Dans ce cas, remplacez l&#8217;oignon par 2 ou 4 \u00e9chalotes selon leur taille.<\/li>\n<li><strong>Tomates s\u00e9ch\u00e9es<\/strong> &#8211; J&#8217;utilise des tomates s\u00e9ch\u00e9es d\u00e9j\u00e0 r\u00e9duites en pur\u00e9e \u00e0 l&#8217;achat. A d\u00e9faut d&#8217;en trouver, il vous suffira de mixer les tomates s\u00e9ch\u00e9es dans un petit h\u00e2choir \u00e9lectrique. Une autre option consiste \u00e0 remplacer les tomates s\u00e9ch\u00e9es par du concentr\u00e9 de tomates.<\/li>\n<li><strong>Vinaigre balsamique<\/strong> &#8211; Ici le vinaigre apporte de l&#8217;acidit\u00e9 \u00e0 la sauce. Il vous appartient alors d&#8217;appr\u00e9cier la sauce \u00e9paisse et cr\u00e9meuse ou bien de la d\u00e9s\u00e9paissir un peu en ajoutant un peu d&#8217;eau.<\/li>\n<li><strong>Thym frais &#8211;<\/strong> Cela peut para\u00eetre accessoire mais ajoute grandement aux saveurs de cette sauce aux champignons. Commencez toujours par porter \u00e0 \u00e9bullition l&#8217;eau et le lait ensemble avec une pinc\u00e9e de sel. Lorsque les premiers bouillons appara\u00eessent, versez en pluie la polenta tout en fouettant \u00e9nergiquement. R\u00e9duisez le feu au minimum et continuez de fouetter jusqu&#8217;\u00e0 ce que la polenta soit bien incorpor\u00e9e, environ une minute. Laissez mijoter pendant environ 30 minutes en remuant toutes les 5-7 minutes pour \u00e9viter que la polenta n&#8217;accroche au fond de la casserole. La polenta est pr\u00eate lorsqu&#8217;elle s&#8217;est \u00e9paissie, a une texture cr\u00e9meuse et se d\u00e9tache l\u00e9g\u00e8rement des parois de la casserole.<\/p>\n<p>La touche finale est non moins importante. Lorsque vous obtenez la texture souhaitez, retirez du feu et ajouter le beurre coup\u00e9 en d\u00e9s avec le parmesan r\u00e2p\u00e9 et un peu de sel. Remuez jusqu&#8217;\u00e0 ce que le beurre soit bien fondu et incorpor\u00e9, puis servez \u00e0 l&#8217;assiette en ajoutant la sauce aux champignons par-dessus.
