Au fil des ans, j\u2019ai ainsi appris \u00e0 conna\u00eetre, apprivoiser le Su\u00e8de, tant au niveau des m\u0153urs et de la culture que de la langue (eh oui, <em>jag kan svenska<em> !), sans oublier les traditions culinaires \u00e9videmment !<\/em><\/em><\/p>\n\n\n\n<p>Quand je pense \u00e0 la Su\u00e8de, Juin est toujours pour moi le mois embl\u00e9matique. La nature en pleine effervescence devient alors le th\u00e9\u00e2tre des c\u00e9l\u00e9brations en plein air, \u00e0 commencer par la f\u00eate nationale su\u00e9doise le 6 juin, puis la tradition de <em>Midsommar \u00e0 <\/em>la fin du mois. En Su\u00e8de, les traditions vont toujours de pair avec des plats traditionnels. Cette sorte de pain croustillant \u00e9tait traditionnellement r\u00e9alis\u00e9e avec de la farine de seigle en Su\u00e8de. Mais qui au fil du temps, la recette a \u00e9volu\u00e9. De nos jours, de nombreuses variantes sont disponibles : avec diff\u00e9rentes farines, avec ou sans graines, en version sans gluten, etc. Les crackers se servent avec un peu de beurre et\/ou du fromage.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-3-saumon-gralax-au-raifort-et-a-la-betterave\">3. Le gravlax est un plat embl\u00e9matique en Su\u00e8de. On le pr\u00e9pare plusieurs jours \u00e0 l&#8217;avance, souvent avant une grande f\u00eate traditionnelle (comme <em>Midsommar<\/em>, la f\u00eate de l&#8217;\u00e9t\u00e9). Ma version est r\u00e9alis\u00e9e avec de la betterave et du raifort pour donner plus de caract\u00e8re \u00e0 l\u2019ensemble.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-4-brioches-suedoises-aux-myrtilles-et-a-la-vanille-blabarsbullar\">4. Les &#8220;bullar&#8221; qui d\u00e9signent une sorte de petite brioche, sont la figure embl\u00e9matique du <em>fika<\/em>, la pause caf\u00e9 su\u00e9doise. Ces brioches sont garnies d&#8217;une cr\u00e8me \u00e0 la vanille et de myrtilles, pour encore plus de gourmandise.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-5-gateau-au-chocolat-suedois-kladdkaka\">5. Le kladdkaka (prononcer &#8220;clad-k\u00e2\u00e2\u00e2-k\u00e2\u00e2\u00e2), c&#8217;est le g\u00e2teau au chocolat su\u00e9dois typique. Il est un peu craquelant en surface et mi-cuit, presque coulant au centre. Pour r\u00e9aliser ce g\u00e2teau au chocolat, on utilise du cacao en poudre, pas du chocolat p\u00e2tissier. On le sert g\u00e9n\u00e9ralement avec un peu de cr\u00e8me fouett\u00e9e.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-6-toast-skagen-toasts-suedois-aux-crevettes\">6. Cousines des <em>kanelbullar<\/em>, les\u00a0petites brioches \u00e0 la cardamome sont mes petites brioches su\u00e9doises pr\u00e9f\u00e9r\u00e9es. Elles sont riches, douces et subtilement parfum\u00e9e \u00e0 la cardamome.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-8-semlor-suedois\">8. Voici la petite brioche typique de mardi gras en Su\u00e8de. On la retrouve dans les p\u00e2tisseries durant les semaines qui pr\u00e9c\u00e8dent Mardi Gras, et souvent d\u00e8s le mois de janvier. Mais alors qu&#8217;est-ce qu&#8217;un <em>semla<\/em> (singulier de <em>&#8220;semlor&#8221;<\/em>) ? Il s&#8217;agit d&#8217;une petite brioche parfum\u00e9e \u00e0 la cardamome garnie d&#8217;une p\u00e2te d&#8217;amande (maison) et de cr\u00e8me fouett\u00e9e nature. Pour la petite anecdote, les semlor auraient au 18\u00e8me si\u00e8cle co\u00fbt\u00e9 la vie au roi su\u00e9dois. On dit en effet qu&#8217;il aurait termin\u00e9 un repas tr\u00e8s c\u00f4pieux en mangeant&#8230; 14 semlor !<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-9-coeurs-suedois-a-la-vanille-ou-vaniljhartan\">9. En \u00e9t\u00e9, la Su\u00e8de regorge de fruits rouges. Fraises, framboises, myrtilles, on en retrouve partout. Et les desserts aux fruits rouges qui vont avec \u00e9galement. Le surplus est ensuite congel\u00e9, pour pr\u00e9parer des desserts aux fruits rouges m\u00eame en hiver. Voici une recette que je tiens d&#8217;une ancienne coll\u00e8gue su\u00e9doise. D\u00e8s le mois de juillet et jusqu&#8217;au d\u00e9but de l&#8217;automne, les Su\u00e9dois cueillent des chanterelles dans les bois. Ils apprennent d&#8217;ailleurs tr\u00e8s t\u00f4t \u00e0 reconna\u00eetre les champignons et \u00e0 savoir lesquels sont comestibles. Parmi toutes les recettes aux chanterelles, la tarte au fromage V\u00e4sterbotten est sans doute la plus connue. On la sert traditionnellement lors de la f\u00eate des \u00e9crevisses \u00e0 la fin du mois d&#8217;ao\u00fbt.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-12-riz-au-lait-suedois\">12. Ce coulant su\u00e9dois \u00e0 la cardamome est un g\u00e2teau que l&#8217;on d\u00e9guste au moment de mardi gras.
