Mais plus qu&#8217;un simple concept, le (ou la) fika est une v\u00e9ritabe institution en Su\u00e8de, un art de vivre. Il s&#8217;agit ainsi d&#8217;une fa\u00e7on de socialiser dans la vie de tous les jours de mani\u00e8re informelle, entre amis ou au travail. Or, pour que celle-ci d\u00e9veloppe tous ses ar\u00f4mes dans la p\u00e2te, il est <strong>important d&#8217;utiliser des graines de cardamome et de les moudre au tout dernier moment<\/strong> (j&#8217;aime aussi y glisser quelques graines enti\u00e8res qui croquent sous la dent). Dans tous les cas, \u00e9vitez la cardamome d\u00e9j\u00e0 moulue qui laissera un go\u00fbt relativement fade \u00e0 votre p\u00e2te.<\/p>\n<h2>Petit guide de la levure boulang\u00e8re<\/h2>\n<p>Faire de la p\u00e2tisserie avec de la levure boulang\u00e8re peut \u00eatre intimidant lorsqu&#8217;on a pas l&#8217;habitude. Rassurez-vous toutefois, c&#8217;est bien plus simple qu&#8217;il n&#8217;y para\u00eet. Ici, il vous faudra <strong>35g de levure boulang\u00e8re fra\u00eeche<\/strong>. Pour l&#8217;activer, \u00e9miettez-la dans un bol et m\u00e9langez avec du lait ti\u00e8de (surtout pas trop chaud, au risque de tuer la levure) et un peu de sucre en poudre. Il en existe deux sortes : la <strong>levure boulang\u00e8re s\u00e8che &#8220;instantan\u00e9e&#8221;<\/strong> et la <strong>levure boulang\u00e8re s\u00e8che &#8220;active&#8221;<\/strong>. La diff\u00e9rence entre les deux repose sur le fait que la levure s\u00e8che instantan\u00e9e peut s&#8217;agglom\u00e9rer directement aux autres ingr\u00e9dients sans besoin de la r\u00e9activer au pr\u00e9alable, tandis que la levure s\u00e8che active sera activ\u00e9e dans un peu de lait ou d&#8217;eau ti\u00e8de avec du sucre, comme pour la levure fra\u00eeche.<\/p>\n<div class=\"boite_del\">\n<h3>Conversions de levure boulang\u00e8re fra\u00eeche\/d\u00e9shydrat\u00e9e pour cette recette<\/h3>\n<ul>\n<li><strong>Levure boulang\u00e8re fra\u00eeche : 35g<\/strong><\/li>\n<li><strong>\u00c9quivalent en levure boulang\u00e8re s\u00e8che active: <\/strong>17g<\/li>\n<li><strong>\u00c9quivalent en levure boulang\u00e8re s\u00e8che instantan\u00e9e : <\/strong>11g<\/li>\n<\/ul>\n<p>De mani\u00e8re g\u00e9n\u00e9rale, il convient de <strong>multiplier par 0.4 la quantit\u00e9 de levure boulang\u00e8re fra\u00eeche pour avoir son \u00e9quivalent en levure boulang\u00e8re s\u00e8che active<\/strong>, et de <strong>multiplier par 0.33 la quantit\u00e9 de levure boulang\u00e8re fra\u00eeche pour avoir son \u00e9quivalent en levure boulang\u00e8re s\u00e8che instantan\u00e9e.<\/strong><\/p>\n<\/div>\n<h2><strong>Quelques mots sur la garniture \u00e0 la rhubarbe<\/strong><\/h2>\n<p>Passons maintenant \u00e0 la garniture de ces petites brioches, avec une compot\u00e9e de rhubarbe tr\u00e8s simple et peu sucr\u00e9e (en raison du sirop duquel on recouvrira les brioches ult\u00e9rieurement) et un peu de p\u00e2te d&#8217;amande \u00e9miett\u00e9e par-dessus. \u00c0 d\u00e9faut, il est aussi possible de simplement saupoudrer d&#8217;un peu de poudre d&#8217;amande.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter size-full wp-image-37917\" src=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/05\/Swedish-Rhubarb-Cardamom-Buns_4.jpg\" alt=\"Les petites brioches su\u00e9doises rhubarbe et cardamome ne sont qu'une autre version des brioches su\u00e9doises \u00e0 la cannelle (kanelbullar) ou de leur pendant \u00e0 la cardamome.\" width=\"1200\" height=\"1706\" srcset=\"https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/05\/Swedish-Rhubarb-Cardamom-Buns_4.jpg 1200w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/05\/Swedish-Rhubarb-Cardamom-Buns_4-211x300.jpg 211w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/05\/Swedish-Rhubarb-Cardamom-Buns_4-720x1024.jpg 720w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/05\/Swedish-Rhubarb-Cardamom-Buns_4-768x1092.jpg 768w, https:\/\/www.delscookingtwist.com\/wp-content\/uploads\/2020\/05\/Swedish-Rhubarb-Cardamom-Buns_4-1080x1536.jpg 1080w\" sizes=\"(max-width: 770px) calc(100vw - 40px), 730px\" \/><\/p>\n<p>Notez dans tous les cas qu&#8217;il est important de ne pas surcharger la p\u00e2te de garniture, au risque que cela d\u00e9borde de partout au moment du pliage de la p\u00e2te et fa\u00e7onnage des petites brioches. cuill\u00e8res \u00e0 soupe de lait ti\u00e8de avec une cuill\u00e8re \u00e0 caf\u00e9 de sucre. Laisser activer pendant environ 5 minutes avant utilisation, jusqu\u2019\u00e0 ce que la levure soit compl\u00e8tement dissoute.