Par le pass\u00e9 j&#8217;ai eu l&#8217;occasion d&#8217;en d\u00e9guster de d\u00e9licieux mais aussi de tr\u00e8s mauvais (exit les pains d&#8217;\u00e9pices industriels, par piti\u00e9 !). Il existe par ailleurs de tr\u00e8s nombreuses variations de pains d&#8217;\u00e9pices, avec des couleurs, textures et saveurs diff\u00e9rentes de l&#8217;un \u00e0 l&#8217;autre, de telle sorte que cela peut \u00eatre difficile de s&#8217;y retrouver. Certains se rapprochent de pains noirs et denses en texture, sans \u00eatre trop sucr\u00e9, tandis que d&#8217;autres sont plut\u00f4t moelleux et doux, se rapprochant de la texture et saveur d&#8217;un g\u00e2teau.<\/p>\n<p>\u00c0 cela s&#8217;ajoute le subtile \u00e9quilibre \u00e0 trouver entre les \u00e9pices et le choix de farines. Tandis que la plupart des versions am\u00e9ricaines sont r\u00e9alis\u00e9es \u00e0 base de farine T45 (farine dite &#8220;classique&#8221;), les pains d&#8217;\u00e9pices fran\u00e7ais allient souvent deux types de farines, la farine T45 et la farine de seigle le plus souvent, parfois remplac\u00e9e par de la farine compl\u00e8te. Selon la version retenue on obtiendra bien s\u00fbr des r\u00e9sultats diff\u00e9rents, certains pains d&#8217;\u00e9pices se rapprochant davantage d&#8217;un dessert \u00e0 appr\u00e9cier \u00e0 l&#8217;heure du go\u00fbter tandis que d&#8217;autres seront mis en valeur lorsqu&#8217;ils sont servis en guise de toasts pour des petites garnitures sal\u00e9es \u00e0 l&#8217;ap\u00e9ritif. J&#8217;ai ainsi partag\u00e9 quelques versions diff\u00e9rentes avec vous auparavant. Pour vous aider \u00e0 vous y retrouver, il y a tout d&#8217;abord le\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2017\/12\/15\/vegan-caramel-gingerbread-naked-cake\/\">Gingerbread Naked Cake au caramel<\/a>\u00a0en version vegan (pas d&#8217;oeufs, pas de produits laitiers) et dont les g\u00e2teaux du naked cake peuvent s&#8217;appr\u00e9cier individuellement. Vient ensuite le\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2017\/01\/20\/french-spice-cake-pain-depices\/\">pain d&#8217;\u00e9pices au miel<\/a>\u00a0classique. De couleur ambre et \u00e0 la texture dense, celui-ci est id\u00e9al \u00e0 l&#8217;ap\u00e9ritif servi en toasts comme ici avec ce\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2016\/12\/17\/star-shaped-gingerbread-topped-with-foie-gras-and-a-pear-vanilla-confit\/\">pain d&#8217;\u00e9pices \u00e9toil\u00e9 au foie gras et au confit de poires vanill\u00e9es<\/a>.<\/p>\n<p>Et me voici d\u00e9sormais avec une nouvelle version. Cette fois-ci, mon d\u00e9fi consistait \u00e0 trouver la texture \u00e0 la fois parfaitement tendre et douce. Pour se faire, j&#8217;ai jou\u00e9 avec les ingr\u00e9dients liquides, le lait et le beurre fondu principalement, auxquels j&#8217;ai ajout\u00e9 du caf\u00e9 fort. Dans ce cas, je vous recommande alors de remplacer la m\u00eame quantit\u00e9 de liquide par un autre liquide. Du th\u00e9 fonctionnerait, mais je vous conseille d&#8217;opter tout simplement pour du lait, ce qui fait que la quantit\u00e9 totale de lait dans la recette sera de 150 ml au lieu de 120). Dans tous les cas, assurez-vous que le m\u00e9lange de lait-caf\u00e9 ou de lait tout court soit bien chaud, ce qui facilitera son incorporation dans la p\u00e2te, notamment si votre miel n&#8217;est pas tr\u00e8s homog\u00e8ne voir un peu \u00e9pais. On recherche ici une p\u00e2te liquide et homog\u00e8ne.<\/p>\n<p>\u00c0 ce moment l\u00e0 de la recette, placez ensuite la pr\u00e9paration dans le r\u00e9frig\u00e9rateur, sachant que plus elle y restera longtemps plus le pain d&#8217;\u00e9pices d\u00e9veloppera ses ar\u00f4mes et son moelleux. Id\u00e9alement je vous recommande de le laisser reposer au frais pendant une heure, mais faute de temps 15-20 minutes feront l&#8217;affaire. Si cette derni\u00e8re option vous tente, assuez-vous de revenir d&#8217;ici quelques jours par ici pour une petite id\u00e9e recette qui devrait vous plaire.<\/p>\n<p>Avant de vous laisser, une petite astuce pour conserver le moelleux du pain d&#8217;\u00e9pices consiste \u00e0 simplement l&#8217;envelopper dans du film alimentaire et de le conserver \u00e0 temp\u00e9rature ambiante. Il conserve ainsi son moelleux pendant plusieurs jours (si vous ne le d\u00e9vorez pas tout entier avant cela).<\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-28107 size-full\"
