Une histoire de textures sans doute (car j&#8217;aime la saveur des fruits par ailleurs) auquel s&#8217;ajoute peut \u00eatre aussi un l\u00e9ger blocage que je ne m&#8217;explique pas. Ma petite astuce pour \u00eatre s\u00fbre d&#8217;en manger quand m\u00eame : les glisser dans des desserts ! On reprend ainsi le fruit entier, la poire, et on l&#8217;embellit avec quelques artifices naturels, un sirop l\u00e9ger pour r\u00e9hausser quelques notes sucr\u00e9es sans gacher la saveur du fruit. Pas de sucre raffin\u00e9 dans ce sirop, juste un peu d&#8217;eau et de miel, que l&#8217;on peut remplacer par du sirop d&#8217;agave ou d&#8217;\u00e9rable pour une version 100% vegan.<\/p>\n<p>Les quantit\u00e9s de miel (agave ou \u00e9rable) pr\u00e9conis\u00e9es dans la recette sont purement indicative. Pour ma part, j&#8217;ai fait le choix de couper avec de l&#8217;eau pour r\u00e9aliser le sirop dans un souci d&#8217;avoir la main l\u00e9g\u00e8re sur le sucre. Je ne le dirai jamais assez : prenez soin de moudre les graines de cardamome au dernier moment. Une fois moulues, la cardamome s&#8217;oxyde en effet tr\u00e8s rapidement et perdent de leur saveur. Laissez la cardamome infuser dans le sirop avant de verser celui-ci sur les poires, en plusieurs fois pendant la cuisson et l\u00e0 encore en fonction de vos go\u00fbts personnels.<\/p>\n<p>Et maintenant parlons un peu de la partie que je pr\u00e9f\u00e8re sans aucune surprise : le granola de quinoa que l&#8217;on pars\u00e8me par dessus les poires. Le r\u00e9sultat ? Un contraste de textures absolument magique avec des poires ultra fondantes d&#8217;un c\u00f4t\u00e9 et un granola croustillant \u00e0 souhait gr\u00e2ce au quinoa souffl\u00e9. Et pour rendre l&#8217;ensemble encore plus gourmand, servez vos poires sur un lit de porridge et vous avez l\u00e0 une excellente id\u00e9e de brunch. R\u00e9server.<\/li>\n<li id=\"instruction-step-5\">Dans une petite casserole, faire chauffer le miel ou sirop d&#8217;\u00e9rable\/agave jusqu&#8217;aux premiers fr\u00e9missements. Incorporer la cardamome fra\u00eechement moulue.<\/li>\n<li id=\"instruction-step-6\">Peler, \u00e9p\u00e9piner et couper les poires en deux dans le sens de la longueur, puis les disposer sur la plaque de cuisson.<\/li>\n<li id=\"instruction-step-7\">Verser la moiti\u00e9 du sirop par dessus les poires et enfourner pendant 30-40 minutes, arrosant les poires avec un peu plus de sirop de temps \u00e0 autre. Les poires doivent \u00eatre bien tendres et commencer \u00e0 caram\u00e9liser l\u00e9g\u00e8rement sur les bords.<\/li>\n<li id=\"instruction-step-8\">Servir les poires avec le granola de quinoa et ajouter quelques p\u00e9tales de roses. Faire fondre une cuill\u00e8re \u00e0 soupe d&#8217;huile de coco dans une cocotte en fonte ou \u00e9quivalent, en remuant sans cesse pour que le quinoa saute.
