Alors que l&#8217;on a souvent tendance \u00e0 opter pour l&#8217;option facile des g\u00e2teaux ap\u00e9ritifs, gras et souvent bien trop sal\u00e9s, je vous propose ici une recette saine et nourissante \u00e0 pr\u00e9parer soi-m\u00eame. Ne vous laissez pas impressionner par son c\u00f4t\u00e9 technique, la recette est en r\u00e9alit\u00e9 beaucoup plus facile \u00e0 apprivoiser qu&#8217;il n&#8217;y para\u00eet.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-houmous-love\">Houmous love!<\/h2>\n\n\n\n<p>Deux ingr\u00e9dients majeurs composent ainsi cette recette : de l&#8217;aubergine et des pois chiches. Qu&#8217;\u00e0 cela ne tienne, apprenons ensemble \u00e0 r\u00e9aliser un excellent houmous maison.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-un-houmous-classique-a-l-ail-roti\">Un houmous classique \u00e0 l&#8217;ail r\u00f4ti<\/h2>\n\n\n\n<p>Il y a quelques temps, j&#8217;ai eu l&#8217;occasion de tester un houmous \u00e0 couper le souffle lors d&#8217;un \u00e9v\u00e9nement d\u00e9dicace auquel la c\u00e9l\u00e8bre Chef St\u00e9phanie Izard \u00e9tait \u00e0 l&#8217;honneur. St\u00e9phanie est connue pour avoir remport\u00e9 Top Chef US il y a quelques ann\u00e9es, et a depuis ouvert plusieurs restaurants \u00e0 Chicago et lanc\u00e9 une gamme de produits alimentaires. L&#8217;un de ses restaurants avait fait office de traiteur pour l&#8217;\u00e9v\u00e9nement d\u00e9dicace, et c&#8217;est \u00e0 cette occasion que j&#8217;ai d\u00e9couvert ce houmous absolument fabuleux, r\u00e9alis\u00e9 avec de l&#8217;ail r\u00f4ti. Pour cette recette j&#8217;ai utilis\u00e9 2 grosses t\u00eates d&#8217;ail trouv\u00e9es ici \u00e0 Chicago, or l&#8217;ail am\u00e9ricain \u00e9tant plus gros qu&#8217;en Europe, il vous faudra peut \u00eatre utiliser jusqu&#8217;\u00e0 3 t\u00eates d&#8217;ail selon o\u00f9 vous vous trouvez. Si en revanche vous n&#8217;aimez pas trop aill\u00e9, ajustez la quantit\u00e9 en cons\u00e9quence.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-comment-rotir-de-l-ail\">Comment r\u00f4tir de l&#8217;ail ?<\/h2>\n\n\n\n<p>La technique est donc toute simple : coupez la partie sup\u00e9rieure de la t\u00eate d&#8217;ail \u00e0 environ 1 cm du haut, coupant par la m\u00eame occasion la t\u00eate de chaque gousse d&#8217;ail comprise dans la t\u00eate, puis retirer l&#8217;enveloppe autour. D\u00e9poser chaque t\u00eate d&#8217;ail sur une feuille de papier aluminium, arrosez g\u00e9n\u00e9reusement d&#8217;huile d&#8217;olive, puis refermez en papillotte, enfournant le tout pour 40-45 minutes, ou jusqu&#8217;\u00e0 ce que l&#8217;int\u00e9rieur de chaque gousse d&#8217;ail comprise dans la t\u00eate d&#8217;ail soit bien tendre au couteau. Laissez ensuite refroidir quelques instants puis garnissez de houmous dans la partie sup\u00e9rieur la plus large de chaque tranche, avant de l&#8217;enrouler sur elle m\u00eame. Laissez refroidir le tout au r\u00e9frig\u00e9rateur, puis au moment de servir, ajoutez un filet de tahini citronn\u00e9 et parsemez de coriandre cisel\u00e9e. Badigeonner g\u00e9n\u00e9reusement chaque tranche d&#8217;huile d&#8217;olive des deux c\u00f4t\u00e9s et parsemer de gros sel.<\/li>\n<li id=\"instruction-step-3\">Faire griller les tranches pendant environ 3 minutes par c\u00f4t\u00e9 jusqu&#8217;\u00e0 ce qu&#8217;elles soient dor\u00e9es et bien tendres. Si utilisation du four, les d\u00e9poser sur une plaque recouverte de papier sulfuris\u00e9 et enfourner pendant 5 minutes de chaque c\u00f4t\u00e9.<\/li>\n<\/ol>\n<h4>Pour le houmous \u00e0 l&#8217;ail r\u00f4ti :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-4\">Pr\u00e9chauffer le four \u00e0 200\u00b0C.<\/li>\n<li id=\"instruction-step-5\">Retirer l&#8217;enveloppe de la t\u00eate d&#8217;ail, en gardant les gousses soud\u00e9es entre elles. Couper chaque t\u00eate d&#8217;ail \u00e0 environ 1 cm du sommet (ou un peu moins s&#8217;il s&#8217;agit de petites gousses d&#8217;ail). D\u00e9poser chaque t\u00eate d&#8217;ail sur une feuille d&#8217;aluminium s\u00e9par\u00e9e, arroser g\u00e9n\u00e9reusement d&#8217;ail et refermer chaque feuille d&#8217;aluminium en papillotte. Enfourner pendant 40-45 minutes, ou jusqu&#8217;\u00e0 ce que l&#8217;ail devienne bien tendre. Retirer du four, laisser refroidir quelques instants et peler.<\/li>\n<li id=\"instruction-step-6\">Dans la cuve d&#8217;un robot mixeur, placer l&#8217;ail r\u00f4ti, les pois chiches, le tahini, le jus de citron et l&#8217;eau. Ajouter les \u00e9pices et le sel, puis mixer jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture homog\u00e8ne, en ajustant la quantit\u00e9 d&#8217;eau ou de jus de citron pour obtenir la texture souhait\u00e9e (souple mais pas trop liquide afin de ne pas s&#8217;\u00e9chapper des roul\u00e9s d&#8217;aubergine par la suite). Go\u00fbter et ajuster l&#8217;assaisonnement au besoin.<\/li>\n<li id=\"instruction-step-7\">Pour assembler, d\u00e9poser une \u00e0 deux cuill\u00e9r\u00e9es d&#8217;houmous sur la partie la plus large de la tranche d&#8217;aubergine avant de la rouler sur elle-m\u00eame.
