Il sert principalement de liant entre les ingr\u00e9dients.<\/li>\n<li><strong>Chapelure ou flocons d&#8217;avoine.<\/strong> Les deux versions fonctionnent tout aussi bien l&#8217;une que l&#8217;autre. Choisissez simplement celle qui vous convient le mieux ou en fonction des ingr\u00e9dients que vous avez sous la main.<\/li>\n<\/ul>\n<p>Notez par ailleurs l&#8217;absence d&#8217;huile d&#8217;olive dans la recette (sauf si vous souhaitez en utiliser pour faire cuire les betteraves) mais la pr\u00e9sence de jus de citron qui apporte une pointe d&#8217;acidit\u00e9. Par ailleurs, n&#8217;oubliez pas d&#8217;assaisonner vos galettes veggies pour \u00e9viter qu&#8217;elles ne soient fades. Une fois cuits, betteraves et quinoa se conservent facilement plusieurs jours au frigo, ce qui vous permet de les assembler au tout dernier moment pour un d\u00eener express en semaine.<\/p>\n<p><strong>Pour congeler les galettes veggies<\/strong>, saisissez-les pr\u00e9alablement quelques minutes de chaque c\u00f4t\u00e9 au four ou \u00e0 la po\u00eale, puis placez-les dans un sac cong\u00e9lation et placez-les au cong\u00e9lateur. Elles se conserveront ainsi plusieurs mois. Au moment de les utiliser, prenez-soin de les faire d\u00e9congeler \u00e0 temp\u00e9rature ambiante dans un premier temps avant de les cuire normalement.<\/p>\n<p><b>Cuisson au four ou \u00e0 la po\u00eale ?\u00a0<\/b>Les deux fonctionnent, mais sachez que la cuisson au four permet de se passer d&#8217;huile et rend ces galettes de betteraves et quinoa un peu plus saines. Vous pouvez n\u00e9anmoins les cuire \u00e0 la po\u00eale avec un peu d&#8217;huile d&#8217;olive de chaque c\u00f4t\u00e9 ; cela leur donnera un petit aspect croustillant irr\u00e9sistible.<\/p>\n<h2>Comment fa\u00e7onner les galettes veggies ?<\/h2>\n<p>Pour r\u00e9aliser les galettes \u00e0 la main, formez des boules de p\u00e2te de la taille de votre choix et aplatissez-les l\u00e9g\u00e8rement \u00e0 la main. Ce fromage a \u00e9galement pour avantage d&#8217;avoir une faible teneur en sodium en comparaison avec d&#8217;autres fromages, ce qui \u00e9tait parfait pour introduire ces galettes \u00e0 ma petite de 8 mois (qui les a d\u00e9vor\u00e9s en moins de deux).<\/p>\n<p>On peut toutefois remplacer la ricotta par du ch\u00e8vre frais, de la feta \u00e9miett\u00e9e ou bien encore du fromage frais (bien \u00e9goutt\u00e9). Du bleu pourrait \u00e9galement \u00eatre envisageable, \u00e0 condition d&#8217;en choisir un relativement cr\u00e9meux et pas trop fort en bouche pour \u00e9viter qu&#8217;il ne prenne le dessus sur la betterave.<\/p>\n<h2>En version vegan et\/ou sans gluten, c&#8217;est possible ?<\/h2>\n<p><strong>Vegan : oui et non. <\/strong>Le fromage et l&#8217;oeuf servent de &#8220;liant&#8221; aux galettes de betteraves et il est donc difficile de les remplacer sans proc\u00e9der \u00e0 quelques ajustements de la recette d&#8217;origine. La bonne nouvelle toutefois, c&#8217;est que l&#8217;on peut facilement apporter plus ou moins d&#8217;humidit\u00e9 \u00e0 l&#8217;ensemble, sans forc\u00e9ment \u00eatre trop regardant sur les quantit\u00e9s pr\u00e9cises. Pour adapter ces galettes en version vegan, tentez par exemple de remplacer le fromage par du fromage de noix de cajou ou bien encore en utilisant un oeuf dit &#8220;oeuf flaxseed&#8221; (litt\u00e9ralement un oeuf &#8220;graines de lin&#8221;), \u00e0 raison d&#8217;1 cuill\u00e9r\u00e9e \u00e0 soupe de graines de lin moulues + 3 cuill\u00e9r\u00e9es \u00e0 soupe d&#8217;eau. Le quinoa repr\u00e9sente une bonne source de prot\u00e9ines v\u00e9g\u00e9tales et de fibres, tandis que les betteraves sont consid\u00e9r\u00e9es comme un superaliment en raison de leur profile nutritionnel. On y retrouve un faible apport calorique, une forte teneur en fibres, en acide folique et en vitamine C, sans oublier son fort pouvoir anti-oxydant. Et pour une exp\u00e9rience compl\u00e8te, servez-les avec des <a href=\"https:\/\/www.delscookingtwist.com\/fr\/frites-de-patates-douces-epicees-et-sauce-a-lavocat\">frites de patates douces<\/a> ou pourquoi pas des <a href=\"https:\/\/www.delscookingtwist.com\/fr\/frites-au-four-aux-herbes-de-provence\">frites au four aux herbes de Provence<\/a>. Un r\u00e9gal !!!<\/p>\n<p>Pour une version express, servez ces galettes de betteraves et quinoa avec un dip de votre choix (yaourt nature, <a
