e9diatement contrast\u00e9 par un coeur tendre et doux. C\u00f4t\u00e9 saveur, il est impossible de r\u00e9sister \u00e0 ce petit go\u00fbt de beurre noisettes, ces noix concass\u00e9es et broy\u00e9es, et bien s\u00fbr ces g\u00e9n\u00e9reuses p\u00e9pites de chocolat encore ti\u00e8des qui fondent dans la bouche. J&#8217;ai \u00e9galement incorpor\u00e9 du beurre noisette et du sucre moscovado, ajoutant des saveurs un peu fum\u00e9es et prononc\u00e9es qui r\u00e9haussent le parfum des p\u00e9pites de chocolat noir. J&#8217;ai d\u00e9j\u00e0 utilis\u00e9 cette petite astuce pour mes cookies aux noisetttes et ai ador\u00e9 le r\u00e9sultat, c&#8217;est pourquoi je r\u00e9cidive mais cette fois-ci avec des noix.<\/p>\n<p>Pour r\u00e9aliser de la poudre de noix, il vous suffira tout simplement de mixer les noix au robot mixeur (ou dans un petit h\u00e2choir \u00e0 herbes, au vu de la petite quantit\u00e9 n\u00e9cessaire pour la recette) jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une poudre qui a encore un peu de texture mais qui n&#8217;est pas aussi fine que de la farine. Or, le processus pour r\u00e9aliser du beurre noisette r\u00e9sulte en une \u00e9vaporation partielle du beurre fondu, ce qui fait que vous vous retrouvez avec moins de beurre \u00e0 la fin qu&#8217;avant d&#8217;avoir commenc\u00e9 la recette. Vous me suivez ? C&#8217;est pourquoi il est fondamental de mesurer le beurre une fois qu&#8217;il est r\u00e9duit en beurre noisette (j&#8217;utilise un verre mesureur) et d&#8217;ajuster la quantit\u00e9 de beurre au besoin. Pour cela, ajoutez simplement quelques petits morceaux de beurre jusqu&#8217;\u00e0 atteindre 180 ml. Tout simplement parce qu&#8217;il est difficile d&#8217;\u00e9valuer la perte une fois votre beurre noisette r\u00e9alis\u00e9 d&#8217;une fois sur l&#8217;autre.<\/p>\n<h2>Conseils pour bien r\u00e9ussir vos cookies aux noix<\/h2>\n<p>Ce qui fait la diff\u00e9rence entre un bon cookie et un cookie incroyable tient \u00e0 peu de choses, et pourtant c&#8217;est ce qui fait toute la diff\u00e9rence. Cuisez-le trop longtemps et il devient dur et sec, pas assez longtemps et il s&#8217;effondre. Ces cookies aux noix, beurre noisette et p\u00e9pites de chocolat doivent quant-\u00e0 eux avoir un aspect croquant en surface et tendre \u00e0 l&#8217;int\u00e9rieur. Pour cela, il y a quelques r\u00e8gles \u00e0 bien respecter :<\/p>\n<ul>\n<li>Lorsque vous r\u00e9alisez la p\u00e2te \u00e0 cookies, assurez-vous de bien respecter les quantit\u00e9s et les bons ratios, comme par exemple le ratio sucre blanc \/ vergeoise. Chaque four est diff\u00e9rent et selon qu&#8217;il s&#8217;agisse d&#8217;un four r\u00e9cent ou non, le temps de cuisson risque de varier. Fiez-vous davantage \u00e0 l&#8217;apparence des cookies \u00e0 travers la porte du four. Lorsque les cookies ont l&#8217;air pris \u00e0 l&#8217;ext\u00e9rieur mais encore \u00e0 peine assez cuits \u00e0 l&#8217;int\u00e9rieur, c&#8217;est qu&#8217;ils sont pr\u00eats.<\/li>\n<li>Lorsque vous retirez les cookies du four, laissez-les refroidir sur une plaque de cuisson pendant quelques minutes (c&#8217;est ainsi que leur cuisson se termine) avant de les transf\u00e9rer sur une grille de refroidissement.<\/li>\n<\/ul>\n<p>Et voil\u00e0, vous avez d\u00e9sormais devant vous des cookies aux noix, beurre noisette et p\u00e9pites de chocolat pr\u00eats \u00e0 \u00eatre d\u00e9vor\u00e9s. Verser le beurre noisette dans un verre mesureur et ajouter quelques morceaux de beurre pour arriver au m\u00eame niveau qu&#8217;au d\u00e9part pour pallier l&#8217;\u00e9vaporation du beurre noisette, soit 180 ml de beurre fondu. Les morceaux de beurre additionnels devraient fondre instantan\u00e9ment ou presque.<\/li>\n<li id=\"instruction-step-3\">Verser le beurre noisette dans un saladier, ajouter les deux sucres, et fouetter vigoureusement. Incorporer l&#8217;oeuf, le jaune d&#8217;oeuf, la vanille et les noix. Bien m\u00e9langer.<\/li>\n<li id=\"instruction-step-4\">Incorporer les ingr\u00e9dients humides aux ingr\u00e9dients secs avec une maryse, puis ajouter les p\u00e9pites de chocolat et les noix. Couvrir le saladier de film alimentaire et r\u00e9frig\u00e9rer pendant 2 heures minimum. Retirer la p\u00e2te du r\u00e9frig\u00e9rateur et la laisser \u00e0 temp\u00e9rature ambiante 10-15 minutes avant utilisation.<\/li>\n<li id=\"instruction-step-5\">Pr\u00e9chauffer le four \u00e0 160\u00b0C et couvrir deux plaques de cuisson de papier sulfuris\u00e9. R\u00e9aliser des boules de cookies \u00e0 l&#8217;aide d&#8217;une cuill\u00e8re \u00e0 glace, en les espa\u00e7ant bien les unes des autres sur la plaque de cuisson.<\/li>\n<li id=\"instruction-step-6\">Enfourner pendant 12 minutes, puis retirer du four.
