Apr\u00e8s plusieurs essais, je suis enfin parvenue \u00e0 obtenir le go\u00fbt et la texture id\u00e9ale pour un cookie \u00e0 la fois sain et vegan, tout en \u00e9tant gourmand. Je viens d&#8217;ailleurs tout juste de m&#8217;en pr\u00e9parer une fourn\u00e9e pour la semaine et cela m&#8217;a pris 20 minutes au total, cuisson comprise. Notez l&#8217;absence d&#8217;oeufs, beurre ou autre produit laitier, la recette \u00e9tant ici enti\u00e8rement vegan, faible en cholest\u00e9rol et avec un indice glyc\u00e9mique bas. L&#8217;huile de coco peut aussi \u00eatre remplac\u00e9e par une autre huile v\u00e9g\u00e9tale de votre choix, de pr\u00e9f\u00e9rence neutre en go\u00fbt (huile de tournesol, huile de colza&#8230;). Concernant les flocons d&#8217;avoine en revanche, assurez-vous d&#8217;utiliser des flocons d&#8217;avoine labell\u00e9s &#8220;quick oats&#8221; qui sont plus petits, plus fins, et qui aideront \u00e0 maintenir la forme des cookies \u00e0 l&#8217;inverse de flocons d&#8217;avoine entiers qui donneraient une texture plus fragile. \u00c0 d\u00e9faut d&#8217;en trouver en magasin, pulsez simplement des flocons d&#8217;avoine entiers plusieurs fois au robot mixeur jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture beaucoup plus fine mais pas non plus farineuse.<\/p>\n<p>\u00c0 l&#8217;origine, j&#8217;avais r\u00e9alis\u00e9 cette recette sans sucre ajout\u00e9, ne jurant que par le sucre naturellement apport\u00e9 par les bananes m\u00fbres. Or le r\u00e9sultat final ne m&#8217;a pas convaincu. Trop fade, trop sec&#8230; ce qui fait que je suis revenue sur ma d\u00e9cision initiale en ajoutant un peu de sirop d&#8217;\u00e9rable ou \u00e0 d\u00e9faut de sirop d&#8217;agave. Si vous n&#8217;\u00eates pas vegan, vous pouvez \u00e9galement utiliser du miel. Parce que c&#8217;est l&#8217;automne, j&#8217;ai opt\u00e9 pour mon combo pr\u00e9f\u00e9r\u00e9 de la saison que je glisse un peu partout dans des salades comme dans des cookies : des graines de courge et des cranberries (n&#8217;en d\u00e9plaise \u00e0 David, mon mari, qui refuse de voir des fruits dans ses cookies). Les cranberries apportent une douceur compl\u00e9mentaire \u00e0 l&#8217;ensemble, avec une petite pointe d&#8217;acidit\u00e9 tr\u00e8s agr\u00e9able. Mais o\u00f9 est le chocolat ? Pour les adeptes, rassurez-vous, cette recette peut aussi se r\u00e9aliser avec des mini p\u00e9pites de chocolat noir pour remplacer cranberries et graines de courge. On peut m\u00eame imaginer un petit filet de chocolat suppl\u00e9mentaire sur le dessus.
