Placez ensuite les tomates sans dessus dessous dans le plat tandis que vous pr\u00e9parez la farce.<\/p>\n<p><strong>On passe \u00e0 la farce&#8230; vegan !<\/strong> L&#8217;important ici est de r\u00e9aliser une farce qui ait la texture et la consistence de la viande. Pour cela, commencez par mixer oignons et champignons cuits avec des noix, des pois chiches et des tomates s\u00e9ch\u00e9es dans un h\u00e2choir \u00e9lectrique, en pulsant deux ou trois fois. Notez que vous pouvez ou bien mixer vos tomates s\u00e9ch\u00e9es dans le petit h\u00e2choir \u00e9lectrique ou bien utiliser des tomates s\u00e9ch\u00e9es d\u00e9j\u00e0 r\u00e9duites en pur\u00e9e, et auquel cas vous pourrez les ajouter directement au saladier. Dans tous les cas, n&#8217;oubliez pas de saler et de poivrer. Go\u00fbtez et ajustez l&#8217;assaisonnement au besoin.<\/p>\n<p><strong>La touche finale : petits ajustements de texture.<\/strong> Je me r\u00e9p\u00e8te, mais il est important que la farce ait la consistence d&#8217;une farce classique, ni trop s\u00e8che ou granueuse, ni trop humide. Le bon \u00e9quilibre, c&#8217;est de r\u00e9ussir \u00e0 fa\u00e7onner des boulettes. Ici, les graines de lin moulues jouent le r\u00f4le de liant \u00e0 la place de l&#8217;oeuf dans des recettes non vegan. Le quinoa permet d&#8217;\u00e9quilibrer les textures, et on lui ajoutera un peu de flocons d&#8217;avoine ou de farine de pois chiches jusqu&#8217;\u00e0 trouver le bon \u00e9quilibre de texture. Garnissez ensuite les tomates \u00e9vid\u00e9es de cette farce et enfournez. Les tomates sont pr\u00eates lorsqu&#8217;elles sont juteuses et que la farce est bien dor\u00e9e.<\/p>\n<h2>Les tomates farcies vegan sont-elles <em>healthy<\/em> ?<\/h2>\n<p><strong>Oui, elles le sont.<\/strong> Notez toutefois que la recette classique de tomates farcies avec de la chair \u00e0 saucisse est \u00e9galement relativement saine, tant que la viande est de qualit\u00e9.<\/p>\n<p>En version vegan, les tomates farcies aux pois chiches, quinoa et tomates s\u00e9ch\u00e9es, sont toutefois une <strong>excellente source de prot\u00e9ines v\u00e9g\u00e9tales<\/strong> gr\u00e2ce au quinoa et aux pois chiches. Elles sont \u00e9galement r<strong>iches en fibres<\/strong>, apport\u00e9es \u00e0 la fois par les graines de lin moulues et les l\u00e9gumes.
