J&#8217;ai r\u00e9alis\u00e9 diff\u00e9rentes tartes tatin aux l\u00e9gumes par le pass\u00e9 (<a href=\"https:\/\/www.delscookingtwist.com\/fr\/tarte-tatin-aux-panais-carottes-et-echalotes\/\">tarte tatin au panais<\/a>, <a href=\"https:\/\/www.delscookingtwist.com\/fr\/tarte-tatin-au-chevre-et-oignons-rouges\">tarte tatin au ch\u00e8vre et oignons rouge<\/a>) et c&#8217;est toujours une grande r\u00e9ussite. Bonus : c&#8217;est beaucoup plus simple \u00e0 pr\u00e9parer qu&#8217;il ne semble.<\/p>\n<h2>Les aubergines au miso, qu&#8217;est-ce que c&#8217;est ?<\/h2>\n<p>Les aubergines au miso (Nasu Dengaku en japonais) est un plat traditionnel japonais pr\u00e9par\u00e9 \u00e0 l&#8217;origine avec de longues aubergines japonaises, coup\u00e9es en deux dans le sens de la longueur, puis badigeonn\u00e9es d&#8217;une sauce au miso blanc. La traduction signifie litt\u00e9ralement aubergines grill\u00e9es sur le feu, qui est la m\u00e9thode propos\u00e9e au Japon. La saveur est \u00e0 la fois sal\u00e9e, l\u00e9g\u00e8rement fum\u00e9e, douce et l\u00e9g\u00e8rement caram\u00e9lis\u00e9e sur les bords. Bref, j&#8217;adore !<\/p>\n<p>Dans la version que je vous propose aujourd&#8217;hui, j&#8217;ai remplac\u00e9 les aubergines japonaises par des aubergines italiennes (celles que l&#8217;on retrouve le plus souvent, larges et \u00e9paisses) et les ai coup\u00e9es en rondelles, avant de les faire griller au four jusqu&#8217;\u00e0 ce qu&#8217;elles soient bien tendres. Pour info, j&#8217;ai test\u00e9 les deux options, la saveur est identique, mais si jamais vous souhaitez utiliser des aubergines japonaises pour cette tarte tatin, coupez-les dans le sens de la longueur plut\u00f4t qu&#8217;en rondelles, au risque qu&#8217;elles ne r\u00e9tr\u00e9cissent trop \u00e0 la cuisson.<\/li>\n<li><strong>Miso blanc (shiro miso).\u00a0<\/strong>Si vous \u00eates novice en mati\u00e8re de cuisine au miso, sachez que cette p\u00e2te ferment\u00e9e est le secret qui apporte des saveurs sal\u00e9es aux plats japonais notamment.<\/li>\n<li><strong>Huile de s\u00e9same.<\/strong> Avec sa saveur riche et l\u00e9g\u00e8rement grill\u00e9e, elle r\u00e9hausse la saveur de certains plats.<\/li>\n<li><strong>Vinaigre de riz.<\/strong> Ne le remplacez pas avec un autre vinaigre dans cette recette. Le vinaigre de riz est ce qui apporte les saveurs aigres-douces \u00e0 l&#8217;ensemble.<\/li>\n<li><strong>Gingembre.<\/strong> Optez pour du gingembre frais autant que possible. Je n&#8217;avais que du gingembre moulu sur la photo, mais j&#8217;ai par la suite re-test\u00e9 avec du gingembre frais et c&#8217;est encore meilleur.<\/li>\n<li><strong>Miel.<\/strong> Vous pouvez \u00e9galement utiliser du sirop d&#8217;agave ou d&#8217;\u00e9rable.<\/li>\n<li><strong>S\u00e9same blanc et\/ou noir.<\/strong> J&#8217;ai pour ma part utilis\u00e9 un m\u00e9lange des deux, l\u00e9g\u00e8rement grill\u00e9s quelques instants dans une po\u00eale sans ajout de mati\u00e8re grasse.<\/li>\n<li><strong>P\u00e2te bris\u00e9e.<\/strong> La recette peut \u00eatre r\u00e9alis\u00e9e avec une p\u00e2te feuillet\u00e9e pr\u00eate \u00e0 l&#8217;emploi ou une p\u00e2te bris\u00e9e maison. Ou bien optez pour une p\u00e2te feuillet\u00e9e d\u00e9j\u00e0 pr\u00eate \u00e0 l&#8217;emploi.<\/li>\n<li>Ensuite, <strong>placez les aubergines coup\u00e9es en rondelles sur une plaque de cuisson, badigeonnez-les d&#8217;huile et fa\u00eetes-les griller au four<\/strong> jusqu&#8217;\u00e0 ce qu&#8217;elles soient bien tendres.<\/li>\n<li>Fa\u00eetes chauffer tous les ingr\u00e9dients de la sauce au miso dans une petite casserole.<\/li>\n<li><b>Couvrez les aubergines de sauce au miso<\/b>, en r\u00e9servant \u00bc de cette sauce pour plus tard. Passez les aubergines couvertes de miso au four en position grill quelques instants, jusqu&#8217;\u00e0 ce qu&#8217;elles soient tout juste caram\u00e9lis\u00e9es.<\/li>\n<li><strong>Assemblez la tarte tatin<\/strong>, en disposant les rondelles d&#8217;aubergines face miso vers le fond du plat. Comblez les trous avec les \u00e9chalotes, puis versez le reste de miso par-dessus. \u00c9talez la p\u00e2te bris\u00e9e en un disque l\u00e9g\u00e8rement plus grand que le plat et disposez-le par-dessus les aubergines, en repliant les bords vers l&#8217;int\u00e9rieur du moule. Dans ce cas, pas de panique, pr\u00e9levez-les simplement sans les endommager, puis replacez-les sur la tarte tatin invers\u00e9e, partie miso face ouverte (la tarte tatin est maintenant
