Il m&#8217;importe en effet de redorer le blason de ce l\u00e9gume racine somme toute assez fade lorsqu&#8217;il est pr\u00e9par\u00e9 de mani\u00e8re basique. Tout est en effet une question d&#8217;assaisonnement, et une fois que l&#8217;on joue avec ce param\u00e8tre, il y a forc\u00e9ment une ou plusieurs fa\u00e7on de pr\u00e9parer les betteraves qui devrait vous plaire.<\/p>\n<p>En fonction des recettes, les betteraves peuvent \u00eatre coup\u00e9es en d\u00e9s, r\u00e2p\u00e9es, marin\u00e9es ou bien encore press\u00e9es pour en extraire le jus et teinter les recettes de leur jolie couleur rouge. Et si malgr\u00e9 tout elles ne sont toujours pas \u00e0 votre go\u00fbt, tentez alors le <a href=\"https:\/\/www.delscookingtwist.com\/fr\/gateau-a-la-betterave-et-glacage-a-la-vanille\/\">g\u00e2teau \u00e0 la betterave et son gla\u00e7age \u00e0 la vanille<\/a>. Une recette qui va vous faire fondre de plaisir.<\/p>\n<h2>3 m\u00e9thodes simples pour cuire les betteraves<\/h2>\n<p>La cuisson relativement longue des betteraves est aussi souvent un obstacle en cuisine. Vaut-il mieux les cuire au four, \u00e0 l&#8217;eau ou encore \u00e0 la vapeur. J&#8217;ai retenu pour vous 3 m\u00e9thodes simples.<\/p>\n<p><strong>Cuisson au four. <\/strong>La m\u00e9thode la plus simple consiste \u00e0 envelopper les betteraves enti\u00e8res dans du papier aluminium et de les cuire jusqu&#8217;\u00e0 ce que leur chair soit tendre mais encore ferme. On laisse refroidir et on p\u00e8le. C&#8217;est pour moi la m\u00e9thode qui apporte le plus de saveurs aux betteraves. Portez \u00e0 \u00e9bullition puis laissez mijoter sur feu moyen jusqu&#8217;\u00e0 ce que les betteraves soit tendres. Transf\u00e9rez alors les betteraves dans un volume d&#8217;eau glac\u00e9 pour arr\u00eater la cuisson et acc\u00e9l\u00e9rer le processus de refroidissement. Pelez ensuite les betteraves.<\/p>\n<p><strong>Cuisson \u00e0 la vapeur.<\/strong> Cette m\u00e9thode est tr\u00e8s proche de la cuisson \u00e0 l&#8217;eau, \u00e0 la diff\u00e9rence que les betteraves ne sont pas immerg\u00e9es dans l&#8217;eau. L&#8217;id\u00e9e \u00e9tait de r\u00e9aliser des burgers sains et nourrissants.<\/p>\n<ul>\n<li><strong>De la betterave.<\/strong> Une fois cuites, les betteraves sont mix\u00e9es au robot, de telle sorte \u00e0 garder encore un peu de texture.<\/li>\n<li><strong>Du quinoa.<\/strong> Une excellente source de prot\u00e9ines v\u00e9g\u00e9tales.<\/li>\n<li><strong>De la feta.<\/strong> Le c\u00f4t\u00e9 sal\u00e9 du fromage contraste merveilleusement avec la betterave dans cette recette. On peut aussi remplacer la feta par du ch\u00e8vre ou du bleu \u00e9ventuellement.<\/li>\n<li><strong>Des oeufs.<\/strong> Ils permettent d&#8217;agglom\u00e9rer le tout et apportent une source de prot\u00e9ines suppl\u00e9mentaire.<\/li>\n<li><strong>Des flocons d&#8217;avoine (ou de la ch\u00e2pelure).<\/strong> Ils viennent en compl\u00e9ment de l&#8217;oeuf pour aider \u00e0 former les burgers. Pour une version sans gluten, optez pour des flocons d&#8217;avoine sans gluten.<\/li>\n<\/ul>\n<p>Les oeufs et les flocons d&#8217;avoine jouent un r\u00f4le cl\u00e9 dans cette recette. Dans certains cas, il vous faudra peut \u00eatre ajuster la quantit\u00e9 de l&#8217;un et l&#8217;autre au besoin afin d&#8217;obtenir la texture souhait\u00e9e. Ces petits pains brioch\u00e9s sont riches en beurre, moelleux \u00e0 souhait et tout doux. La remettre dans la cuve, couvrir d\u2019un torchon et laisser lever jusqu\u2019\u00e0 ce que la p\u00e2te double de volume, soit environ 2 heures.<\/li>\n<li id=\"instruction-step-4\">Fa\u00e7onner la p\u00e2te : diviser la p\u00e2te en 6 portions \u00e9gales. \u00c9taler chacune d\u2019entre elles avec la paume de la main, puis ramener chaque bord vers le centre, en r\u00e9p\u00e9tant l\u2019op\u00e9ration plusieurs fois, de telle sorte \u00e0 obtenir un petit pochon. Retourner la boule partie lisse vers le haut et rouler d\u00e9licatement sur elle-m\u00eame jusqu\u2019\u00e0 ce qu\u2019elle soit homog\u00e8ne et \u00e9lastique. Placer sur une plaque allant au four recouverte de papier sulfuris\u00e9, et r\u00e9p\u00e9ter l\u2019op\u00e9ration avec les boules de p\u00e2te restantes. Couvrir d\u2019un torchon et laisser lever pendant 1 heure minimum.<\/li>\n<li id=\"instruction-step-5\">Badigeonner les boules de p\u00e2te d\u2019oeuf battu, parsemer quelques graines de s\u00e9same noir et\/ou graines de courges, et enfourner \u00e0 190\u00b0C pendant 15-20 minutes. Transf\u00e9rer sur une grille et laisser refroidir.<\/li>\n<\/ol>\n<h4>Pour les burgers \u00e0 la betterave :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-6\">Pr\u00e9chauffer le four \u00e0 180\u00b0 C et couvrir une plaque allant au four de papier sulfuris\u00e9 ou aluminium. R\u00e9server.<\/li>\n<li id=\"instruction-step-7\">Faire cuire le quinoa selon les instructions du paquet.<\/li>\n<li id=\"instruction-step-8\">Placer les betteraves coup\u00e9es en d\u00e9s sur la plaque, verser un filet d\u2019huile d\u2019olive, puis laisser r\u00f4tir au four pendant 30 minutes. Laisser refroidir.<\/li>\n<li id=\"instruction-step-9\">Transf\u00e9rer les betteraves dans un robot mixeur et pulser 2 ou 3 fois, de telle sorte \u00e0 garder un peu de texture (les betteraves ne doivent pas \u00eatre compl\u00e8tement r\u00e9duites en pur\u00e9e).<\/li>\n<li id=\"instruction-step-10\">Transf\u00e9rer les betteraves dans un saladier, ajouter les autres ingr\u00e9dients et bien m\u00e9langer.
