Jusqu&#8217;\u00e0 pr\u00e9sent, vous pouvez retrouver sur le blog quelques autres classiques tels les\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2018\/09\/29\/chocolate-eclairs-eclairs-au-chocolat\/\">\u00e9clairs au chocolat<\/a>\u00a0(en version facile), la\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/fr\/2018\/02\/28\/french-brioche-a-tete\/\">Brioche \u00e0 T\u00eate<\/a>, les\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2018\/08\/31\/caneles-de-bordeaux\/\">Cannel\u00e9s de Bordeaux<\/a>, les\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2018\/06\/29\/easy-french-pains-aux-raisins\/\">pains aux raisins<\/a>, ou encore la\u00a0<a href=\"https:\/\/www.delscookingtwist.com\/2018\/04\/25\/lemon-meringue-pie\/\">tarte au citron meringu\u00e9e<\/a>\u00a0(pr\u00e9par\u00e9e \u00e0 la fran\u00e7aise et non pas selon la m\u00e9thode am\u00e9ricaine). J&#8217;ai encore quelques id\u00e9es de recettes de p\u00e2tisserie fran\u00e7aise en r\u00e9serve jusqu&#8217;\u00e0 la fin de l&#8217;ann\u00e9e, alors gardez un oeil ouvert.<\/p>\n<p>Mais pour l&#8217;heure, revenons sur un grand classique fran\u00e7ais connu de tous, aussi bien en France qu&#8217;\u00e0 l&#8217;\u00e9tranger, et que l&#8217;on consomme le plus souvent au restaurant plut\u00f4t qu&#8217;\u00e0 la maison : la tarte tatin aux pommes. Pour \u00eatre tout \u00e0 fait honn\u00eate avec vous, je dois vous avouer ici que j&#8217;ai failli pr\u00e9parer une autre recette \u00e0 la place, la Tarte Normande. L&#8217;une comme l&#8217;autre sont tr\u00e8s connues en France, mais la seconde a l&#8217;avantage d&#8217;\u00eatre beaucoup plus simple \u00e0 pr\u00e9parer puisqu&#8217;il n&#8217;est pas besoin de l&#8217;inverser au moment de servir, au risque de la d\u00e9truire au dernier moment. Ces derniers jours ont en effet \u00e9t\u00e9 tr\u00e8s charg\u00e9s de mon c\u00f4t\u00e9 avec d&#8217;inombrables heures pass\u00e9es \u00e0 cuisiner, p\u00e2tisser, styliser et photographier mes plats, r\u00e9diger les recettes, \u00e9diter les photos, et j&#8217;en passe&#8230; tout cela en pr\u00e9vision de mes vacances, car je m&#8217;envole dans quelques jours pour une destination exotique, chaude, ensoleill\u00e9e&#8230; et pourtant toujours aux US. Une petite id\u00e9e ? Ne manquez pas de me suivre sur Insta pour quelques stories sur le sujet prochainement. Ceci \u00e9tant, le blog lui ne prend pas de vacances et en cette p\u00e9riode charg\u00e9e de l&#8217;ann\u00e9e, je me fais un plaisir de vous concocter de nouvelles recettes de saison \u00e0 la m\u00eame fr\u00e9quence que d&#8217;ordinaire.<\/p>\n<p>Pour en revenir au dilemme de la Tarte Tatin versus Tarte Normande, j&#8217;y ai r\u00e9fl\u00e9chi \u00e0 deux fois et, laissant mon appr\u00e9hension de c\u00f4t\u00e9, en ai d\u00e9duit que clairement la Tarte Tatin \u00e9tait le grand classique fran\u00e7ais depuis la France comme \u00e0 l&#8217;\u00e9tranger et qu&#8217;il me fallait commencer par l\u00e0 (je n&#8217;abandonne pas l&#8217;id\u00e9e de la tarte Normande que j&#8217;aime \u00e9galement beaucoup). J&#8217;ai pour ma part une po\u00eale en fonte que j&#8217;utilise sans cesse en cuisine en sal\u00e9 comme en sucr\u00e9 et qui avec ma cocotte en fonte sont pour s\u00fbr mes deux ustensiles indispensables. Dans cette po\u00eale en fonte, vous allez commencer par pr\u00e9parer votre caramel, en laissant le sucre se dissoudre dans un premier temps avant d&#8217;y ajouter le beurre pommade. Lorsque le m\u00e9lange devient mousseux, ajoutez alors le calvados (si vous en avez, sinon passez simplement \u00e0 l&#8217;\u00e9tape suivante).