Cette fois-ci je vous propose un classique que l&#8217;on conna\u00eet tous et qui est chaque ann\u00e9e la reine des f\u00eates de famille d\u00e8s la cueillette des premi\u00e8res fraises aux mois de mai-juin. Chez nous, cette tarte \u00e9tait le dessert de l&#8217;anniversaire de ma petite soeur, n\u00e9e en mai. Une tradition que l&#8217;on a perp\u00e9tu\u00e9 durant des ann\u00e9es et des ann\u00e9es encore.<\/p>\n\n\n\n<p>Mais la tarte aux fraises, c&#8217;est bien plus encore. Elle incarne l&#8217;effervescence printani\u00e8re avec l&#8217;arriv\u00e9e des beaux jours, le retour des fleurs et des feuilles aux arbres, des d\u00e9jeuners en terrasse et autres c\u00e9l\u00e9brations de famille. La tarte aux fraises, c&#8217;est une institution qui nous accompagne tout au long de notre vie. Elle est si douce, riche et gourmande \u00e0 la fois, tout en restant relativement simple et classique \u00e0 r\u00e9aliser. Je n&#8217;ajouterai qu&#8217;une chose ici : vive la tarte aux fraises !<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-tarte-aux-fraises-de-mon-enfance\">La tarte aux fraises de mon enfance<\/h2>\n\n\n\n<p>La version que je vous propose aujourd&#8217;hui est fid\u00e8le \u00e0 la tarte aux fraises que j&#8217;ai connue tout au long de mon enfance, adolescence et jeune (et moins jeune ?) vie d&#8217;adulte. Cela \u00e9vite que la p\u00e2te ne colle au rouleau \u00e0 p\u00e2tisserie et vous garantit une p\u00e2te lisse et homog\u00e8ne. Retirez ensuite le film alimentaire et transf\u00e9rez d\u00e9licatement la p\u00e2te dans le moule \u00e0 tarte pr\u00e9alablement beurr\u00e9 et farin\u00e9.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-comment-cuire-la-pate-sablee\">Comment cuire la p\u00e2te sabl\u00e9e ?<\/h2>\n\n\n\n<p>La particularit\u00e9 de la p\u00e2te sabl\u00e9e dans la r\u00e9alisation d&#8217;une tarte aux fruits de type tarte aux fraises est la cuisson \u00e0 blanc, c&#8217;est \u00e0 dire sans y aposer de garniture au pr\u00e9alable. Pour cette \u00e9tape, la bonne vieille m\u00e9thode vous conseillera de piquer le fond et les bords de la p\u00e2te avec une fourchette&nbsp; avant de l&#8217;enfourner. Je lui pr\u00e9f\u00e8re personnellement la m\u00e9thode consistant \u00e0 garnir le fond de tarte de billes de cuisson (\u00e9galement appel\u00e9es pois alimentaires) avant d&#8217;enfourner la p\u00e2te, que vous cuisez ensuite \u00e0 blanc pendant 10-15 minutes, o\u00f9 jusqu&#8217;\u00e0 ce que la p\u00e2te soit l\u00e9g\u00e8rement dor\u00e9e. J&#8217;avais eu l&#8217;occasion de la d\u00e9guster lors d&#8217;une d\u00e9monstration culinaire de P. Conticini lui-m\u00eame il y a quelques ann\u00e9es et avais beaucoup aim\u00e9 sa saveur douce, l\u00e9g\u00e8re et d\u00e9licieusement vanill\u00e9e. Pour \u00eatre s\u00fbr de ne manquer aucune \u00e9tape, n&#8217;h\u00e9sitez pas \u00e0 consulter sa <a href=\"https:\/\/youtu.be\/agrZBPz247A\">petite vid\u00e9o<\/a> o\u00f9 il explique la recette dans le d\u00e9tail.<\/p>\n\n\n\n<p>Pour ma part, je me suis content\u00e9e d&#8217;une seule gousse de vanille au lieu de trois et le r\u00e9sultat est n\u00e9anmoins tr\u00e8s parfum\u00e9. Si vous avez \u00e0 disposition de la poudre de vanille, vous pouvez dans ce cas en utiliser jusqu&#8217;\u00e0 3 grammes. \u00c9vitez en revanche le sucre vanill\u00e9 ou de l&#8217;extrait de vanille aux ar\u00f4mes artificiels, la vraie vanille fait ici toute la diff\u00e9rence ! Comme touche finale, on aurait pu imaginer un sirop eau-sucre \u00e0 badigeonner par dessus les fraises, pour un joli rendu final et apporter surtout encore plus de douceur \u00e0 l&#8217;ensemble, notamment si les fraises sont \u00e0 peine assez m\u00fbres. Couper le beurre en petits morceaux et le travailler du bout des doigts avec la farine jusqu&#8217;\u00e0 l&#8217;obtention d&#8217;une texture sableuse.<\/li>\n<li id=\"instruction-step-2\">Creuser un puits en son centre et y casser l&#8217;oeuf. Verser le sucre et m\u00e9langer du bout des doigts tous les ingr\u00e9dients sans trop les malaxer. \u00c9craser la p\u00e2te sous la paume des mains pour la rendre bien homog\u00e8ne. Rouler en boule, puis aplatir rapidement la p\u00e2te entre deux feuilles de film alimentaire. Placer au r\u00e9frig\u00e9rateur pendant 30 minutes.<\/li>\n<li id=\"instruction-step-3\">Pr\u00e9chauffer le four \u00e0 180\u00b0C. Beurrer et fariner un moule \u00e0 tarte de 26 cm de diam\u00e8tre.<\/li>\n<li id=\"instruction-step-4\">\u00c9taler la p\u00e2te entre les feuilles de film alimentaire en un large disque de 28 cm de diam\u00e8tre. \u00d4ter le film puis transf\u00e9re la p\u00e2te dans le moule. En garnir le fond d&#8217;un morceau de papier sulfuris\u00e9, de billes de cuisson, puis enfourner pendant environ 15 minutes, jusqu&#8217;\u00e0 coloration l\u00e9g\u00e8re. Laisser refroidir quelques instants puis transf\u00e9rer sur une grille de refroidissement.<\/li>\n<\/ol>\n<h4>Pour la cr\u00e8me p\u00e2tissi\u00e8re :<\/h4>\n<ol class=\"is-style-circles\">\n<li id=\"instruction-step-5\">Verser le lait dans une casserole, ajouter la gousse de vanille fendue et gratt\u00e9e, m\u00e9langer et chauffer l&#8217;ensemble \u00e0 feu moyen-doux jusqu&#8217;aux tout premiers bouillonnements.<\/li>\n<li id=\"instruction-step-6\">Pendant ce temps, fouetter les jaunes avec le sucre dans un saladier jusqu&#8217;\u00e0 ce que le m\u00e9lange blanchisse. Incorporer au fouet la farine et la ma\u00efzena. Verser le lait chaud petit \u00e0 petit et en filet tr\u00e8s doux dans les jaunes blanchis, puis bien m\u00e9langer.<\/li>\n<li id=\"instruction-step-7\">Reverser dans la casserole de lait et cuire sans cesser de remuer pendant 3 minutes. \u00c9teindre le feu, incorporer le beurre et le Grand Marnier si utilisation, et bien m\u00e9langer. Retirer la gousse de vanille, puis d\u00e9barrasser la cr\u00e8me dans un bol froid.
