Exit les versions industrielles propos\u00e9es ci et l\u00e0, ce que l&#8217;on recherche c&#8217;est un pain croustillant \u00e0 souhait et \u00e0 la mie g\u00e9n\u00e9reuse. Heureusement, il y a quelques ann\u00e9es j&#8217;ai d\u00e9couvert le pain cocotte et ma vie a chang\u00e9. En seulement quelques minutes (voire m\u00eame quelques secondes quand on prend le pli, la preuve <a href=\"https:\/\/youtu.be\/8jMGmJ5ES4E\">en vid\u00e9o<\/a>) et sans p\u00e9trissage, on obtient un pain digne de ce nom. Le secret r\u00e9side en r\u00e9alit\u00e9 dans le temps de repos tr\u00e8s long qui permet de pallier \u00e0 l&#8217;absence de p\u00e9trissage. Je ne le r\u00e9p\u00e8terai jamais assez, ce pain est magique !<\/p>\n<p>J&#8217;aime tellement ce concept que j&#8217;ai d\u00e9j\u00e0 partag\u00e9 <a href=\"https:\/\/www.delscookingtwist.com\/fr\/le-pain-cocotte-en-5-recettes\">5 recettes de pain cocotte<\/a> sur le blog, et me voici aujourd&#8217;hui avec une nouvelle version o\u00f9 noisettes et flocons d&#8217;avoine font leur apparition dans la recette. Eh oui, seulement 4 ingr\u00e9dients et la magie op\u00e8re !<\/p>\n<p>Pour cette version, j&#8217;ai jou\u00e9 avec les proportions pour ajouter quelques ingr\u00e9dients, flocons d&#8217;avoine et noisettes en l&#8217;occurrence, sans que l&#8217;aspect final du pain n&#8217;en soit alt\u00e9r\u00e9. On y retrouve ainsi les ingr\u00e9dients suivants :<\/p>\n<ul>\n<li><strong>Farine blanche :<\/strong> je recommande ici de la farine T65, bien que l&#8217;on puisse \u00e9galement obtenir des r\u00e9sultats parfaitement satisfaisants avec de la farine T55 \u00e9galement.<\/li>\n<li><strong>Farine compl\u00e8te :<\/strong> Id\u00e9alement, je conseille de la farine de type T130 pour cette recette.<\/li>\n<li><strong>Flocons d&#8217;avoine :<\/strong> Assurez-vous d&#8217;utiliser des grains de c\u00e9r\u00e9ales entiers et en aucun cas du son d&#8217;avoine, lequel risquerait d&#8217;apporter trop d&#8217;humidit\u00e9 \u00e0 la p\u00e2te, ayant des cons\u00e9quences sur le r\u00e9sultat final du pain en termes de texture.<\/li>\n<li><strong>Noisettes :<\/strong> J&#8217;utilise ici des noisettes enti\u00e8res directement dans la p\u00e2te, mais vous pouvez parfaitement les couper en deux si vous le souhaitez. \u00c9vitez en revanche d&#8217;utiliser des noisettes concass\u00e9es en petits morceaux car leur saveur sera alors dilu\u00e9e dans le pain. On recherche du croquant ici, du vrai !<\/li>\n<li><strong>Levure instantan\u00e9e d\u00e9shydrat\u00e9e :<\/strong> L&#8217;avantage de cette levure, c&#8217;est qu&#8217;on peut l&#8217;ajouter aux ingr\u00e9dients directement sans avoir besoin de l&#8217;activer au pr\u00e9alable avec un peu de liquide (ici de l&#8217;eau).<\/li>\n<li><strong>Sel :<\/strong> Pour le go\u00fbt. La r\u00e9ponse est simple : RIEN ! Enfin presque rien, et je ne plaisante qu&#8217;\u00e0 moiti\u00e9. Pour commencer si vous n&#8217;avez jamais test\u00e9 le pain cocotte auparavant, je vous recommande d&#8217;aller <a href=\"https:\/\/youtu.be\/8jMGmJ5ES4E\">voir la vid\u00e9o du pain cocotte traditionnel<\/a> ; cela vous servira de base avant d&#8217;apporter quelques modifications pour cette version.