La recette que je vous propose aujourd&#8217;hui sort un peu de l&#8217;ordinaire, puisqu&#8217;elle est r\u00e9alis\u00e9e sur un fond de p\u00e2te aux flocons d&#8217;avoine. Une recette r\u00e9alis\u00e9e par une amie qui tenait la recette de sa grand-m\u00e8re mais qui a toujours souhait\u00e9 conserver la recette secr\u00e8te. Qu&#8217;\u00e0 cela ne tienne, je me suis alors lanc\u00e9e le d\u00e9fi de recr\u00e9er cette p\u00e2te \u00e0 tarte sucr\u00e9e et croustillante \u00e0 souhait. La garniture est toute simple et <strong>peu sucr\u00e9e<\/strong>, l&#8217;id\u00e9e \u00e9tant d&#8217;apporter un peu de douceur \u00e0 l&#8217;ensemble sans prendre le dessus sur les myrtilles. Il est n\u00e9anmoins parfaitement possible d&#8217;ajuster un peu la quantit\u00e9 de sucre \u00e0 raison d&#8217;une cuill\u00e8re \u00e0 soupe ou deux selon vos pr\u00e9f\u00e9rences.<\/p>\n<p>J&#8217;ai ajout\u00e9 un peu de <strong>zeste de citron<\/strong> qui r\u00e9hausse la douceur des myrtilles et apporte de la fra\u00eecheur \u00e0 l&#8217;ensemble. Enfin j&#8217;ajoute un peu de <strong>ma\u00efzena<\/strong> (f\u00e9cule de ma\u00efs) qui \u00e9vite au m\u00e9lange de myrtilles de devenir trop liquide \u00e0 la cuisson et par cons\u00e9quent de d\u00e9tremper la p\u00e2te. L\u00e9g\u00e8rement sucr\u00e9e, fine et croustillante, elle sert \u00e0 la fois de fond de tarte et de crumble sur le dessus. Ne vous laissez pas intimider par la p\u00e2te, c&#8217;est bien plus simple qu&#8217;il n&#8217;y para\u00eet. Il vous suffit en effet de m\u00e9langer tous les ingr\u00e9dients secs dans un saladier et d&#8217;incorporer progressivement le beurre ramolli.<\/p>\n<p>Par ailleurs, <strong>le choix des flocons d&#8217;avoine<\/strong> est important, notamment si vous r\u00e9sidez en Am\u00e9rique du Nord o\u00f9 il en existe de tr\u00e8s nombreuses version. Pour de meilleurs r\u00e9sultats optez pour des flocons d&#8217;avoine de type &#8220;old-fashionned&#8221; ou &#8220;rolled oats&#8221;, \u00e0 savoir des flocons entiers. \u00c9vitez en revanche les &#8220;quick oats&#8221; ou &#8220;instant oats&#8221; et le son d&#8217;avoine en g\u00e9n\u00e9ral, ces derniers ne permettant pas \u00e0 la p\u00e2te d&#8217;avoir cet aspect croustillant qu&#8217;on lui recherche. Notez enfin <strong>l&#8217;utilisation de levure<\/strong> dans la p\u00e2te, qui aide ici au maintien de la p\u00e2te au moment de la d\u00e9coupe.<\/p>\n<p><strong>Et en version vegan ?<\/strong> Remplacez simplement le beurre ramolli par de l&#8217;huile de coco ramollie (pas fondue) dans les m\u00eames proportions. Enfournez pour 40-45 minutes, en surveillant le four de pr\u00e8s pour s&#8217;assurer que la p\u00e2te ne br\u00fble pas. Au besoin, couvrez d&#8217;aluminium \u00e0 mi-cuisson. La tarte est pr\u00eate lorsque les myrtilles deviennent juteuses. R\u00e9server.<\/li>\n<li id=\"instruction-step-3\">Dans un autre saladier, m\u00e9langer la poudre d&#8217;amandes, le flocons d&#8217;avoine, la levure, le miel ou sirop d&#8217;\u00e9rable et le sel.<\/li>\n<li id=\"instruction-step-4\">Ajouter le beurre ramolli et m\u00e9langer du bout des doights jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture granuleuse qui se tient ensemble.<\/li>\n<li id=\"instruction-step-5\">R\u00e9server 1\/4 \u00e0 1\/3 de cette p\u00e2te pour plus tard et utiliser le reste pour foncer le moule \u00e0 tarte pr\u00e9alablement beurr\u00e9, de telle sorte que la p\u00e2te s&#8217;agglom\u00e8re parfaitement aux bords et au fond du moule. Verser les myrtilles par dessus, en laissant le jus dans le fond du saladier.<\/li>\n<li id=\"instruction-step-6\">Parsemer du bout des doigts le reste de la p\u00e2te par dessus les myrtilles, comme pour un crumble clasique.<\/li>\n<li id=\"instruction-step-7\">Enfourner pendant 40 \u00e0 45 minutes, jusqu&#8217;\u00e0 ce que les myrtilles commencent \u00e0 faire des bulles et que la p\u00e2te soit bien dor\u00e9e. Au bout de 20 minutes de cuisson, s&#8217;assurer que les bords de la p\u00e2te ne br\u00fblent pas d\u00e9j\u00e0 et au besoin couvrir de papier d&#8217;aluminium jusqu&#8217;\u00e0 la fin de la cuisson.
