C&#8217;est une recette d&#8217;une simplicit\u00e9 enfantine \u00e0 adapter autant qu&#8217;il vous plaira au gr\u00e9 de vos envies, jouant avec les accompagnements et garnitures. Servies comme ici avec de la burrata \u00e9miett\u00e9e et un filet de pesto, ces pommes de terre \u00e9cras\u00e9es constituent un plat sophistiqu\u00e9 et r\u00e9confortant \u00e0 la fois. Pour encore plus de go\u00fbt j&#8217;aime y ajouter quelques tranches de prosciutto.<\/p>\n\n\n\n<p>Croyez-le ou non mais d&#8217;ordinaire, je ne suis pas une tr\u00e8s grande fan de pommes de terre, que je trouve la plupart du temps bien trop banales. Il y a quelques mois, je vous ai partag\u00e9 ma recette de <a href=\"https:\/\/www.delscookingtwist.com\/2018\/04\/13\/garlic-herb-potato-wedges\/\">frites au four aux herbes de provence<\/a>, pr\u00e9par\u00e9ee avec des quartiers g\u00e9n\u00e9reux de pommes de terre assaisonn\u00e9s d&#8217;huile d&#8217;olive, d&#8217;ail et de quelques herbes. Si vous ne les avez pas encore test\u00e9es, n&#8217;attendez plus !<\/p>\n\n\n\n<p>Me revoici aujourd&#8217;hui avec une recette de pommes de terre compl\u00e8tement diff\u00e9rente, si ce n&#8217;est que cette fois-ci encore, elles sont pr\u00e9par\u00e9es au four. Enfin, pas exactement. Elles sont en r\u00e9alit\u00e9 cuites deux fois, et c&#8217;est pr\u00e9cis\u00e9ment ce qui fait la particularit\u00e9 de cette recette. Dans un premier temps elles sont tout simplement cuites dans un grand volume d&#8217;eau sal\u00e9, puis dans une deuxi\u00e8me temps dor\u00e9es au four apr\u00e8s avoir \u00e9t\u00e9 \u00e9cras\u00e9es avec le fond d&#8217;un verre. Si vous utilisez des pommes de terre bio ou venant d&#8217;une ferme qui ont encore un peu de terre autour, assurez-vous de bien les laver pr\u00e9alablement mais sans pour autant en retirer la peau. C&#8217;est cette derni\u00e8re qui aidera \u00e0 leur donner leur aspect croustillant au four et c&#8217;est pourquoi on tient \u00e0 la conserver. Une fois que les pommes de terre sont \u00e9cras\u00e9es et d\u00e9pos\u00e9es sur une plaque allant au four, assaisonnez-les avec un g\u00e9n\u00e9reux filet d&#8217;huile d&#8217;olive (notez que la quantit\u00e9 d&#8217;huile d&#8217;olive indiqu\u00e9e dans les instructions de la recette est purement indicative).<\/p>\n\n\n\n<p>\u00c0 cette \u00e9tape, salez, poivrez (je recommande toujours du sel et du poivre du moulin de la plus haute qualit\u00e9), puis parsemez d&#8217;ail \u00e9minc\u00e9. Pour donner aux pommes de terre leur petit aspect citronn\u00e9, je r\u00e2pe le zeste du citron, avant de couper les citrons en segments et de les ajouter aux pommes de terre sur la plaque de cuisson afin de les faire r\u00f4tir. La peau \u00e9clate un peu, c&#8217;est normal.<\/li>\n<li id=\"instruction-step-3\">Arroser g\u00e9n\u00e9reusement d&#8217;huile d&#8217;olive, saler et poivrer. Ajouter les brindilles de thym, l&#8217;ail \u00e9minc\u00e9, puis zester le citron par dessus les pommes de terre avant d&#8217;ajouter les quartiers de citron sur la plaque aux c\u00f4t\u00e9s des pommes de terre.<\/li>\n<li id=\"instruction-step-4\">Enfourner pendant 20 minutes, puis retourner alors les pommes de terre et poursuivr la cuisson encore 20-30 minutes, jusqu&#8217;\u00e0 ce qu&#8217;elles soient bien dor\u00e9es et croustillantes.<\/li>\n<li id=\"instruction-step-5\">Servir aussit\u00f4t sur un plat ou \u00e0 l&#8217;assiette, en pressant le jus des citrons r\u00f4tis au four par dessus les pommes de terre.
