Rassurez-vous, il existe beaucoup de fausses rumeurs autour de cette petite p\u00e2tisserie qui est pourtant bien plus facile \u00e0 r\u00e9ussir qu&#8217;il n&#8217;y para\u00eet. Pas besoin de vous rendre chez votre p\u00e2tissier sp\u00e9cialis\u00e9, vous pouvez parfaitement r\u00e9aliser vos cannel\u00e9s maison et obtenir un r\u00e9sultat identique. On rel\u00e8ve le pari ?<\/p>\n<p>Avant d&#8217;aller plus loin et de partager avec vous mes trucs et astuces pour r\u00e9ussir vos cannel\u00e9s, arr\u00eatons-nous un instant pour apprendre (ou r\u00e9-apprendre) \u00e0 conna\u00eetre cette sp\u00e9cialit\u00e9 bordelaise. Plus ou moins \u00e0 la m\u00eame \u00e9poque, on retrouve d&#8217;autres mentions de ces petites p\u00e2tisseries sous le nom de &#8220;canaule&#8221; dans la r\u00e9gion de Limoge, ce qui s\u00e8me un peu la confusion.<\/p>\n<p>Que leur origine soit l\u00e9gende ou r\u00e9alit\u00e9, les cannel\u00e9s semblent dans tous les cas avoir disparu pendant relativement longtemps pour \u00eatre red\u00e9couverts bien plus tard puisque c&#8217;est seulement \u00e0 la fin du XX\u00e8me si\u00e8cle qu&#8217;ils font leur r\u00e9apparition. C&#8217;est en effet dans les ann\u00e9es 1980 que l&#8217;on red\u00e9couvre et popularise cette petite p\u00e2tisserie \u00e0 base d&#8217;oeuf \u00e0 laquelle on ajoute de la vanille et du rhum. Certains \u00e9crivent ainsi le mot cannel\u00e9 avec deux &#8220;n&#8221; tandis que d&#8217;autres se contentent de l&#8217;\u00e9crire avec un seul &#8220;n&#8221;. Simple faute d&#8217;orthographe peut \u00eatre ? En r\u00e9alit\u00e9, c&#8217;est un peu plus compliqu\u00e9 (et je vous conseille de ne pas lire ce qui va suivre apr\u00e8s un ap\u00e9ritif trop arros\u00e9).<\/p>\n<p>En r\u00e9f\u00e9rence aux &#8220;cannelures&#8221; ou stries du moule qui leur donnent leur forme si caract\u00e9ristique, les cannel\u00e9s s&#8217;\u00e9crivaient \u00e0 l&#8217;origine avec deux &#8220;n&#8221;. Or, leur popularit\u00e9 r\u00e9cente a d\u00e9bouch\u00e9 sur la Confr\u00e9rie du Canel\u00e9 de Bordeaux, laquelle d\u00e9cida de faire de l&#8217;appelation &#8220;canel\u00e9&#8221; une marque collective, supprimant un &#8220;n&#8221; \u00e0 son orthographe. N\u00e9anmoins, la plupart des p\u00e2tissiers, parmi lesquels des c\u00e9l\u00e9brit\u00e9s (Ladur\u00e9e, Pierre Herm\u00e9&#8230;) ont conserv\u00e9 son orthograpphe avec deux &#8220;n&#8221;, ce qui fait qu&#8217;on retrouve les cannel\u00e9s \u00e9crits sous deux orthographes de nos jours encore. Pour r\u00e9aliser des cannel\u00e9s il vous suffit en effet de quelques ingr\u00e9dients de base. Vous obtenez alors un p\u00e2te tr\u00e8s liquide qui ressemble de pr\u00e8s \u00e0 une p\u00e2te \u00e0 cr\u00eapes. Utilisez de pr\u00e9f\u00e9rence du lait entier ou demi-\u00e9cr\u00e9m\u00e9 (\u00e9vitant en tous les cas le lait \u00e9cr\u00e9m\u00e9). Pour une saveur plus authentique, je vous recommande par ailleurs d&#8217;utiliser une gousse de vanille plut\u00f4t que de l&#8217;extrait de vanille.<\/p>\n<p>Pour ce qui est du sucre, vous remarquerez ici que la recette en exige de grandes quantit\u00e9s, ce qui peut effrayer au premier abord. Je tiens ma recette de ma belle soeur (qui se reconna\u00eetra \ud83d\ude42 ), laquelle r\u00e9alise des cannel\u00e9s r\u00e9guli\u00e8rement. En ayant test\u00e9 diff\u00e9rentes variantes avec le temps et ayant pu les go\u00fbter moi m\u00eame \u00e0 plusieurs reprises, je suis ses conseils religieusement. Lors de ses nombreux essais, elle a notamment test\u00e9 de r\u00e9duire la quantit\u00e9 de sucre exig\u00e9e, ce qui s&#8217;est sold\u00e9 \u00e0 chaque fois par une cro\u00fbte ext\u00e9rieure beaucoup moins caram\u00e9lis\u00e9e. Pas de secret ici donc, il faut du sucre pour r\u00e9ussir les cannel\u00e9s. Il est un ingr\u00e9dient n\u00e9anmoins qui est optionnel dans la p\u00e2te \u00e0 cr\u00eapes mais fondamental dans le cadre de la r\u00e9alisation de cannel\u00e9s bordelais : le rhum. Que vous le choisissiez blanc ou brun, cela n&#8217;a pas trop d&#8217;importance dans le cadre d&#8217;une recette de p\u00e2tisserie, mais il en faut. Cela renforcera aussi la saveur de la vanille dans le cannel\u00e9 et vice et versa. Il existe de nombreux parfums possibles pour un m\u00eame cannel\u00e9 cela dit, et vous pouvez ajuster la version classique en lui substituant l&#8217;ar\u00f4me de vanille par du caf\u00e9, de la fleur d&#8217;oranger, etc.<\/p>\n<p>Un mot au sujet des moules maintenant. Traditionnellement, le cannel\u00e9 est cuit dans un petit moule en cuivre de forme cylindrique. L&#8217;utilisation de ce type de moule garantit une texture r\u00e9ussie et croustillante en ext\u00e9rieure avec un coeur moelleux. Les moules en cuivre sont toutefois assez on\u00e9reux \u00e0 l&#8217;unit\u00e9 car plus rares. \u00c0 la place je leur pr\u00e9f\u00e8re des moules en aluminium anti-adh\u00e9rants qui garantissent pourtant le m\u00eame r\u00e9sultat. Vous pouvez aussi utiliser des moules en silicones. Je pr\u00e9f\u00e8re toujours les plus gros, en grande gourmande que je suis du centre tout moelleux, mais les petits sont en revanche parfaits pour un caf\u00e9 gourmand. bien jusqu&#8217;\u00e0 ce que la p\u00e2te soit liquide comme une p\u00e2te \u00e0 cr\u00eapes.<\/li>\n<li id=\"instruction-step-4\">Laisser reposer la p\u00e2te pendant 24 heures au r\u00e9frig\u00e9rateur ou au moins toute une nuit.<\/li>\n<li id=\"instruction-step-5\">Pr\u00e9chauffer le four \u00e0 250\u00b0C et badigeonner g\u00e9n\u00e9reusement les moules \u00e0 cannel\u00e9s de beurre fondu.<\/li>\n<li id=\"instruction-step-6\">Retirer la p\u00e2te du r\u00e9frig\u00e9rateur et bien m\u00e9langer*.
