Mangeant v\u00e9g\u00e9tarien la plupart du temps, j&#8217;ai remarqu\u00e9 que ma consommation d&#8217;oeufs \u00e9tait assez importante, peut \u00eatre trop&#8230; Je dois bien l&#8217;avouer, les oeufs sont ma solution de facilit\u00e9 les jours de flemme. Omelettes, oeufs brouill\u00e9s, frittata, oeufs cocotte, tout y passe. Aimant varier mon alimentation autant que possible, je suis donc partie \u00e0 la recherche de substituts d&#8217;oeufs occasionnellement.<\/p>\n<p>Par quoi remplacez-vous les oeufs pour votre part, si tant est qu&#8217;il vous arrive de les remplacer bien entendu ? La derni\u00e8re fois que je suis all\u00e9e \u00e0 New York, j&#8217;ai test\u00e9 des oeufs brouill\u00e9s sans oeufs (le comble !) en mangeant dans un restaurant vegan. Ils \u00e9taient en fait pr\u00e9par\u00e9s avec du tofu soyeux et il faut bien avouer que le r\u00e9sultat est assez int\u00e9ressant : on y retrouve une saveur diff\u00e9rente de celle des oeufs \u00e9videmment, mais une texture qui s&#8217;en rapproche beaucoup en revanche. C&#8217;est alors qu&#8217;intervient la farine de pois chiches, autre substitut aux oeufs lorsque m\u00e9lang\u00e9e avec de l&#8217;eau. J&#8217;ai eu l&#8217;occasion de tester dans le cadre d&#8217;une cr\u00e8me br\u00fbl\u00e9e vegan au th\u00e9 matcha (l\u00e0 aussi \u00e0 New York, mais une autre fois) et ai \u00e9t\u00e9 compl\u00e8tement conquise. Si comme pour le tofu, la farine de pois chiches n&#8217;est pas quelque chose que l&#8217;on ach\u00e8te r\u00e9guli\u00e8rement, il suffit en revanche d&#8217;en acheter un paquet une fois et il se conservera pendant des mois, de quoi pourvoir aux repas improvis\u00e9s sans forc\u00e9ment opter pour des oeufs.<\/p>\n<p>Comme pour une omelette classique ou une frittata, vous pouvez ensuite d\u00e9cliner la recette au gr\u00e9 de vos envies, en utilisant des l\u00e9gumes de saison ou ceux que vous avez sous la main. Notez que si comme moi vous utilisez une po\u00eale en fonte, la recette se fera int\u00e9gralement dans celle-ci, commencant par y faire sauter les l\u00e9gumes avant d&#8217;y reverser la pr\u00e9paration de farine de pois chiches et eau. Si vous n&#8217;en avez pas, il vous suffira de faire sauter les l\u00e9gumes dans une po\u00eale classique puis de faire cuire la frittata dans un plat en pyrex pr\u00e9alablement huil\u00e9. Dans ma recette, j&#8217;ai ici utilis\u00e9 des \u00e9pices comme la coriandre, le curcuma et le paprika, avant de bien saler et poivrer. Vous pourriez bien s\u00fbr parfaitement imaginer d&#8217;autres \u00e9pices en fonction des l\u00e9gumes que vous choisissez, mais essayez de conserver le curcuma, une \u00e9pice douce qui est aussi celle qui donnera la jolie couleur jaune \u00e0 la frittata. Pensez aussi aux herbes, comme le basilic ici, mais on pourrait aussi imaginer de la coriandre, de la sauge ou du thym, l\u00e0 encore en fonction de la garniture de votre frittata.<\/p>\n<p>Dans une version encore un peu plus sophistiqu\u00e9e, on peut aussi imaginer que cette pr\u00e9paration \u00e0 la farine de pois chiches puisse servir de pr\u00e9paration pour une quiche, l\u00e0 encore en remplacement des oeufs. Vous obtiendrez un r\u00e9sultat beaucoup moins riche en cholest\u00e9rol mais tout aussi savoureux que les oeufs, si tant est que l&#8217;assaisonnement suive l\u00e0 encore. Vous pouvez \u00e9galement verser un peu de sauce piquante ou bien servir avec un peu de sauce tomates.\u00a0Bon app\u00e9tit!<\/p>\n<p><img decoding=\"async\" class=\"aligncenter wp-image-27687
