Qu&#8217;elle soit r\u00e9alis\u00e9e en version sucr\u00e9e ou en version sal\u00e9e, la tarte tatin peut intimider au premier abord, de peur de ne pas r\u00e9ussir \u00e0 la retourner au moment de la servir. Mais une fois que vous connaissez la technique et d\u00e8s lors que vous avez les bons ustensiles \u00e0 disposition, vous voil\u00e0 pr\u00eat pour devenir expert en la mati\u00e8re !<\/p>\n<h5>Utiliser la bonne po\u00eale<\/h5>\n<p>J&#8217;ai r\u00e9alis\u00e9 diverses tartes tatin par le pass\u00e9, utilisant des po\u00eales ou moules \u00e0 g\u00e2teaux diff\u00e9rents, et parmi tous ceux que j&#8217;ai pu tester, la po\u00eale en fonte est de loin ma pr\u00e9f\u00e9r\u00e9e. En particulier ici pour cette version sal\u00e9e avec des oignons caram\u00e9lis\u00e9s, le fond \u00e9pais \u00e9vite que la chaleur ne monte trop vite et que les oignons ne collent alors \u00e0 la po\u00eale au moment de la caram\u00e9lisation. J&#8217;utilise ici une po\u00eale en fonte <a href=\"https:\/\/rstyle.me\/~aFk4a\">Cast Iron Iron Skillet<\/a> de 25 cm de diam\u00e8tre, mais vous pouvez \u00e9galement en utiliser une de 30 cm de diam\u00e8tre \u00e0 d\u00e9faut. Les oignons, le ch\u00e8vre frais et le vinaigre balsamique sont les stars de la recette, \u00e0 laquelle s&#8217;ajoute bien s\u00fbr la p\u00e2te. Pour cette derni\u00e8re, vous pouvez ou bien opter pour une p\u00e2te feuillet\u00e9e comme j&#8217;ai choisi de le faire ici ou bien pour une p\u00e2te bris\u00e9e, selon vos go\u00fbts personnels. La premi\u00e8re sera plus riche en beurre et a\u00e9r\u00e9e tandis que la p\u00e2te bris\u00e9e sera plus \u00e9paisse et dense.<\/p>\n<h5>Oignons caram\u00e9lis\u00e9s<\/h5>\n<p>Lorsque vous r\u00e9alisez une tarte tatin, il est important de pouvoir se repr\u00e9senter quel sera le r\u00e9sultat une fois qu&#8217;elle sera retourn\u00e9e sur le plat de service. Cela aide \u00e0 savoir comment disposer les ingr\u00e9dients, ici en l&#8217;occurrence, les oignons. On commence par faire fondre le beurre dans la po\u00eale, puis on y place alors les quartiers d&#8217;oignons en partant du centre en forme de fleur. N&#8217;oubliez pas l&#8217;assaisonnement de sel et de poivre, ainsi que le romarin.<\/p>\n<h5>Ch\u00e8vre frais ou non, telle est la question.<\/h5>\n<p>Une fois que vos oignons sont bien caram\u00e9lis\u00e9s, vous pouvez alors recouvrir de la p\u00e2te directement et enfourner, ou bien comme moi parsemer le ch\u00e8vre frais par dessus les oignons avant de placer le disque de p\u00e2te par dessus. Je suis personnellement tr\u00e8s adepte de ce m\u00e9lange de textures et de saveurs sucr\u00e9es-sal\u00e9es apport\u00e9 par le combo ch\u00e8vre et oignons caram\u00e9lis\u00e9s. On commence par couvrir de la p\u00e2te feuillet\u00e9e ou bris\u00e9e, en faisant quelques incisions pour laisser l&#8217;air s&#8217;\u00e9chapper au moment de la cuisson, et on enfourne le tout jusqu&#8217;\u00e0 ce que la p\u00e2te prenne une belle couleur dor\u00e9e, indication qu&#8217;elle est cuite. \u00c0 la sortie du four, laissez reposer dans le plat quelques minutes, puis \u00e0 l&#8217;aide de maniques, inverser la po\u00eale sur un plat \u00e0 service en y allant avec assurance. Et voil\u00e0 c&#8217;est pr\u00eat. Faire deux petites incisions au couteau sur le dessus de la p\u00e2te.<\/li>\n<li id=\"instruction-step-6\">Enfourner pendant 20 \u00e0 25 minutes, jusqu&#8217;\u00e0 ce que la p\u00e2te ait bien dor\u00e9 et lev\u00e9. \u00c0 la sortie du four, laisser reposer 5 minutes \u00e0 temp\u00e9rature ambiante, puis couvrir avec une assiette plus grande et inverser la po\u00eale d\u00e9licatement.
