Laissez-moi vous guider \u00e9tape par \u00e9tape.<\/p>\n<p><strong>On commence avec les l\u00e9gumes.<\/strong> On y retrouve des oignons, mais aussi des carottes et du c\u00e9leri coup\u00e9s en julienne de l\u00e9umes (soit en tous petits d\u00e9s). J&#8217;ai pour ma part une nette pr\u00e9f\u00e9rence pour les lentilles noires beluga qui je trouve ont une saveur plus prononc\u00e9e et une texture ferme qui se tient bien \u00e0 la cuisson. Le secret de ce rago\u00fbt de lentilles r\u00e9side dans l&#8217;utilisation du vin rouge qui apporte la saveur des plats de viande en sauce que l&#8217;on aime tant &#8211; la viande en moins.<\/p>\n<p><strong>Pour la pur\u00e9e de pommes de terre<\/strong>, rien de compliqu\u00e9 ici. J&#8217;utilise simplement des pommes de terre \u00e9cras\u00e9es au presse-pur\u00e9e auxquelles j&#8217;ajoute un peu de beurre. Pas de lait ou de cr\u00e8me, j&#8217;aime ici garder une texture encore rustique. La cons\u00e9quence, c&#8217;est qu&#8217;il est alors <strong>tr\u00e8s facile d&#8217;adapter la recette en version 100% vegan<\/strong>. Il vous suffit ainsi de remplacer le beurre par de la margarine ou autre beurre v\u00e9g\u00e9tal ou choix. Je ne recommande pas l&#8217;huile v\u00e9g\u00e9tale n\u00e9anmoins, qui je trouve enl\u00e8ve le c\u00f4t\u00e9 onctueux et cr\u00e9meux de la pur\u00e9e de pommes de terre.<\/p>\n<h2>Que fait-on des restes ?<\/h2>\n<p>Ce hachis parmentier v\u00e9g\u00e9tarien est tr\u00e8s g\u00e9n\u00e9reux en proportions et \u00e0 moins d&#8217;avoir une arm\u00e9e d&#8217;enfants affam\u00e9s autour de vous, il est fort probable que vous vous retrouviez avec des restes. Bonne nouvelle, le hachis parmentier est un plat qui se cong\u00e8le tr\u00e8s facilement. Cela vous gagnera un temps pr\u00e9cieux pour la r\u00e9chauffer au micro-ondes.
