Elles ont une forme de c\u0153ur avec la pointe en bas, et se montrent tr\u00e8s l\u00e9g\u00e8rement c\u00f4tel\u00e9e. La tarte rustique se caract\u00e9rise par l&#8217;absence de moule \u00e0 tarte, \u00e0 l&#8217;inverse d&#8217;une tarte sal\u00e9e ou dd&#8217;une quiche traditionnelle. Ici, on replit simplement les bords les uns par dessus les autres en les faisant s&#8217;entrevaucher par-dessus la garniture. Si vous pr\u00e9f\u00e9rez foncer un moule \u00e0 tarte, cela est n\u00e9anmoins parfaitement possible, si ce n&#8217;est que vous n&#8217;aurez alors par besoin de dorer les bords avec l&#8217;oeuf battu (voir ci-dessous).<\/p>\n<p><strong>Ensuite, assemblez la tarte.<\/strong> Je vous sugg\u00e8re d&#8217;\u00e9taler 4 \u00e0 5 cuill\u00e8res \u00e0 soupe de moutarde de Dijon sur votre fond de p\u00e2te, puis de recouvrir avec de la ricotta. Parce que cette derni\u00e8re apportera de la douceur \u00e0 l&#8217;ensemble de la tarte, j&#8217;utilise pour ma part 5 cuill\u00e8res \u00e0 soupe de moutarde, mais libre \u00e0 vous d&#8217;ajuster la quantit\u00e9 en fonction de votre sensibilit\u00e9 \u00e0 la moutarde. Disposez ensuite les lamelles de tomates coeur de boeuf par dessus, ou bien tout autre type de tomates si vous n&#8217;en trouvez pas : tomates grappes et tomates cerises fonctionneront \u00e9galement \u00e0 merveille.<\/p>\n<p><strong>Dorez et enfournez.<\/strong> Lorsque la tarte rustique est assembl\u00e9e, badigeonnez les bords d&#8217;oeuf battu \u00e0 l&#8217;aide d&#8217;un petit pinceau et enfournez le tout. D\u00e9gustez chaud ou ti\u00e8de, avec un peu de salade verte en accompagnement. Recouvrir de ricotta, puis d\u00e9poser les lamelles de tomates par dessus apr\u00e8s avoir retir\u00e9 l&#8217;exc\u00e8s de sel. Parsemer d&#8217;ail et d&#8217;herbes de Provence.<\/li>\n<li id=\"instruction-step-5\">Replier les bords de la tarte par dessus la garniture.
