M\u00eame le gla\u00e7age y est plus sain qu&#8217;un gla\u00e7age traditionnel qui fait la part belle au sucre glace. Enfin, ce cake vegan citron courgettes tout l\u00e9ger est une excellente fa\u00e7on de glisser quelques l\u00e9gumes dans son alimentation tout en appr\u00e9ciant un bon dessert ou go\u00fbter. J&#8217;ai souvent recours au combo graines de lin + eau pour r\u00e9aliser un oeuf vegan dans mes recettes (comme pour <a href=\"https:\/\/www.delscookingtwist.com\/fr\/muffins-vegan-aux-myrtilles\/\">celle-l\u00e0<\/a> ou bien encore <a href=\"https:\/\/www.delscookingtwist.com\/fr\/brownie-vegan-ultra-gourmand\">celle-ci<\/a>), mais cette fois-ci j&#8217;ai voulu tester quelque chose de diff\u00e9rent. \u00c0 coup de baguette magique, je me suis donc amus\u00e9e \u00e0 tester la r\u00e9action chimique cr\u00e9e au contact du vinaigre de cidre avec le bicarbonate de soude.<\/p>\n<p>Ce proc\u00e9d\u00e9 qui est somme toute tr\u00e8s \u00e9conomique aurait \u00e9t\u00e9 utilis\u00e9 \u00e0 des \u00e9poques de p\u00e9nuries ou de rationnement (comme par exemple durant la seconde guerre mondiale) pour remplacer les oeufs dans des g\u00e2teaux. Or, il se trouve que le r\u00e9sultat est tout simplement bluffant puisqu&#8217;on obtient une texture de g\u00e2teau parfaitement moelleuse et a\u00e9r\u00e9e.<\/p>\n<p>En version classique, il faudrait 2 oeufs pour ce cake vegan citron courgettes. J&#8217;ai donc remplac\u00e9 l&#8217;un d&#8217;eux par la combinaison vinaigre de cidre et bicarbonate de soude et utilis\u00e9 pour le deuxi\u00e8me de la compote de pommes non sucr\u00e9e. J&#8217;ai ainsi volontairement \u00e9vit\u00e9 de doubler les quantit\u00e9s de vinaigre de cidre et de bicarbonate de soude, de peur que cela n&#8217;alt\u00e8re la saveur de la recette.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-38508\" src=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/08\/Healthy-Vegan-Lemon-Zucchini-Bread_4.jpg\" alt=\"Ce cake vegan citron courgettes est tendre, moelleux et a\u00e9r\u00e9, tout en \u00e9tant relativement sain.\" width=\"1200\" height=\"1800\" srcset=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/08\/Healthy-Vegan-Lemon-Zucchini-Bread_4.jpg 1200w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/08\/Healthy-Vegan-Lemon-Zucchini-Bread_4-200x300.jpg 200w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/08\/Healthy-Vegan-Lemon-Zucchini-Bread_4-683x1024.jpg 683w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/08\/Healthy-Vegan-Lemon-Zucchini-Bread_4-768x1152.jpg 768w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/08\/Healthy-Vegan-Lemon-Zucchini-Bread_4-1024x1536.jpg 1024w\" sizes=\"(max-width: 770px) calc(100vw - 40px), 730px\" \/><\/p>\n<div class=\"boite_del\">\n<h3>Astuce pour remplacer les oeufs dans un g\u00e2teau<\/h3>\n<p>La combinaison entre un agent neutre (le bicarbonate de soude) et un acide (vinaigre de cidre ou vinaigre blanc) cr\u00e9e une r\u00e9action levante qui donne \u00e0 vos g\u00e2teaux une texture moelleuse et a\u00e9r\u00e9e, sans en alt\u00e9rer la saveur.<\/p>\n<p><strong>1 oeuf = 1 cuil. \u00e0 caf\u00e9 de bicarbonate de soude + 1 cuil. \u00e0 soupe de vinaigre de cidre<\/strong><\/p>\n<p><strong>Comment ?<\/strong> Il suffit simplement d&#8217;ajouter le bicarbonate de soude aux ingr\u00e9dients secs et le vinaigre de cidre aux ingr\u00e9dients humides, tout en poursuivant le d\u00e9roulement de la recette.<\/p>\n<p><strong>NB :<\/strong> Notez toutefois que la combinaison bicarbonate de soude et vinaigre de cidre fonctionne essentiellement pour les recettes qui ne demandent qu&#8217;un seul oeuf. On retrouve donc ici un peu de ma\u00efzena, de l&#8217;huile de coco, du jus de citron et une pointe de sirop d&#8217;\u00e9rable.<\/p>\n<p>Bien s\u00fbr, comme pour dans la plupart des recettes de g\u00e2teaux, le gla\u00e7age est ici tout \u00e0 fait optionnel. Cependant, je trouve qu&#8217;il permet ici de renforcer la saveur acidul\u00e9e du citron et de rendre le cake encore plus moelleux.<\/p>\n<p>Le r\u00e9sultat de ce cake vegan citron courgettes tout l\u00e9ger m&#8217;a laiss\u00e9e bouche b\u00e9e. On y retrouve en effet un bon \u00e9quilibre des saveurs pour un dessert qui n&#8217;est ni trop sucr\u00e9, ni trop lourd mais bien au contraire parfaitement l\u00e9ger et a\u00e9r\u00e9. Je vais vous laisser sur cette note, car vous en parler m&#8217;a donn\u00e9 faim et je m&#8217;en vais me re-servir une part (<em>true story!<\/em>).
