C&#8217;est d&#8217;ailleurs l&#8217;un de mes plats asiatiques pr\u00e9f\u00e9r\u00e9s et sans aucun doute celui que je commande le plus souvent lorsque je me fais un restaurant Thai. J&#8217;aime ses saveurs aigres-douces, ses l\u00e9gumes saut\u00e9s encore croquants, mais aussi la petite touche de cacahu\u00e8tes \u00e9cras\u00e9es grossi\u00e8rement que l&#8217;on pars\u00e8me par dessus au moment de servir. R\u00e9alis\u00e9es \u00e0 base de farine de riz et d&#8217;eau, ces nouilles sont naturellement sans gluten et aussi un peu plus d\u00e9licates \u00e0 manier que leurs amies r\u00e9alis\u00e9es \u00e0 base de bl\u00e9. C&#8217;est pourquoi il est important de les manier avec pr\u00e9caution pendant la cuisson, en les remuant avec une fourchette d\u00e8s immersion dans un grand volume d&#8217;eau et \u00e0 mi-cuisson pour \u00e9viter qu&#8217;elles ne collent les unes aux autres ou bien encore au fond de la casserole. Vous pouvez aussi les m\u00e9langer avec un peu d&#8217;huile apr\u00e8s les avoir \u00e9goutter et pendant qu&#8217;elles sont mises de c\u00f4t\u00e9 lors de la cuisson des l\u00e9gumes saut\u00e9s.<\/p>\n<p><strong>Le choix des l\u00e9gumes<\/strong> est quant-\u00e0 lui on ne peut plus facile pour un Pad Thai. Vous pouvez utiliser tout l\u00e9gume qui se pr\u00eate bien \u00e0 \u00eatre saut\u00e9 \u00e0 la po\u00eale, avisant en fonction de ce que vous avez d\u00e9j\u00e0 chez vous. Vous ne retrouverez donc pas de sauce de poisson (ou &#8220;fish sauce&#8221; en anglais) ni de tamarind, l&#8217;un et l&#8217;autre n&#8217;\u00e9tant pas toujours faciles \u00e0 trouver en supermarch\u00e9, sans oublier le fait que la sauce de poisson n&#8217;est pas vegan. Ici donc, on opte simplement pour de la <strong>sauce soja et du sirop d&#8217;\u00e9rable<\/strong> pour \u00e9quilibrer les saveurs et cela fonctionne \u00e0 merveille pour un Pad Thai express.<\/p>\n<h2>Autres l\u00e9gumes possibles dans ce Pad Thai :<\/h2>\n<ul>\n<li>des champignons<\/li>\n<li>des haricots verts ou des pois gourmands<\/li>\n<li>des courgettes<\/li>\n<li>du chou chinois (bok choy)<\/li>\n<li>des asperges<\/li>\n<\/ul>\n<p><strong>La touche finale<\/strong> est apport\u00e9e par les cacahu\u00e8tes concass\u00e9es grossi\u00e8rement (je les pulse deux ou trois fois au robot mixeur) que l&#8217;on pars\u00e8me par dessus le Pad Thai avec quelques feuilles de coriandre fra\u00eeche. Certains aiment aussi ajouter un peu de citron vert fra\u00eechement press\u00e9 par dessus le plat au moment de servir. Et voil\u00e0, votre Pad Thai fait maison, sain et color\u00e9, est fin pr\u00eat \u00e0 \u00eatre d\u00e9gust\u00e9.<\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-18484 size-full\"
