Ces feuilles sont ultra fines, tr\u00e8s d\u00e9licates, et l\u2019on se demande comment les manier sans qu\u2019elles se cassent. N\u2019ayez crainte, je suis l\u00e0 pour vous guider en toute simplicit\u00e9 en vous d\u00e9taillant en quelques \u00e9tapes tr\u00e8s simples comment r\u00e9aliser la recette. Pour information, le pliage d\u2019une feuille de brick ne me prend g\u00e9n\u00e9ralement pas plus que quelques secondes et j\u2019insiste, je ne suis pourtant pas une experte en la mati\u00e8re. Parmi mes associations pr\u00e9f\u00e9r\u00e9es, je vous conseille notamment <strong>le camembert, le ch\u00e8vre frais, ou encore du bleu<\/strong> pour donner un peu plus de caract\u00e8re \u00e0 l\u2019ensemble.<\/li>\n<li><strong>Des pommes<\/strong> \u2013 Libre \u00e0 vous de choisir les pommes que vous pr\u00e9f\u00e9rez, en veillant si possible \u00e0 ce qu\u2019il s\u2019agisse d\u2019une vari\u00e9t\u00e9 id\u00e9ale pour la cuisson.<\/li>\n<li><strong>Des dattes<\/strong> \u2013 J\u2019utilise ici des dates s\u00e8ches d\u00e9noyaut\u00e9es et coup\u00e9es en d\u00e9s. \u00c0 d\u00e9faut, vous pouvez les remplacer par des figues s\u00e8ches ou des pruneaux. Miel, sirop d\u2019agave ou d\u2019\u00e9rable feront aussi parfaitement l\u2019affaire, agissant en tant que sucre naturel.<\/li>\n<li><strong>Du thym frais<\/strong> \u2013 Le thym frais apporte ici une note de fra\u00eecheur qui contraste avec les saveurs sucr\u00e9es-sal\u00e9es que l\u2019on retrouve dans ces aum\u00f4ni\u00e8res. Pour cette raison, il convient de la sortir du r\u00e9frig\u00e9rateur (ou du cong\u00e9lateur si vous utilisez de la p\u00e2te filo congel\u00e9e) le plus tard possible, id\u00e9alement juste au moment de commencer la recette et apr\u00e8s avoir d\u00e9j\u00e0 rassembl\u00e9 tous les ingr\u00e9dients de la garniture.<\/p>\n<ol>\n<li>Commencez par <strong>badigeonner tr\u00e8s l\u00e9g\u00e8rement une feuille de brick d\u2019un peu de beurre fondu<\/strong> (ou d\u2019huile d\u2019olive \u00e0 d\u00e9faut). Ayez la main l\u00e9g\u00e8re ou le gras transpercera la feuille qui deviendra alors inutilisable.<\/li>\n<li><strong>Ajoutez la garniture au centre de la feuille<\/strong>, \u00e0 savoir quelques morceaux de Brie, des lamelles de pommes, des dattes et quelques brins de thym frais.<\/li>\n<li><strong>Refermez la feuille de brick en aum\u00f4ni\u00e8re<\/strong>, en rassemblant tous les c\u00f4t\u00e9s au centre en forme de petit ballotin. La p\u00e2te devrait se tenir d\u2019elle-m\u00eame, mais \u00e0 d\u00e9faut vous pouvez attacher \u00e0 l\u2019aide d\u2019une petite fic\u00e8le.<\/li>\n<li><strong>Badigeonnez tr\u00e8s l\u00e9g\u00e8rement les parois ext\u00e9rieures de beurre fondu<\/strong>\u00a0(ou huile d\u2019olive) et enfournez imm\u00e9diatement \u00e0 four chaud pendant une dizaine de minutes. Le temps de cuisson varie consid\u00e9rablement d\u2019un four \u00e0 l\u2019autre, alors gardez un \u0153il sur le temps de cuisson. Quelle qu\u2019en soit la raison (soit parce que vous n\u2019aimez pas ou bien parce que vous ne vous sentez pas encore \u00e0 l\u2019aise avec la technique), je ne vous bl\u00e2me pas. Le plus important est de se sentir confiant en cuisine, le moment venu viendra. La bonne nouvelle, c\u2019est que l\u2019on peut parfaitement r\u00e9aliser ces aum\u00f4ni\u00e8res en rempla\u00e7ant la p\u00e2te filo par\u00a0:<\/p>\n<ul>\n<li><strong>Des cr\u00eapes<\/strong> \u2013 Dans ce cas, veillez \u00e0 utiliser une p\u00e2te non sucr\u00e9e et \u00e0 bien refermer le petit ballotin d\u2019une ficelle le temps de la cuisson (que l\u2019on peut ensuite remplacer par un joli ruban \u00e0 la sortie du four). Notez par ailleurs que vous n\u2019aurez ici pas besoin de beurrer les parois de la cr\u00eape.<\/li>\n<li><strong>De la p\u00e2te feuillet\u00e9e<\/strong> \u2013 Comme pour les cr\u00eapes, attachez l\u2019aum\u00f4ni\u00e8re d\u2019une petite ficelle ou bien humidifier la zone de contact avec un peu d\u2019eau pour que le petit paquet se referme bien. Pas besoin ici de beurrer l\u2019int\u00e9rieur de la p\u00e2te feuillet\u00e9e, mais badigeonnez en revanche l\u2019ext\u00e9rieur (une fois que le petit ballotin est form\u00e9) d\u2019\u0153uf