<\/p>\n<p><strong>Commencez par<\/strong> m\u00e9langer les farines, les flocons d&#8217;avoine, le sel et l&#8217;eau \u00e0 l&#8217;aide d&#8217;une spatule dans un saladier. Incorporez ensuite les noisettes, en veillant \u00e0 bien les r\u00e9partir. On obtient une p\u00e2te tr\u00e8s collante, c&#8217;est normal. Si la p\u00e2te semble trop s\u00e8che (cela arrive selon les marques de farine), ajoutez un peu d&#8217;eau, \u00e0 raison d&#8217;une cuill\u00e8re \u00e0 soupe \u00e0 la fois, pas plus. Le miel est ici optionnel mais apporte un peu de rondeur \u00e0 votre pain gr\u00e2ce \u00e0 ses saveurs sucr\u00e9es.<\/p>\n<p><b>Ensuite, <\/b>couvrez le saladier d&#8217;un torchon et laissez reposer \u00e0 temp\u00e9rature ambiante tr\u00e8\u00e8\u00e8\u00e8s longtemps &#8211; 12 heures id\u00e9alement, ou toute une nuit. Plus le temps de repos est long, mieux c&#8217;est. Ceci \u00e9tant, on peut aussi cuire le pain au bout de 6 heures si on a pas beaucoup de temps devant soi. Choisissez de pr\u00e9f\u00e9rence une cocotte en fonte ou \u00e0 d\u00e9faut en c\u00e9ramique. L&#8217;important, c&#8217;est que la cocotte ait un couvercle !<\/p>\n<p><strong>Pr\u00e9chauffez le four \u00e0 230\u00b0C<\/strong>, en gardant \u00e0 l&#8217;esprit que le contraste de temp\u00e9rature est ce qui va aider le pain \u00e0 avoir cet aspect croustillant \u00e0 la cuisson.<\/p>\n<p>Lorsque le four est chaud, transf\u00e9rez la p\u00e2te dans la cocotte (avec ou sans papier sulfuris\u00e9) et saupoudrez d&#8217;un peu de farine et de flocons d&#8217;avoine. Enfournez le tout pendant <strong>30 minutes avec le couvercle, puis retirez le couvercle et poursuivez la cuisson encore 15 minutes<\/strong>.<\/p>\n<p>Transf\u00e9rez ensuite le pain sur une grille et laissez-le refroidir avant de le couper en tranches. d&#8217;avoine, le sel et la levure s\u00e8che. Verser l\u2019eau \u00e0 temp\u00e9rature ambiante, le miel, et m\u00e9langer jusqu\u2019\u00e0 ce que la p\u00e2te forme une sorte de boule plus ou moins \u00e9paisse, un peu collante et non r\u00e9guli\u00e8re. Incorporer les noisettes et r\u00e9partir dans toute la p\u00e2te. Couvrir le saladier avec un torchon ou du film alimentaire et laisser reposer toute une nuit (environ 12 heures) \u00e0 temp\u00e9rature ambiante.<\/li>\n<li id=\"instruction-step-2\">Le matin suivant, pr\u00e9chauffer le four \u00e0 230\u00b0C et y placer une cocotte en fonte ou en c\u00e9ramique vide avec le couvercle, jusqu\u2019\u00e0 ce que la temp\u00e9rature souhait\u00e9e soit atteinte, ou id\u00e9alement 30 minutes.*<\/li>\n<li id=\"instruction-step-3\">Lorsque le four est chaud, retirer la cocotte. En recouvrir le fond de papier sulfuris\u00e9 (attention, c\u2019est tr\u00e8s chaud!). Retirer la p\u00e2te du bol en r\u00e2clant les bords et essayer de former une sorte de boule \u00e0 la main avec si besoin un peu de farine suppl\u00e9mentaire (mais pas trop !). La d\u00e9poser dans le fond de la cocotte (la p\u00e2te doit \u00eatre encore collante et irr\u00e9guli\u00e8re, c\u2019est normal). Parsemer les flocons d&#8217;avoine restants par-dessus et enfourner avec le couvercle pendant 30 minutes. Retirer le couvercle et cuire pendant encore 10-15 minutes, jusqu\u2019\u00e0 ce que la cro\u00fbte soit bien dor\u00e9e. Transf\u00e9rer sur une grille et laisser refroidir.