<\/p>\n<p>Disposez alors vos pommes joliement sur le caramel, en gardant en t\u00eate que le motif sera invers\u00e9, et laissez mijoter pendant 10 mintes, jusqu&#8217;\u00e0 ce que le caramel en dessous brunisse et commence \u00e0 bouillonner l\u00e9g\u00e8rement sur les c\u00f4t\u00e9s. Vous \u00eates alors \u00e0 mi-chemin. Il vous faut maintenant simplement recouvrir de la p\u00e2te, que l&#8217;on aura d\u00e9coup\u00e9e l\u00e9g\u00e8rement plus large que la po\u00eale pour pouvoir en rabattre les bords \u00e0 l&#8217;int\u00e9rieur du plat. J&#8217;ai opt\u00e9 pour une p\u00e2te bris\u00e9e maison, mais vous pouvez \u00e9galement utiliser une p\u00e2te feuillet\u00e9e toute pr\u00eate pour aller plus vite. Retirez dans un premier temps la tarte du four et laissez-la reposer sur votre plan de travail pendant 5 minutes. N&#8217;attendez pas trop longtemps en revanche, au risque que le caramel ne colle alors au fond. Placez ensuite une assiette l\u00e9g\u00e8rement plus grande que le plat par dessus et, muni de maniques r\u00e9sistantes \u00e0 la chaleur, inversez rapidement le plat de telle sorte que la tarte Tatin soit debout sur le plat de service. Si la tarte a un peu perdu de sa forme au moment de la retourner, reformez-la alors imm\u00e9diatement \u00e0 la main. Le caramel servira de colle et r\u00e9parera imm\u00e9diatement quelques petites imperfections.<\/p>\n<p>Servez la tarte encore chaude ou ti\u00e8de, avec un peu de cr\u00e8me fra\u00eeche ou de la glace vanille. Ajouter le beurre coup\u00e9 en morceaux en effritant le m\u00e9lange du bout des doigts, puis r\u00e9partir le sucre. Verser juste assez d&#8217;eau (une cuill\u00e8re \u00e0 la fois) pour amalgamer l&#8217;ensemble, puis travailler rapidement la p\u00e2te jusqu&#8217;\u00e0 ce qu&#8217;elle forme une boule lisse et homog\u00e8ne. Aplatir l\u00e9g\u00e8rement la boule de p\u00e2te, enveloper de film alimentaire et placer au r\u00e9frig\u00e9rateur pendant 30 minutes.<\/li>\n<\/ol>\n<h4>Pour la garniture de pommes :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-2\">Pr\u00e9chauffer le four \u00e0 180\u00b0C et beurrer une po\u00eale en fonte de 23 cm ou un moule en m\u00e9tal r\u00e9sistant \u00e0 la chaleur. R\u00e9server.<\/li>\n<li id=\"instruction-step-3\">Peler, \u00e9p\u00e9piner et couper les pommes en quartiers. Les placer dans un plat creux et y presser le jus d&#8217;1\/2 citron par dessus pour \u00e9viter qu&#8217;elles ne s&#8217;oxident.<\/li>\n<li id=\"instruction-step-4\">Verser le sucre de mani\u00e8re homog\u00e8ne dans la po\u00eale en fonte et laisser dissoudre sur feu doux, sans remuer (\u00e0 d\u00e9faut, secouer l\u00e9g\u00e8rement la po\u00eale) jusqu&#8217;\u00e0 ce qu&#8217;il prenne une belle couleur dor\u00e9e. Lorsque le caramel est dor\u00e9, r\u00e9partir le beurre coup\u00e9 en d\u00e9s. Lorsqu&#8217;il devient mousseux, ajouter le calvados si utilisation et laisser cuire pendant encore 2 minutes.<\/li>\n<li id=\"instruction-step-5\">Disposer les quartiers de pommes dans le fond de telle sorte qu&#8217;elles forment un joli dessin, en gardant en m\u00e9moire que la tarte sera invers\u00e9e, et laisser mijoter pendant 10 minutes sur feu doux.<\/li>\n<li id=\"instruction-step-6\">Pendant ce temps, \u00e9taler la p\u00e2te en un disque de 25 cm de diam\u00e8tre. Recouvrir les pommes du disque de p\u00e2te en rabattant bien les bords \u00e0 l&#8217;int\u00e9rieur du moule, piquer le dessus avec une lame de couteau et enfourner pendant 30 minutes ou jusqu&#8217;\u00e0 ce que la tarte soit bien dor\u00e9e.<\/li>\n<li id=\"instruction-step-7\">\u00c0 la sortie du four, laisser reposer pendant 5 minutes \u00e0 temp\u00e9rature ambiante. Placer une assiette l\u00e9g\u00e8rement plus large que la po\u00eale ou le moule par dessus et retourner d\u00e9licatement en utilisant une manique pour \u00e9viter de se br\u00fbler.