<\/li>\n<li id=\"instruction-step-2\">Dans un grand saladier, transf\u00e9rer le m\u00e9lange de levure. Verser le lait, le beurre fondu, et bien m\u00e9langer.<\/li>\n<li id=\"instruction-step-3\">Ajouter le reste des ingr\u00e9dients et p\u00e9trir la p\u00e2te pendant environ 15 minutes \u00e0 la main ou 10-12 minutes au robot m\u00e9nager. La p\u00e2te est pr\u00eate lorsqu&#8217;elle se d\u00e9colle des parois du bol et a une texture lisse et douce (elle ne doit plus \u00eatre collante).<\/li>\n<li id=\"instruction-step-4\">Transf\u00e9rer la p\u00e2te dans un saladier propre, couvrir avec un torchon et laisser reposer pendant 30 minutes \u00e0 temp\u00e9rature ambiante, jusqu\u2019\u00e0 ce que la p\u00e2te ait doubl\u00e9 de volume.<\/li>\n<\/ol>\n<h4>Pour la garniture :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-5\">Dans une casserole de taille moyenne plac\u00e9e sur feu moyen, faire chauffer la rhubarbe avec le sucre et le jus de citron jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une compote de rhubarbe. Retirer du feu et laisser refroidir.<\/li>\n<li id=\"instruction-step-6\">Une fois la p\u00e2te repos\u00e9e, la transf\u00e9rer sur un plan de travail propre et l\u00e9g\u00e8rement farin\u00e9. P\u00e9trir la p\u00e2te encore quelques instants pour lui redonner forme, et l\u2019\u00e9taler en un large rectangle (la p\u00e2te va continuer de lever durant tout le processus, donc mieux vaut l&#8217;avoir un peu plus fine que trop \u00e9paisse \u00e0 cette \u00e9tape).<\/li>\n<li id=\"instruction-step-7\">R\u00e9partir la compote de rhubarbe sur une moiti\u00e9 dans le sens de la longueur en une couche relativement fine en laissant une marge de 1 cm sur les c\u00f4t\u00e9s. Puis \u00e9mietter la p\u00e2te d&#8217;amande par-dessus, toujours avec parcimonie (mieux vaut du surplus de garniture plut\u00f4t que celle-ci ne d\u00e9borde de la p\u00e2te).<\/li>\n<li id=\"instruction-step-8\">Replier la moiti\u00e9 vide de la p\u00e2te par-dessus celle garnie de rhubarbe et amande.<\/li>\n<li id=\"instruction-step-9\">\u00c0 l\u2019aide d\u2019un petit couteau, d\u00e9couper des bandes de 2 cm dans le sens de la longueur.<\/li>\n<li id=\"instruction-step-10\"><strong>Pour former les brioches :<\/strong> prendre une bande par le bout et l\u2019enrouler autour du pouce et des quatre doigts (trois si vous avez de grandes mains) deux fois. Lib\u00e9rer le pouce et faire encore un tour de la boucle de haut en bas, passant entre le pouce et les quatre doigts. Regarder le tutoriel vid\u00e9o ci-dessous pour le d\u00e9tail visuel. R\u00e9p\u00e9ter l\u2019op\u00e9ration avec les bandes restantes.<\/li>\n<\/ol>\n<h4>Temps de pousse, cuisson et finitions :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-11\">D\u00e9poser les brioches sur deux plaques allant au four couvertes d\u2019un tapis en silicone ou de papier sulfuris\u00e9. Recouvrir d\u2019un torchon et laisser pousser encore 30 minutes.<\/li>\n<li id=\"instruction-step-12\">Pr\u00e9chauffer le four \u00e0 220\u00b0C. Lorsque le four est chaud, enfourner les brioches \u00e0 mi-hauteur pendant 7-8 minutes, jusqu\u2019\u00e0 ce qu\u2019elles soient bien dor\u00e9es.<\/li>\n<li id=\"instruction-step-13\"><strong>Pour le gla\u00e7age :<\/strong> faire chauffer l\u2019eau et le sucre dans une petite casserole \u00e0 feu vif, jusqu\u2019\u00e0 ce que le sucre soit compl\u00e8tement dissout. Dans un autre bol, m\u00e9langer le reste du sucre avec la cardamome.<\/li>\n<li id=\"instruction-step-14\">Retirer les brioches du four et badigeonner imm\u00e9diatement le sirop par-dessus.
